vegetable oil

flour

tsp chili powder

tsp cumin

oregano

salt

chicken stock

sugar

tomato puree ((Any smooth tomato sauce/Passata/Puree will work))

onion (finely chopped)

red bell pepper (finely chopped)

garlic (crushed)

rotisserie chicken (shredded)

beans

tsp enchilada spice

red pepper / chilli flakes

lemon juice

black pepper (to taste)

cilantro/coriander

grated cheese

flour tortillas

Preheat the oven to 200°C/400°F.

To make the sauce, heat the oil in a pot then whisk in the flour. Cook for 2 minutes, stirring, then add the spices and tomato sauce.

Whisk in the stock until the sauce is smooth. Simmer for a few minutes until the sauce is smooth, thick and flour is cooked out. Season with salt and sugar (optional).

To make the filling, saute the onion, garlic, peppers in a large frying pan until the vegetables are cooked and starting to caramelize.

Add the chicken, beans and seasoning and saute for another 5-7 minutes.

Place a few spoonfuls of the filling onto the tortillas and roll up the tortilla.

Place the enchiladas into a casserole dish. Spoon over the sauce, ensuring the tortillas are completely covered.

Sprinkle over the cheese then place in the oven and bake for 15-20 minutes or until the cheese is melted and the enchiladas are hot and bubbling.

Remove from the oven and allow to rest for 5 minutes before serving with avocado, cilantro and lime.

Creamy Chicken Enchiladas Recipe

Delicious chicken enchiladas perfect for a dinner recipe! These creamy enchiladas are stuffed with chicken, green chiles, cheese and topped with a creamy sauce and cheese!

oz cream cheese (softened)

water

onion powder

tsp salt

tsp pepper

c chicken

flour tortillas (6 inches, room temperature)

cream of chicken soup (10 3/4 oz)

green chilies (4 oz)

c. cheddar cheese

In  a large mixing bowl, beat the cream cheese, water, onion powder, cumin, salt and pepper until smooth. Stir in chicken.

Place 1/4 cup of the chicken mixture down the center of each tortilla. Roll up and place seam side down in a greased 13 in x 9 in baking dish.

In a bowl, combine the soup, sour cream, and chilies, pour over enchiladas.

Bake, uncovered, at 350 degrees for 30-40 minutes or until heated through. Sprinkle with cheddar cheese, bake 5 minutes longer or until cheese is melted.

I added two cans of chilies and the entire brick of cream cheese. Lots and lots of cumin makes it even more yummy!

I LOVE this recipe!! I omit the chiles because I have little ones. But my partner and I put pickled jalapeños individually. This is a great meal I can do on busy work nights. I adjusted the temp because my oven isn’t great.

This was really good and easy to prepare because I had leftover cooked chicken.

This is SO GOOD and a our regular dinner rotation! Last night I went to make it and couldn't find the recipe (I'm old school and print out recipes) and I hadn't pinned it! I was so upset. But, I've made it so many times I decided to make it from memory and it turned out great. The hubs couldn't tell the difference. Then I got online this morning and scoured the internet to find it and pin it. So glad I was able to track it down!
