These no-bake cherry cheesecake bars are a classic crowd-pleaser that’s sweet and simple. They’re made from a graham cracker crust, easy cheesecake filling, and cherry pie topping.  

No Bake Cherry Cheesecake Bars

graham cracker sheets (one sleeve)

butter

Tablespoon sugar

oz cream cheese (softened)

oz container cool whip

sugar

lemon juice

(21-ounce cherry pie filling)

Place graham crackers in the food processor and pulse into fine crumbs.

In a medium bowl, combine graham cracker crumbs, melted butter, and sugar.

Line 8x8 pan with parchment paper. Press the graham cracker mixture evenly into the bottom of the pan. Chill in the refrigerator.

In a large bowl, mix softened cream cheese, cool whip, powdered sugar, and lemon juice until smooth. Spread into an even layer over the graham cracker crust. Chill for about 5 minutes.

Spoon cherry pie filling over the cream cheese layer. Gently spread out the cherries to cover the entire pan.

Chill for at least 4 hours. Slice and enjoy!

Enjoy these bars made using Betty Crocker® sugar cookie mix – perfect dessert to be served at Halloween.

Cherry Cheesecake Bars

pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix

(8 oz each) cream cheese, softened

Gold Medal™ all-purpose flour

vanilla

(21 oz) cherry pie filling

Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In large bowl, place cookie mix. Cut in butter, using pastry blender (or pulling 2 table knives through mix in opposite directions), until mixture looks like coarse crumbs. Reserve 1 1/2 cups of the crumb mixture for topping. Press remaining mixture in bottom of pan. Bake 10 minutes. Cool.

Meanwhile, in large bowl, beat cream cheese, sugar, flour, vanilla and egg with electric mixer on medium speed until smooth. Spread cream cheese mixture evenly over partially baked crust. Spoon cherry pie filling evenly over cream cheese layer.

In small bowl, mix reserved 1 1/2 cups crumb mixture and the almonds. Sprinkle over pie filling.

Bake 40 to 45 minutes or until light golden brown. Cool 30 minutes. Refrigerate about 2 hours or until chilled. Cut into 6 rows by 4 rows. Store covered in refrigerator.
