Homemade Chicken Broth is a classic kitchen staple sure to take your homemade soups, sauces and all kinds of recipes to the next level!

Chicken Broth Recipe

carrots,

celery,

onion,

garlic

bundle (about a fistful) of thyme

parsley

peppercorns

sea salt

Place your chicken and the remainder of the ingredients into a large soup pot, and add 3 quarts of cold water.

Place the pot over medium-high heat and bring to a vigorous simmer/boil, then cover with a lid slightly askew, reduce heat, and very gently simmer for 4 hours (at least 2).

Carefully lift the chicken out of the broth, and set aside (you can shred the meat for another use if you'd like, just know that it will be pretty overcooked). Then, strain the broth of all the vegetables, and restrain with a finer mesh strainer for extra clarity.

Use immediately for your recipe, or allow the broth to cool completely and portion off quantities in containers or heavy-duty ziplock bags to keep in the freezer to use for future recipes.

Chicken meatball and orzo broth

British free-range chicken sausages, skin removed (see tip)

Finely grated zest ½ lemon

tbsp finely grated parmesan

breadcrumbs

olive oil

chicken stock

dried porcini mushrooms

leek,

orzo pasta

purple sprouting broccoli

1 Mix the sausagemeat, parsley, lemon zest, 2 tbsp of the parmesan, the breadcrumbs and some salt and black pepper in a medium bowl. Form into 16 equal-size meatballs.

Heat the oil in a frying pan, set over a medium-high heat and fry the balls for 4-5 minutes until lightly golden, then set aside. 3 Bring the stock to a simmer in a medium pan and add the porcini mushrooms. Cook for 7 minutes over a low heat, then add the leek and meatballs for 3 minutes more.

Meanwhile, cook the orzo in a separate pan of salted boiling water according to the packet instructions, adding the broccoli for the final 3 minutes. Drain, rinse under cold water, then add to the stock and meatballs and serve with the remaining parmesan on top.

This spicy garlic chicken broth is the magic elixir that soothes sore throats, warms you up on a chilly day and makes instant ramen infinitely better.

Easy spicy garlic chicken broth

cm (2in) piece fresh ginger (sliced)

red chilli (halved)

chicken stock / bone broth

soy sauce

lime juice

tsp honey ((optional))

Heat the oil in a pot set over medium heat.

Add the garlic, ginger, spring onion and chilli and cook for 2-3 minutes until fragrant.

Pour in the stock, soy sauce, honey and lime juice. Bring to a simmer then cook for at least 10 minutes.

Taste and adjust seasoning as preferred then serve.

This classic homemade Mexican chicken soup is medicine for the soul. It&#039;s one of my favorite soups and so simple to make. It freezes well, which comes in very handy when you are not feeling well and need comforting.

Caldo de Pollo Recipe

water

chicken drumsticks or thighs

salt

garlic (chopped)

rice

onion

roma tomatoes (chopped)

carrots (sliced)

celery (sliced)

Yukon Gold potatoes (quartered)

tomato sauce

cilantro

safflower petals (azafran)

Lime wedges

In a large pot, put the water, chicken, salt, and garlic. Boil for 15 minutes.

While the chicken is boiling, in a separate pan, heat the oil over medium heat, add rice and cook, stirring occasionally, until browned, about 2 to 3 minutes, being careful not to let it burn. Add onion and continue cooking until onion is translucent, about 2 minutes. Add tomato and cook for an additional 3 minutes. Add mixture to chicken pot.

Add carrots, celery, and potatoes to soup and let come to a boil; reduce heat. Let simmer until vegetables cook through, about 20 to 30 minutes. Add tomato sauce, cilantro, and safflower petals during the last 5 minutes.

Ladle soup, including a piece of chicken for each serving, into bowls and serve with lime wedges, warm corn tortillas, and salsa casera.

Made this tonight when I was feeling under the weather. Came together fast and used up a bunch of the veggies that were languishing in the back of the fridge! The only change I made to the recipe was I did the noodles instead of rice (cooked separate), and I soaked and pureed a few dried ancho chiles and added them in, since I was craving that flavor. Soooooo good!!

Made today!  Used packaged broth instead of water, such great flavor!  For my taste some spice heat would push it over the top, but for the other two in the house it was perfect!  Definitely on the keeper recipe pile.  Thanks for sharing.

I've always made  Caldo de Res &amp; Menudo..but never Caldo de Pollo..I will definitely make this..it looks delicious &amp; easy to make..I love your recipes..I must admit I'm not a big fan of real spicy foods, but always seem to add just a little bit of spice to them..

I'm feeling under the weather and opted for this caldito de pollo. I can't say that the caldo actually worked since its to soon to tell but it did feed the soul. So easy to make and In about 45 minutes you have this yummy bowl. The flavor was delicious and I really can't wait to make this again soon.

I’ve made this soup many times and it’s so full of flavor and comfort! I recently made a batch for a meal train for a friend while they recovered from surgery and it was a major hit. They appreciated how hearty the meal was and how easy it is to store and reheat as they recover.

The taste brought me back to my grandmother's small kitchen and when we would visit her from out of state she would make this delicious caldo.  She was on a very fixed income but most of these ingredients were always around. I did alter it a little bit I had almost everything except for tomatoes or tomato sauce but I did have some New Mexico dried chilies and Guajillo chiles, so after eating them up and running them through the blender and frying it I added the sauce to the broth, and thank you for the comment that you made about the cilantro I still get a slight chuckle when I think about that  hope you and your family have a very blessed memorable Thanksgiving
