Chicken cabbage salad combines fresh vegetables and grilled chicken with a simple dressing. Make this recipe tonight for an easy meal in 20 minutes!

Grilled Chicken Cabbage Salad

free range organic boneless skinless chicken breasts

olive oil

Italian seasoning

paprika

garlic powder

salt

black pepper

cabbage (purple, green or a mix shredded)

carrot

green onions (root end removed and sliced thin)

zucchini

onions

lemon juice

extra virgin olive oil

red crushed pepper

Salt and black pepper

Season chicken all the spices from chicken ingredients.

Place chicken on a greased grill or grill pan and cook for about 3-4 minutes on each side, or until the chicken is cooked though.

Leave the breast chicken to cool down, slice it and set aside.

FOR THE CHICKEN

Place all the ingredients for coleslaw salad in a large bowl and mix well.

In a mason jar, pour the freshly squeezed lemon juice and olive oil. Add salt and pepper and red crushed pepper. Whisk everything together. Continue to whisk while streaming in the olive oil. Taste to check the seasoning and pour over the salad.

Add the sliced breast chicken on top of the salad. Enjoy!

Oven Roasted Whole Chicken with Cabbage

Pat chicken dry with paper towels. Remove giblets package if inside chicken still.  Fill chicken cavity with chopped up onion and parsley.

Rub 1 tablespoon butter all over the chicken.

In a small bowl mix salt, pepper, paprika and garlic powder together.  Sprinkle on chicken, inside and out, patting the seasoning on chicken so it sticks.

Place a 12&quot; well seasoned cast iron skillet on middle rack and preheat oven to 425 degrees.  If you don&#039;t have a cast iron skillet you can also use a roasting pan.   

In a large bowl toss cabbage with 2 tablespoons butter and 1 tablespoon olive oil so it&#039;s completely coated.  Season with salt and pepper.

Once oven is preheated, remove cast iron from oven and place cabbage on bottom, patting it down.  It might seem like a lot of cabbage but it will wilt down significantly.   Place chicken in the middle of skillet, on top of cabbage.

Put in oven and roast for approximately 50-60 minutes, or until the thickest part of the chicken (I usually check the breasts) is 165 degrees.

Remove from oven and allow to cool for 15 minutes before carving.

Easy 20-minute chicken and cabbage skillet with ground chicken, coleslaw mix, carrots, and the most delicious peanut sauce. 

Thai Chicken and Cabbage Skillet

coleslaw cabbage mix

carrots,

green onions, sliced

cilantro,

Kosher salt and fresh black pepper

chili sauce,

peanut butter

soy sauce

garlic,

Tbsp. honey

Tbsp. ginger

Tbsp. rice vinegar

sesame oil

Whisk together the sauce ingredients in a small bowl. Set aside.

In a large non-stick skillet, heat 1 tablespoon of oil over medium-high heat. When hot, add ground chicken and cook until no longer pink, breaking up the meat with a spoon. Transfer to a bowl with a slotted spoon. Drain juices from pan and wipe clean.

Add remaining 2 tablespoons of oil. When hot, add coleslaw mix and carrots and cook until tender-crisp, stirring constantly, about 3-4 minutes. If veggies begin to burn, reduce the heat. The goal here is to get the cabbage tender-crisp.

Add chicken and sauce. Season with salt and pepper to taste. Cook for few minutes until heated through.

Stir in green onions and cilantro. Serve topped with more cilantro and hot chili sauce. I also like to add a squeeze of fresh lime juice.

This recipe is delicious!  I’ve made it several times now 😃. Once I doubled it and didn’t have enough ground chicken so i added a pound of ground hot sausage. The little bit of heat just made it even better!

Just made this for lunch and it was yummy!  I used half the peanut butter, but followed otherwise.  Will DEFINITELY make this again!

This was just a blissful meal! Easy to pref ahead and throw together. But best of all are the flavors! My husband said he LOVED it! I cut the peanut butter in half (only because I’m trying to keep the fat content down. I added red pepper and extra yellow onion (chopped). Everything else was exactly as the recipe states. This recipe is sooooo delicious. Added red pepper, onion and jalepeno to the skillet. Used almond butter and coconut aminos in the sauce and in turn omitted the honey. I will be making this again and again!
