This chicken brine recipe is made with lemons, honey, fresh herbs and spices, and produces a juicy tender chicken every time! A foolproof way for succulent and flavorful roasted, smoked or fried chicken.

Chicken Brine Recipe

water

kosher salt (do not use table salt)

honey

bay leaves

garlic

black peppercorns

rosemary

thyme

parsley

lemons (sliced)

chicken

Place the water, salt, honey, bay leaves, garlic, peppercorns, rosemary, thyme, parsley and lemons in a large pot. Bring to a simmer over medium heat.

Cook for 3-4 minutes or until salt has dissolved.

Turn off the heat and cool completely.

Add the chicken to the cooled brine. Make sure the chicken is completely submerged.

Cover the pot and refrigerate for 8-24 hours.

Remove the chicken from the brine and rinse with cool water; pat dry with paper towels. Proceed with roasting, smoking or frying the chicken.

Quick Chicken Brine

water (1/2 liter)

salt (100 grams)

herbs

Combine water, salt, and aromatics (garlic, herbs, etc.) in a medium saucepan over high heat. Bring to a boil. Cover and remove from heat. Let stand for 10 minutes.

Place ice (or ice water) in a large bowl (or very large measuring cup) and pour brine over ice. Stir until ice is melted.

Place chicken in a large plastic bag and pour brine over chicken. Seal and let sit at room temperature for 2 to 3 hours, or refrigerate for 4 to 6 hours. Drain chicken and pat dry. Use in any recipe, but make sure to only lightly salt the chicken surface once you&#039;ve brined it.

Chicken Brine

Pour about 1/3 of the water into a large pot (large enough for the brine and submerged chicken) with remaining Brine ingredients. Bring to boil boil 1 minute, stir to dissolve salt.

Remove from heat, pour in remaining water. Cool completely before using (I cool about 30 min then refrigerate 1 1/2 hours). DO NOT put chicken in before full cool, this is a health hazard (Note 4).

Flip chicken upside down (so legs and breast are on underside. Submerge chicken in brine, cover and refrigerate for 12 - 24 hours (Note 5). Don&#x27;t worry if underside of chicken doesn&#x27;t stay under water - the the breast side is, that is what matters.

Brining

Remove chicken from brine and pat dry to remove excess moisture.

Tie legs with string (if desired), tuck wings under. Drizzle/brush with most of the butter all over, including underside (butter will firm up on contact).

Sprinkle with pepper and the TINIEST pinch of salt, place chicken on a rack in a heavy based roasting tray. Set aside for 20 minutes.

Preheat fan forced oven to 220°C/430°F.

Turn down the oven to 180°C/350°F, then roast chicken for 50 minutes to 1 hour (Note 7) or until the internal temperature at the joint between the leg and thigh is 75°C/165°F, or until juices run clear.

Check at 45 minutes, rotate the pan if not browning evenly, and brush top with remaining melted butter.

Remove chicken from the roasting tray, cover loosely with foil and rest for 10 to 15 minutes.

Chicken is so juicy, it needs little more than a tiny drizzle of the juices in the pan (go easy, it&#x27;s salty). Otherwise, make a gravy while the chicken is resting - see Note 8.

Roasting Brined Chicken:

In a pot or a saucepan, combine ½ cup of water, salt, and the rest of the ingredients (if using flavorings). Bring to a boil, whisk until the salt and sugar are completely dissolved, then remove from heat.

Pour in the rest of the water (if you&#039;re in a rush, add ice cubes), and allow the water to COMPLETELY cool down to room temperature and it&#039;s even recommended to refrigerate if possible.

When the water has completely cooled down, submerge the whole chicken in brine breast side down, cover, and refrigerate for at least 12 hours if using a whole chicken and up to 24 hours.

BBQ Smoked Chicken Thighs

chicken thighs (with bones and skin still on)

Starting with the brine, fill a tub with one gallon of water. Add 1 cup of coarse salt, and stir in until fully dissolved.

Place chicken thighs in water, ensuring that the meat is fully submerged. Place lid on tub.

Transfer to refrigerator and leave for one hour.

Remove thighs from brine and pat down with paper towels. Transfer to drying racks or to dry paper towel surface.

Start up smoker and aim for cooking temperature of 225°F (107°C).

While smoker heats up, make the rub by mixing all rub ingredients in a bowl. Combine thoroughly and then apply to thighs. Apply generously and aim to work into all areas of the chicken skin.

Transfer thighs to smoker and close door/lid. Cooks for 2 hours at 225°F, or until the thickest part of the thigh has reached an internal temperature of 165°F (74°C).

