Excellent!  I thank those who mentioned the cold milk and curdling.  I warmed the milk in the micro after taking the soup off the heat while I added it and the cheese.  Worked beautifully.  I added about a tsp. of powdered cayenne pepper and a generous splash of sherry as well.  Thank you!

Great soup! I would sauté the carrots and celery prior to adding the chicken stock, but otherwise really good!

Very tasty! If anything I would do cook the veggies a little bit more, the carrots and celery weren’t cooked to my liking. Will definitely make again!!

As recommended, I added some hot liquid to the milk before adding to vegetables, used 1/2 cup more broth and cooked vegetables for 30 minutes instead of 20. All in all, it turned out pretty well, and I'll be making it again!

I haven't tried the broccoli cheddar soup yet, but it's an occasion because my little sister is sick, (I'm making that recipe for her) spring begins next week, and Easter is next month. Thanks, Delish! I hope she likes it!

I think I put in too much broccoli so I added extra broth. Then used my immersion blender to break up some of the vegetables. I added half as much milk, but extra cheese and it was still a tad thin, but really tasty.

I added more chicken stock along with a splash of whip cream. Tempered the milk. So good!

After reading all the reviews! I used 3 cups of my chicken stock. Sauté all veggies, except for the broccoli. Two cups of 2%. Cream would be way too  rich. Added extra broccoli for sure. I also used cheddar, pepper jack and Havarti cheese! I did follow the recipe, though I gave it my little twist.

Comforting, cheesy cauliflower soup takes only about 40 minutes to make and you will be enjoying this cheesy, creamy, hearty soup.

Cauliflower Cheese Soup

cauliflower

olive oil

Vidalia onion

garlic

tbsp flour

stock

heavy whipping cream

oz block sharp white cheddar cheese

salt

Prepare your veggies first.&nbsp;Dice onion and set aside. Cut cauliflower florets off and discard the bottom part of the stem ( you can use most of the stems in soup).&nbsp;Dice cauliflower onto small pieces. Set it aside as well. Peel garlic to be ready to press.Grate cheese on a large cheese grater and set aside.

Preheat a medium pot over medium heat and add oil.&nbsp;

Add diced onion and saute until transparent.&nbsp;

Add pressed garlic, mix, and cook until fragrant.

Add prepared cauliflower, mix well and saute for a few minutes. (Add a little more olive oil if needed.)

Sprinkle flour over veggies and mix well.

Start pouring in chicken stock, while slowly stirring. Add enough chicken stock to cover the cauliflower mixture.

Add salt and pepper.&nbsp;Stir and cover with a lid, leaving a crack for steam to escape. Cook for about 20 minutes, stirring occasionally.&nbsp;

Stir in heavy whipping cream and grated white cheddar cheese. Slowly stir until cheese is melted and smooth. Take off heat.

Cheddar Ale Soup is an amazingly comforting cheesy, flavorful soup made with veggies, beer, and lots of sharp cheddar cheese.

Cheddar Ale Soup

canola oil

bacon

onion

carrots

celery (diced)

all purpose flour

Worcestershire sauce

milk

chicken stock

lb sharp cheddar cheese blocks ((2 8 ounces blocks))

paprika

mustard

tsp black pepper

bay leaf

salt (to taste)

Preheat a Dutch oven over medium to medium-high heat and add oil. Add diced bacon, stir and cook until the fat it all rendered. Use a slotted spoon to take the bacon bits out and set it aside (leave the bacon grease in the pot.)

Add diced onion, celery, and carrots to the pot and cook until softened. Make sure to stir from time to time.

Stir in minced garlic and cook for a few seconds, until fragrant.

Sprinkle flour over the vegetables and stir until veggies are evenly coated.

Slowly pour in ale, while stirring constantly, and slowly stir for a few more seconds.

Add in Worcestershire sauce, milk, broth, bay leaf, paprika, ground mustard, salt, and pepper. Stir and bring it to simmer.

Reduce the heat to medium-low and cook for about 10 minutes. Discard the bay leaf. For smooth soup: Remove the pot from the heat and puree the soup in a blender or food processor.Or you can leave it a little chucky.

Pour back into the pot if you decided to blend it and keep the heat at medium-low.

Add the cheese one handful at a time while stirring slowly and constantly (do not let it boil). Keep stirring until all cheese is melted.

Take off heat and garnish with bacon bits and croutons!
