Chicken and Spinach Pasta with Bacon

BACON: Preheat oven to 400 F. Line a large baking sheet with aluminum foil or parchment paper. Arrange bacon strips and bake for 15 minutes. Transfer cooked bacon to a paper towel-lined platter that will absorb extra grease. Crumble the bacon once it's cool enough.

CHICKEN: Paper towel dry chicken breasts, season with Italian seasoning and salt and set aside.

Heat 2 tablespoons of butter to a preheated large deep 12 inch skillet. Add chicken breasts and cook on each side on medium high heat 3-4 minutes until nicely browned (for a total of 6-8 minutes). If chicken is still pink in the center, reduce heat to medium and cook covered for several minutes until no longer pink in the center.&nbsp;

Remove chicken from the pan and cut it into strips.

GARLIC AND SPINACH: Add 2 more tablespoons of butter to the skillet, add chopped garlic and cook for 1-2 minutes until browned and fragrant. Next add fresh spinach and cook until it wilts, about 2 more minutes.

ALFREDO SAUCE: Add heavy cream and bring the mixture to a boil. Add paprika, salt and pepper; and reduce to simmer. Slowly add Parmesan cheese - until the cheese melts and makes the sauce thicker. Add more cheese to reach desired thickness.

PASTA: In the meantime bring a large pot of water to boil, add pasta and cook it according to instructions. Drain the pasta, but do not rinse.

FINAL ASSEMBLY: Add chicken strips and crumbled bacon to the sauce first. Taste the sauce and season with more salt and pepper if necessary. Next, add pasta and stir until pasta is fully coated in sauce.

TO SERVE: Sprinkle with additional grated Parmesan.

CHICKEN: Paper towel dry&nbsp;the&nbsp;chicken and season with salt, pepper and garlic powder. Then set aside.Heat olive oil in a large deep skillet. Add chicken breasts and cook on each side on medium high heat for about 4 minutes per side (for a total of 8 minutes) until nicely browned. If chicken is still pink in the center, reduce heat to medium and cook covered for several minutes until no longer pink in the center. Remove chicken from pan and slice it.

Add butter to the hot pan and once it melts, add chopped garlic and cook for 1-2 minutes until fragrant.

Add tomatoes and cook for 3 minutes on medium high until tomatoes release their juices. Add fresh spinach and cook until it wilts.

Reduce the heat and season with paprika, Italian seasoning, crushed red pepper flakes and salt. Mix.

Next add heavy cream - you are still cooking on low heat. Once heavy cream is slightly simmering, slowly add Parmesan cheese. Once you add the cheese, stir on low simmer until smooth.

Add sliced chicken, bacon and pasta. Next add chopped parsley. Stir until fully coated in sauce. Season with more salt if necessary.

TO SERVE:&nbsp;Serve with additional shredded Parmesan and red pepper flakes, if desired.

14.5 oz can Muir Glen Diced Tomatoes (drained)

Add chunked chicken to a small bowl and toss with black pepper, onion, and garlic powder.

In a large skillet, add olive oil, and seasoned chicken. Cook chicken for 6 minutes over medium-low heat until internal temperatures reaches 165 degrees Fahrenheit. Remove chicken from skillet and set aside.

Bring a large pot of salted water (add 1 tablespoon of salt to 4 quarts of water) to a boil. Addpasta and cook until al dente. Drain and set aside.

Add bacon to skillet. Cook over medium heat until crisp.

Once bacon is crisp, remove from heat and carefully spoon out bacon and set it on a papertowel-lined plate.

Leave bacon drippings in the skillet. Over low-medium heat, add onion and cook until tenderfor about 2 minutes.

Add in tomatoes and spinach. Stir and cook until spinach leaves are wilted (about 1 minute).

Return chicken, and bacon to skillet. Add in drained pasta and stir to combine all the flavors.Serve warm.

Cut the chicken breast into small bite-size pieces. Toss with a generous pinch of salt, freshly cracked black pepper, and the Italian seasoning. Set aside for 10 minutes.

Chop the bacon into small 1/2&quot; pieces.

Heat the olive oil in a large pan over medium heat. Cook the bacon and chicken until the bacon is crispy and chicken is cooked through, about 6-8 minutes.

Use a slotted spoon to transfer the chicken and bacon to a bowl and set aside. Leave any liquids in the pan.

Cook the chopped onion in the remaining olive oil and bacon fat until the onion is very soft and starting to brown, about 5-6 minutes.

Stir in the garlic and crushed red pepper (if using), and cook for 1 minute.

Stir in the white wine until absorbed, then stir in the chopped spinach and heavy cream. Cook for a few minutes, stirring occasionally, until the spinach is wilted into the cream sauce.

Transfer cooked noodles to the cream sauce, and toss to coat. Toss in the cooked chicken and bacon, followed by the parmesan cheese and a squeeze of fresh lemon juice.

Taste, and season with any salt and pepper if desired. Serve hot!

One of my favorite easy meals is this super simple chicken pesto pasta salad! It&#39;s light, fresh, and comes together in less than 20 minutes! With creamy pesto and mascarpone cheese, grilled chicken, spinach, and tomatoes it&#39;s the perfect summer lunch!

Chicken Pesto Pasta Salad

mascarpone cheese

pesto*

chicken (diced)

bacon (cooked and crumbled)

mozzarella balls (halved)

cherry tomatoes (halved)

basil (sliced)

In a large bowl mix together the mascarpone cheese and pesto until fully combined. Set aside.

Cook your pasta according to package directions. Make sure you heavily salt the water and cook the pasta for about 1-2 minutes less than the listed time for perfect al dente pasta!

Drain the pasta and immediately add to the bowl of sauce. [Do NOT rinse the pasta, as the starch will help the sauce cling to the noodles and the residual heat from the pasta will melt the mascarpone a bit making the sauce extra creamy.]

Gently toss the pasta in the sauce until all the noodles are fully coated.

Mix in the spinach and stir a few times until it wilts slightly from the heat of the pasta.

Then stir in the diced chicken, bacon, sliced tomatoes, and mozzarella balls.

Serve immediately while warm, or let chill in the fridge and serve cold!

This chicken pesto pasta salad will keep in the fridge for 3 days, but the noodles with soak up the sauce the longer it sits. So after 2-3 days, you might want to add in a little extra pesto!

i skipped the chicken and added extra pesto and loved it. This definitely tastes more like pesto pasta than pasta salad but it was simple and flavorful