Remove thighs from smoker and place on cooking surface. Apply BBQ sauce to thighs by either dunking them, or using a bbq brush to apply it.

Put thighs back in smoker and cook for a further 10-15 minutes.

Remove thighs from smoker and allow to cool for 5-10 minutes.

📋RECIPE: The BEST Chicken Brine

Use a pot big enough to hold you meat. Dissolve kosher salt in water in the pot on slow simmer for about 2 minutes. The basic ratio is one tablespoon of salt for every one cup water.

Now throw in all the fancy flavor enhancing ingredients into water.  Add crushed garlic, pepper corns, bay leaves, lemon slices, honey and fresh herbs – rosemary, thyme and parsley.

Bring water to boil for about a minute, stir to dissolve salt.

Remove pan from stove. Allow water to cool completely.

IMPORTANT NOTE: DO NOT put chicken in the brine before it’s completely cool. Warm temperature of the brine will make scary harmful bacteria’s in the chicken. It can lead to serious health hazards!

Cook’s Tip: To help brine cool down faster, allow the pot to cool down a bit and then place the pot in fridge to cool brine faster and cool it completely.

Place whole chicken in cooled brine.

NOTE: chicken should be fully immersed in brine.

Cover pot with lid and brine chicken inside refrigerator for 8 to 24 hours.  Do not go past that. Chicken will begin to absorb salt and will turn overly salty.

Note: if chicken isn’t fully immersed in water, go ahead and add 1 to 2 cups of extra water (room temperature water).

After brining, remove chicken from brine. Rinse under tap water.

IMPORTANT: Don’t skip rinsing brined chicken under tap water. This will wash off some of the salt over the chicken. I found when not rinsed, brine chicken after roasting turned a bit salty.

DISCARD THE BRINE.  Raw meat in the brine marinade can cause contamination if used. Discard brine after removing chicken from it.

Remove chicken from the brine. Rinse it under tap water.

Pat dry chicken with paper towel to remove excess moisture.

Tie the legs of the chicken with a string.

Rub softened butter (unsalted) all over the chicken.

Sprinkle pepper powder on top.

Note: I did not add salt.

Place the chicken over a rack lined over baking tray or any other heavy based baking pan like cast iron pan. Set aside in fridge uncovered for 15 to 20 minutes.

Roast chicken in pre-heated oven at 400 degree F for 30 minutes.

Remove from oven. Using tongs inserted into the chicken, flip chicken to breast side up. Continue roasting for about 30 to 40 minutes.

Rotate the pan half way through if not browning evenly. And keep brushing the top with butter atleast 3 to 5 times in between roasting time.

Stick a thermometer around the thighs and if it read 165 degree F chicken is cooked.

Note: Brined chicken cooks faster.

Remove chicken from oven. Cover it with aluminium foil and rest it for 15 minutes. It’s important to let the chicken rest before carving.

IMPORTANT NOTE: Do not use the liquid from the pan to drizzle over chicken. It’ll turn chicken salty.

An easy smoked chicken brine recipe that uses common ingredients but gives the perfect flavor for smoked poultry!

Smoked Chicken Brine

Start by adding warm water to a large pot (big enough for about a gallon of water and still big enough to leave room for the raw meat once it&#039;s placed in).

Next, pour in brown sugar, salt, and minced garlic, and stir to dissolve sugar and salt.

Add in white onions.

Place chicken in brine, and cover pot with lid, aluminum foil or plastic wrap and place the pot with the chicken and brine in the refrigerator and let it marinate in the brine (see recipe notes  and post for tips and time length depending on type of chicken).

This is a salty brine, filled with herbal flavors, to moisturize and enhance grilled chicken.

Morton coarse Kosher salt, (approx. 35 grams)

Place all ingredients into a small saucepan and bring to a boil. Stir to dissolve the salt. Reduce the heat to a low boil for 2 minutes.

Remove from the heat and let cool. I placed the saucepan into an ice bath prepared in a skillet. In 10 minutes the temperature of the brine was less than 100°.

Place the chicken pieces into a covered bowl or ziplock type bag and cover with the brine.&nbsp;

Refrigerate 1 to 4 hours depending on your chicken. 1 to 2 hours for boneless, skinless cuts. 2 to 3 hours for skin on, bone in cuts. 3 to 4 hours for a whole chicken.

Remove the chicken from the brine, pat dry and lightly oil. A bit of pepper may be added at this time if desired.

Grill the chicken until the internal temperature is around 160°F.

This juicy, flavorful chicken is perfect for sandwiches, salads, pasta, and any other dish that calls for cooked chicken breasts.  This chicken is great grilled or cooked on the stovetop.
