This easy Chicken Caprese recipe is absolutely delicious, made with chicken breasts baked in balsamic reduction and topped with fresh mozzarella, tomatoes, and basil.

Chicken Caprese

boneless skinless chicken breasts*

olive oil

basil

oregano leaves

salt and pepper

red onion (, diced)

balsamic vinegar

Tablespoons light brown sugar

garlic

roma tomatoes (, sliced)

mozzarella cheese (, sliced)

Preheat oven to 350 degrees F.

Season chicken on both sides with oil, basil, oregano, salt and pepper.&nbsp;

Heat a large oven-proof skillet over medium-high heat. Once hot, add oil, then chicken, and sear chicken quickly, flipping once, just until golden on both sides. Remove to plate.

Mix together the diced red onion, garlic, balsamic vinegar and brown sugar. Pour the mixture into the skillet and simmer, stirring, for 3 minutes.

Return chicken to pan and spoon sauce over it. Place pan in oven and roast until the chicken is cooked through (165 degrees), about 10-20 minutes depending on how thick the breasts are.  Remove from oven. 

Turn oven to broil.

Top each chicken with a slice of fresh mozzarella cheese. Broil just until the cheese has melted.

Serve immediately, topped with fresh sliced tomatoes and basil and spooning the pan sauce over the top.

Preheat the oven to 400° F.

Use a thin, sharp knife to slice the chicken breasts in half lengthwise. Season both sides with kosher salt and freshly ground black pepper. Heat a large oven-proof skillet over medium high heat with the olive oil and butter. Once the butter has melted into the olive oil, add the chicken breasts to the pan, being careful not to crowd. Cook on each side until lightly browned and easily release from the pan, about 3-4 minutes each.

Slather the tops of each chicken breast with the basil pesto, about 1-2 tablespoons per chicken breast. Top each chicken breast with a slice of mozzarella and a few slices of tomato. Transfer the skillet to the oven and cook for 10-12 minutes or until the chicken reaches an internal temperature of 165° F. Remove from the oven and garnish with fresh basil and a drizzle of balsamic glaze.

Drizzle 1 tablespoon of olive oil over chicken breasts and season to taste with salt and pepper. Sprinkle italian seasoning over the chicken.

When chicken is done top with a slice of mozzarella cheese and cook for 1 more minute.

Remove from heat and place chicken breasts on a plate. Top each breast with 1 slice of tomato, thinly sliced basil and salt and pepper to taste. Drizzle with balsamic glaze and serve.

Preheat oven to 400 degrees.  Add the chicken to a 9x13 inch pan.

In a small bowl whisk the balsamic vinegar, honey, garlic, olive oil, Italian seasoning, salt, and pepper.

Pour over the chicken and add cherry tomatoes to the side of the chicken.  Place the tomato slices on the top.

Bake for about 20-25 minutes or internal temperature is 165 degrees.  Add cheese for the last 5 minutes to melt.

Garnish with fresh chopped basil if desired.

Preheat Grill to Med-high heat. (See notes for a stovetop version.)

Pound chicken breasts into equal thickness, ¾ inch thick. Place in a big bowl, drizzle with olive oil to coat all sides, then sprinkle all sides with the salt, pepper and garlic powder, tossing to coat evenly. Toss in the lemon zest and thyme.

Grill the chicken, place it on the hot grill, cover, and check for good grill marks after 5-6 minutes. ( While the chicken is grilling make the tomato salad.) Once you have good grill marks, turn the chicken over, cover, and grill another 5-6 minutes. Turn over again, lower heat and cook until breasts are 160F at the thickest part. Place a slice of mozzarella cheese on top of each piece, cover the grill and cook until the cheese is melty, about 4 minutes, watching carefully.

Make the tomato salad, by placing all in a medium bowl and tossing well. To make the basil ribbons, stack them in the same direction, roll them up into a roll, then thinly slice.

Once the cheese perfectly melty- the chicken is ready to serve- and best served soon! (Feel free to keep warm in a 300F oven.)

Place the chicken on a platter, and spoon the tomato salad over the top.

Optional: garnish with a drizzle of balsamic glaze and tiny drizzle of pesto.

Preheat oven to 400°F. Coat a 9&#215;13 pan with nonstick spray and set aside.

Place the chicken on a cutting board and cut 6 slits in each breast (this can vary depending on the size of your chicken breasts), 3/4- of the way through, careful not to cut all the way through the chicken.

Combine the salt and the Italian seasoning together and sprinkle evenly on top of the chicken.

Slice the fresh mozzarella into 12 slices. Slice the 12 pieces in half, creating 24 half-moon shaped pieces.

Repeating the same process as the cheese, slice the tomatoes into 12 slices, and then again in half, creating 24 half-moon tomato slices.

Fill each slice in the chicken breasts with a small spoonful (about a teaspoon) of pesto, a slice of the cheese, and a slice of tomato.

Place the chicken into the prepared pan and sprinkle evenly with parmesan cheese. 

Bake for 20 &#8211; 25 minutes, or until chicken reaches an internal temperature of 165°F.

Garnish with sliced basil and drizzle with balsamic vinegar if desired.

Ground Chicken Caprese is our take on Caprese Chicken, but with ground chicken instead of chicken breasts. Easy enough for everyday dinners but also fancy enough to serve on date night or at parties!

Start by adding the olive oil to a large skillet over medium heat. Add the diced onion and cook for 5 minutes until softened. Add the garlic, stir and cook 1 minute longer.

Add the ground chicken to the skillet, breaking up as it cooks until completely cooked through. Drain any drippings from the pan if needed.

Season the chicken with salt, oregano, basil and dried parsley. Pour in the tomato sauce and balsamic vinegar and stir to combine.

Add the mozzarella balls and the cherry tomatoes to the skillet, scattered around the pan. Bake for 7-8 minutes until the cheese is melted and the tomatoes are slightly blistered.

Garnish with fresh chopped basil, grated parmesan cheese and drizzled balsamic glaze.
