Ricotta Stuffed Shells Recipe

pasta

marinara, (or 24-ounce jar)

ricotta cheese

parmesan cheese

Italian parsley

rosemary

salt

pepper

nutmeg

red pepper

mozzarella cheese

Lightly oil or spray a 9 X 13 inch baking pan and set aside. Preheat the oven to 350 degrees F.

Bring a large pot of salted water to a boil. Partially cook the pasta shells in water, 4-6 minutes. Strain the shells and lay in the pan. (See no-boil instructions in notes.)

Mix the ricotta, parmesan, egg, parsley, rosemary, salt, pepper, nutmeg, and crushed red pepper together in a medium bowl. Fill each shell with 1-2 tablespoons of the cheese mixture.

Spoon the sauce on and around the shells. Top with mozzarella cheese. Cover the pan tightly with foil. Bake until bubbly and golden, about 25 minutes. If you want the cheesy top golden, take the foil off the last 3-5 minutes.

Preheat

Cook Pasta

Cook pasta shells in salted water until al dente. Drain and set aside to cool slightly.

Brown Beef

In a skillet over medium heat, brown the ground beef. Add minced garlic and oregano, cooking until fragrant. Remove from heat.

Mix Filling

In a bowl, mix the cooled beef with ricotta, 1 cup mozzarella, Pecorino Romano, beaten egg, salt, and pepper.

Prepare Dish

Spread 1 cup of tomato basil sauce on the bottom of a baking dish.

Stuff Shells

Fill each pasta shell with the beef and cheese mixture, placing them snugly in the dish.

Add Sauce And Cheese

Pour the remaining sauce over the shells and sprinkle the remaining ½ cup of mozzarella on top.

Bake

Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until cheese is golden and bubbly.

Garnish And Serve

Let it cool slightly, garnish with chopped parsley, and serve warm.
