A delicious, easy, healthy and comforting casserole made with chicken, broccoli and rice.

Dump-and-Bake Chicken Broccoli Rice Casserole

(10.5 oz) can condensed cream of chicken soup (NOT diluted)

water

white rice

chicken breast

(12.6 oz) bag frozen baby broccoli florets (or cuts)

cheddar cheese*

Preheat oven to 375F (190C). Spray a 9 x 13-inch baking dish with cooking spray.

Add cream of chicken soup and water to the prepared dish. Whisk together until completely combined.

Stir in uncooked rice, uncooked chicken, and frozen broccoli. Season with about ½ teaspoon salt and ¼ teaspoon pepper. Stir again.

Cover tightly with foil and bake for 1 hour, or until the liquid is absorbed, the rice is tender, and the chicken is cooked through. If desired, sprinkle the top of the casserole with grated cheese and return to the oven for a few more minutes, just until the cheese is melted.

Cheesy Chicken Broccoli Rice is an easy dinner recipe that is made in one pot on the stove. With only 6 simple ingredients like chicken, broccoli, rice, chicken broth, and cheddar cheese it can be on the table in just 30 minutes. 

One Pot Cheesy Chicken Broccoli Rice

olive oil

boneless, skinless chicken breasts

salt

pepper

basmati rice OR long-grain rice

chicken broth

broccoli

cheddar cheese

In a 12-inch skillet pan (make sure it has a lid) over medium-high heat, add the olive oil, chicken, salt, and pepper.Cook 4-6 minutes, stirring frequently, until chicken is mostly non-pink in the middle. Chicken should be white on the outside. Drain the excess liquid and oil from the chicken.

Add rice and chicken broth. Bring to a boil. Once boiling, cover with lid, and reduce heat to medium-low. Simmer for 15 minutes or until water is absorbed and rice is cooked. 

While rice and chicken is simmering, cook the microwaveable broccoli in the microwave following the instructions on package. Once done, chop up the broccoli into smaller pieces, if wanted. 

When rice is done cooking, add broccoli and 1 cup of the cheese into the skillet pan. Stir together. Top with the remaining 1 cup shredded cheese and cover with the lid. Let cook for about 2 more minutes or until cheese is melted. 

Serve immediately.&nbsp;

ONE POT CHEESY CHICKEN AND RICE

One Pot Chicken Broccoli and Rice

extra virgin olive oil (divided)

onion

chicken breasts

garlic (minced)

extra long grain white rice

Start by sautéing onions in two tablespoons of olive oil over medium heat.

Season chicken with salt and pepper.

Once onions have started to soften, increase heat to medium-high and add chicken breast to pan.

Brown chicken breast pieces, then add minced garlic and cook for about 2 more minutes.

Push chicken to one side of the pan and add additional tablespoon of olive oil to other side.

Saute uncooked rice in olive oil until rice starts to take on a golden color, 2-3 minutes.

Add chicken broth to pan, bring to a boil, and stir to combine.

Reduce heat to low and cover.

Cook chicken and rice mixture covered for about 12 minutes.

While chicken and rice are cooking, remove florets from broccoli, cutting into bite-sized pieces.

Stir in broccoli and continue cooking covered another 8 minutes on low, or until broccoli and rice are both tender.

Remove from heat and stir in half a cup of cheese.

Sprinkle remaining cheese on top, place cover back on the pan and let cheese melt, 2-3 minutes.

Yummy! I used quinoa instead, but it did take longer than the 20 min cook time on a low setting to fully soften and absorb the liquid. But, overall, it turned out really yummy. I used fresh sweet baby broccoli and added in some raw sharp cheddar! Seriously so simple.

This is SO GOOD. I found this recipe a couple weeks ago and it was a huge hit in this household! My husband has begged me to make it twice since 🤣 My one year old is pretty crazy about it too. Thank you for a great recipe!!

This reminds me of broccoli cheddar soup, it was the perfect dinner for the whole family, and the kiddos loved it because of all the cheese.
