Keto Cheetos Recipe

Cheddar Cheese (shredded and frozen)

Preheat your oven to 150C/300F. Line a large cookie sheet with parchment paper and set aside.

Add the frozen cheddar to your food processor and pulse until it has broken down into small pieces.

Place the egg whites and cream of tartar into your stand mixer and whisk to stiff peaks.

Fold in the cheese, almond flour, and salt.

Gently scoop into a piping bag and pipe 1-inch tubes onto your prepared cookie sheet.

Bake for 30 minutes, until the cheetos are firm to the touch.

Turn the oven off and leave the door slightly ajar to dry the cheetos for 40 minutes.

Remove from the oven and enjoy warm, or allow to cool completely before storing in an airtight container.

Here&#x27;s how to make Cheetos&#x27; new Flamin&#x27; Hot Cheetos Popcorn at home. 

Flamin’ Hot Cheetos Popcorn

popcorn kernels, preferably mushroom popcorn

Place 1/3 cup cheddar cheese powder, 1 teaspoon hot smoked paprika, 1/2 teaspoon kosher salt, 1/2 teaspoon granulated sugar, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, and 1/8 teaspoon cayenne pepper in a small bowl, and stir with a fork to combine.

Measure out 1/2 cup popcorn kernels. Heat 3 tablespoons vegetable oil in a large, heavy bottomed pot with a tight-fitting lid, such as a Dutch oven, over medium-high heat until shimmering. Add 2 to 3 of the popcorn kernels. When they pop, add the remaining popcorn kernels. Cover and shake the pot back and forth while the popcorn pops, until the popping slows (there’s no popping for 10 seconds), 6 to 8 minutes total popping time.

Pour the popcorn out onto a rimmed baking sheet to cool. Meanwhile, return the pot to medium-high heat and add 6 tablespoons unsalted butter. When melted, add 3 cups Flamin’ Hot Cheetos and toast until fragrant, about 1 minute. Return the popcorn to the pot and remove from the heat. 

Using a large spatula, toss the popcorn with the buttery Cheetos. Sprinkle with the cheddar cheese mixture and toss until evenly coated. Serve warm or at room temperature.

In a large pot of salted water, boil your pasta according to package directions. Cook for one minute less than the package states if you like your pasta more al dente. While the pasta cooks, preheat your oven to 350F.

In a large saucepan, melt 2 tbsp. of butter on medium heat. Once the butter has melted, whisk in the 2 tbsp. of flour, mixing constantly.

Once the butter and flour are mixed and begin to form a paste, SLOWLY add the milk and cream. Stir constantly! Add the salt, garlic powder, onion powder, and mustard powder, and mix well. Keep cooking this mixture on medium heat until it begins to thicken and gently bubble.

Once the roux is gently bubbling and has thickened up a little bit, turn off the heat*. Now, add your shredded cheese and stir gently.

Add your cheese mixture to the noodles once all the cheese has melted and incorporated. Stir gently and pour into a butter, oven-safe dish.

Add Cheetos and one tbsp. melted butter to the base of your food processor. Mix until it turns into a breadcrumb consistency.**Spoon the Cheetos crumbs on top of the macaroni and cheese. Bake for 10 minutes.

Remove from the oven, serve hot, and enjoy!
