Taco Pasta Bake

Ground Beef (10-12%)

/ 250 milliliters Low Sodium Beef Stock

Cheese (see notes)

tbsp Taco Seasoning

Onion,

Pickled Jalapeños, finely diced (optional)

Olive Oil,

Oil Spray, to top

Sour Cream, to drizzle

Red Onion, finely diced

Tomato, finely diced

Avocado, diced

Add a drizzle of oil to a large pan over medium heat and add onion (and jalapeños if using). Fry until they begin to soften &amp; brown, then add beef. Break up with a wooden spoon and continue frying until nicely browned and fully cooked through.

Add in taco seasoning then stir in 1 heaped tbsp tomato puree. Fry for a few mins, then pour in 1cup/250ml beef stock and 1 can of chopped tomatoes. Deglaze the pan as necessary, give it all a good stir and allow to simmer on low-medium for 10-15mins until the sauce begins to thicken and the tomatoes have burst.

Meanwhile pop 10.5oz/300g pasta in salted boiling water and cook until JUST al dente (if it&#039;s properly cooked it&#039;ll turn soft and sloppy in the oven, you want it still a little hard). Just before draining scoop out a cup of the starchy pasta water. Pre heat oven to 200C/390F.

Combine pasta and beef with 1/3cup of starchy pasta water. Give it a good stir until everything is blended. The starchy water will help create a sauce, with the starch molecules emulsifying with the fat in the sauce. Stir in your cheese until nice and gooey, the pour into a casserole dish.

Top with crushed tortilla chips or hard taco shells (just enough to create a thin layer over the top fully covering the pasta). Spray with oil, then pop in the oven for 20mins, or until the top goes nice and golden. Be vigilant, top goes golden to burnt quickly.

Top with your favourite taco toppings (suggestions in ingredients list) and enjoy!

Cheesy Taco Pasta Bake

A quick and easy one pot Taco Pasta Recipe made with seasoned ground beef, tomatoes, chiles, pasta, and cheese.  On the table in less than 30 minutes this dish is always a hit!

Taco Pasta

lb. lean ground beef

onion

garlic

(14.5 ounce) can fire roasted diced tomatoes

green chiles drained

taco seasoning

beef broth

medium shell pasta

kosher salt and fresh ground black pepper

cheddar cheese

Monterey Jack

cilantro

In a large pot over medium heat brown the ground beef. Halfway through the browning process add the onion.  Cook until the beef is browned and the onions are soft.  Add the garlic and cook for 1 minute; stirring frequently.  Drain any excess grease.

Add the fire roasted diced tomatoes, green chiles, taco seasoning, and beef broth.  Bring to a simmer and add the pasta.  Cover and simmer until the pasta is tender.  Season with salt and black pepper to taste.

Turn the heat to low and stir in the cheese.  Sprinkle with chopped fresh cilantro.  For best results serve promptly.

Prepare rotini pasta to package directions. Drain and set aside.

In a large pot cook and crumble ground beef until fully cooked. Drain fat as need.

Add taco seasoning and water to the cooked ground beef. Mix together and cook until water is gone.

Add cooked pasta to pot with cooked and seasoned ground beef along with salsa and mix well.

Add 1 1/2 cup cheese to pot and mix until melted. Remove pot from heat and add remaining cheese to the top and allow to melt. Serve and enjoy!

Slow cooker taco pasta is everything you love about pasta and tacos combined into one saucy, cheesy, taco-seasoned beefy dish loaded with bell peppers, black beans, corn, and salsa!

Slow Cooker Cheesy Taco Pasta

sirloin (I prefer 91/3)

shredded cheddar (plus more for topping)

Heat a large skillet over medium heat and add the ground beef, seasoning with salt and pepper, and browning while breaking apart.

Once browned, add the ground beef to the basin of a 6 quart slow cooker.

Add in the taco seasoning, diced bell pepper, salsa, corn, black beans, and beef broth. Stir to combine.

Cover and cook on LOW for 5-6 hours or HIGH for 2-3 hours.

30 minutes before cook time in up, stir in the uncooked pasta, checking for doneness at 10 minutes and then at 20 minutes.

Once the pasta is tender, stir in the shredded cheese and let melt.

Serve with your favorite toppings.

I really like this and will be making over and over. I always follow the recipe and then make tweaks sometimes. I think I'll add green chili enchilada sauce for some of my liquid. I just love the flavor of it. But either way it's yummy!
