This quick and delish spinach casserole recipe is made with Boursin cheese which gives this easy spinach dish lots of pizazz!

Spinach Casserole Recipe

T unsalted butter

chopped onion,

t minced garlic

5.2 oz pkg herb and garlic souft Boursin cheese

t kosher salt

t black pepper

t nutmeg

Parmesan cheese (divided in half)

Ritz crackers crushed

Preheat oven to 400 with a rack in the middle of the oven.

Melt butter in a cast iron skillet or a regular skillet over medium heat.

Add onion and garlic and stir until soft, about 6 minutes.

Reduce heat to medium-low. Add soft cheese, salt, pepper and nutmeg and stir until cheese is melted. Stir in squeezed spinach and 1/4 c Parmesan cheese. Add cream and stir well.

If you are using cast iron and baking immediately, sprinkle with cracker crumbs and Parmesan. Bake until golden about 10 to 15 minutes.

If you are not using an oven-safe pan transfer to a 7 x 10&#8243; pan and follow baking instructions above.

This delicious creamy spinach casserole with cheesy panko breadcrumbs is a great side dish to serve at the holidays or any occasion.

Spinach Casserole with Cheesy Panko Bread Crumbs

onion

heavy cream

butter melted (1 stick)

Parmesan cheese

Saute onions and garlic in olive oil in a large skillet, on medium heat for a few minutes, making sure the garlic does not burn.

Add spinach and salt and pepper.

Stir and continue to saute for about 2-3 minutes.

Add cream to the spinach mixture and combine well.

Remove from heat and pour into a baking dish, approx. 9 x 11 inches

In a separate bowl combine melted butter, Parmesan and bread crumbs.

Stir until combined.

Sprinkle over spinach.

Bake in a 350 oven for 30 minutes.

This easy spinach casserole recipe has a creamy sauce, plenty of cheese, and a crispy panko topping for a toasty finishing touch!

Spinach Casserole

unsalted butter (divided)

panko breadcrumbs

garlic powder

salt

all-purpose flour

low-fat milk (I used 2%)

garlic (minced (about 2 teaspoons))

nutmeg

pepper

parmesan

cream cheese (at room temperature, cubed)

chives (for garnish)

Prepare

Place a rack in the center of your oven and preheat to 350°F.

Toast

Melt 1 tablespoon butter in a 10- or 12-inch oven-safe skillet* over medium heat. Add the panko and cook, stirring, until the panko is crisp and golden, about 3 minutes. Stir in the garlic powder and ¼ teaspoon salt. Transfer to a small bowl.

Simmer

Melt the remaining 2 tablespoons butter in the same skillet over medium heat. Add the flour and stir for 2 minutes, until thick and pasty. While whisking, slowly add the milk, breaking up any lumps. Add the garlic, nutmeg, remaining ½ teaspoon salt, and the pepper. Bring to a simmer, reduce the heat to low, and continue to whisk until the mixture is thick, about 6 minutes.

Add the spinach and cook, breaking it up with a spoon and stirring to incorporate, until warmed through, about 4 minutes.

Stir

Add the parmesan and cream cheese and cook, stirring well, until fully melted and incorporated.

Finish

If using an oven-safe skillet, top with the panko. Bake until the spinach casserole is golden brown, 10 to 15 minutes. Sprinkle with chives and let cool for 10 minutes in the pan before serving.

We had this recipe with steak and baked potato so it was a “steakhouse” meal to us. I snuck in some chopped mushrooms and onions into the mix, which added a nice savory depth and extra volume to the casserole. Thank you so much!

Fabulous side dish! Easy to prepare. Reminds me of the spinach my dad made when I was a child. Basically the same recipe but add a handful of seasoned panko breadcrumbs.

I love spinach .... I could eat it every day and I'm always looking for new spinach recipes to try.  This one is definitely one of the best!  I love the combination of flavors, it’s creamy but not overpowering. The spinach still stands out. Thanks so much for this recipe.
