This roasted cherry tomato sauce is a great way to use up all of those cherry tomatoes in your garden. Simple to make and delicious, this cherry tomato recipe is one to make every summer. Use some now and freeze more for later!

Roasted Cherry Tomato Sauce

extra virgin olive oil

basil, oregano, and/or thyme (optional)

balsamic vinegar (optional)

Preheat the oven to 400°F

Spread out the tomatoes, onions, garlic, and peppers (if you’re using them) on sheet pans.

Drizzle the tomatoes and other veggies with the olive oil and sprinkle with salt and pepper.

Roast in the oven for 30-40 minutes.

Let the tomatoes cool for a few minutes, then transfer the entire contents of the sheet pan, juices and all, to a blender or food processor. You may need to do this in two or more batches depending on how many tomatoes you have.

Add the fresh herbs and balsamic vinegar to the blender if desired.

Blend until the tomato sauce is smooth.

Pour into jars and store in the refrigerator.

Cherry Tomato Sauce

(350 grams) cherry or grape tomatoes (, halved)

Warm a tablespoon of olive oil (or water for oil-free) in a large sauté pan over a medium heat.

Add the onions and cook, moving frequently until just starting to colour, then add the garlic. Cook for a minute longer.

Add the tomatoes and keep moving everything around for about 4 minutes, until they burst a bit and are just starting to caramelize.

Turn the heat down to medium-low, add the salt and pepper and herbs, then the tomato paste. Stir together well and let the tomato paste cook for a few minutes, stirring frequently until it turns a darker brick red.

Pour in the milk and stir well until a creamy sauce is formed. Keep it simmering over the heat for about 7 minutes, until the sauce reduces and thickens up enough to coat the pasta well. If you leave it any longer and it thickens up too much, simply add a little drop of milk (or starchy pasta water) to thin it.
