King Ranch Chicken for two is just the right size for a weeknight dinner.

King Ranch Chicken for Two Recipe

boneless skinless chicken breast, large

unsalted butter

all-purpose flour

chicken broth

heavy cream

jalapeños jalapeño, small and minced

onion, diced

can ro-tel

tortillas corn tortillas,

garlic salt

cheddar cheese

salt and pepper,

Classic Chicken and Dumplings flavor, but in easy-to-make casserole form.

Chicken and Dumplings Casserole

(1 stick) butter

white onion, chopped

celery,

chicken

Bisquick

milk

(10.75 chicken soup

thyme

salt and black pepper,

Fresh parsley, minced,

Preheat oven to 350°F and grease a 9x13-inch baking dish with nonstick spray.

In a skillet over medium heat, melt butter. Add onion and celery and cook until soft, about 10 minutes. Season with salt and pepper.

Pour veggies (along with any melted butter) into bottom of baking dish.

In a medium bowl, stir together Bisquick and milk. Pour over the top of the chicken but do not stir.

In the same bowl, if desired, stir together chicken broth and cream of chicken soup. Season with salt and pepper and thyme, then pour over Bisquick layer. Do not stir.

Bake uncovered for 45 minutes. Let rest 5 minutes before serving. Sprinkle with fresh parsley and enjoy!

Salsa Verde Chicken Casserole

oz Jar of Salsa Verde Salsa

oz Block of Cream Cheese, Softened

Shredded Mexican Cheese

oz Bag Frozen Riced Cauliflower, steamed

Chicken

tsp Ground Cumin

tsp Garlic Powder

tsp Onion Powder

Salt

Pepper

Toppings,

Preheat oven to 350 degrees.

To a large bowl, add the cream cheese and beat for 1-2 minutes with a hand mixer until smooth. Add in salsa verde, 1/2 cup of the cheese, cauliflower rice, and seasonings, and beat to combine. Stir in the shredded chicken.

Spray an 8x8 casserole dish with non-stick spray. Add the mixture to the dish. Top with remaining cheese. Bake for 35 minutes. Enjoy!
