How To Make Milky Keto Chicken Feet Stock

lbs (900 g) chicken feet, cleaned

ginger

carrots,

celery,

Most chicken feet come pre-prepared and cleaned.  So all you have to do is place into a large pot of water and bring to the boil.

I like to toss out that first batch of water so that any scrum or bits on the chicken feet is removed from the stock early on.

After you refill the pot with fresh water, add in all the vegetables (this really helps to flavor the stock).

Now, bring the water to a boil and then put the lid on and keep the stock on a low simmer for 6+ hours.

When it’s done, just pour the stock through a strainer to remove all the vegetables and anything else.  That way you’ll end up with a pure stock to use.

Refrigerate them in glass mason jars or other glass containers.  You can also freeze them to keep them for longer.

These braised Chicken Feet are cooked long and slow in a rich sauce – so tender and flavorful! This healthy recipe rivals what you would find in the best Chinese Dim Sum restaurant. The best part? No deep-frying required!

Easy Chicken Feet Recipe

vegetable oil

soy sauce

oyster sauce

sugar

beer ((12 ounces))

Chop the nails off the claws using a sharp knife and rinse the feet thoroughly. Remove any dirty part on the chicken feet. (Try to cut them through the joint for easy cutting.)

Add cold water and chicken feet to a skillet or wok. (Make sure the chicken feet are submerged.)

Bring to boil and cook for 10 minutes, and drain the water.

Place the skillet over medium-high heat, and add vegetable oil.

Add garlic and ginger. Stir fry until fragrant.

Add chicken feet, soy sauce, oyster sauce, and sugar. Mix together with a wooden spoon.

Add beer and bring to boil.

Cover with a lid and simmer for 25-30 minutes or until tender. (Check the chicken feet from time to time and make sure there&#039;s enough liquid during braising. Add water if needed.)

Remove the lid, and turn the heat to high. Stir fry until the sauce has thickened. (If you’d like to thicken your sauce faster, you can add the mixture of cornstarch and water. Mix 1 tablespoon of cornstarch with 1 tablespoon of water).

Dim Sum Chicken Feet

500 g chicken feet

water chicken feet

thumb ginger

scallions

tbsp. Shaoxing wine

black beans

Thai chili pepper

inch root ginger

tbsp. light soy sauce

tbsp. doubanjiang (, optionally)

dark soy sauce

water

tbsp. corn starch

Cut the claws off and any dirty parts on the chicken feet. You can choose to keep them as whole pieces or cut them into smaller ones.

Prepare the chicken feet

Add water in a wok,  place scallion, ginger and cooking wine. Cook the chicken feet for around 2 minutes after the water boils.

Transfer out, wash carefully.  Then dry completely. This is a very important step to avoid the oil splattering out during the cooking process. If time is enough, I will recommend you place the chicken feet for air frying to make sure there is no water on the surface.

Blanch and dry

Heat oil in a wok and add the chicken feet into deep fry until it turns dark golden brown. It is extremely important to make sure the water content is removed by the deep-frying process so the tiger skin can be achieved. It may take around 12 to 18 minutes.

Deep-fry

If you don&#39;t want deep-fry, you can choose to air fryer the chickn feet. If you don&#39;t want to use the deep-frying method, you can use an air-fryer to help.  Spread some oil on the drained chicken feet. Put into an air fryer preheated at 375°F. Leave to fry for about 10 to 12 minutes until the skin is completely dried.

Transfer the chicken feet into iced water. And soak for around 1 hour.

I learn this from a Cantonese chef, if you further cook the soaked chicken feet, the tiger skin can be strengthened. So place the soaked chicken feet in boiling water, and continue cooking for 8 to 12 minutes based on how soft you want them to be.

Boil to strong the tinger skin

Add dou-chi, garlic, ginger, and chili paste if using a small amount of oil. Fry over a small fire until aromatic. Add in dark soy sauce and light soy sauce.

Pour in starch water. Let it simmer for a while.

Return the chicken feet. Coat well, and serve hot. You can make larger batches and then re-steam them for the next serving.

Parboil chicken feet

Add 4 cups of cold water to a large pot or wok. When parboiling anything with bones, like chicken feet, it’s important to start in cold water so that everything can heat evenly and we can extract all the scum that’s trapped deep inside. Add ginger, green onion, honey, and cooking wine. The aromatics and cooking wine help reduce gaminess and add flavor, while the honey helps the chicken feet brown more beautifully during the frying step.

Prepare other ingredients

Give the fermented black beans a quick rinse to remove any dust and debris, then soak in a small bowl of cold water so they can begin to rehydrate and soften. In a separate small bowl, rinse the peanuts, then soak them in cold water.

Prepare sauce

In a bowl, combine black bean sauce, oyster sauce, light soy sauce, Shaoxing wine, dark soy sauce, sugar, salt, hoisin sauce, and chili sauce. We’ll adjust the amount of dark soy sauce later depending on how the color looks, but you can adjust the amount of chili sauce to suit your preferred spice level.

Trim chicken claws

Prepare your work surface with a clean, dry paper towel. You can use either kitchen shears or a knife to trim the nails from each toe of the chicken foot. Carefully cut off all of the hard nail, getting as much as you can without cutting into the skin of the chicken foot. Keep your work area tidy by ensuring the trimmed nails go into a waste bowl or other designated area. Then, set the trimmed chicken foot down on the paper towel.

Cut each chicken foot in half to make them more bite-sized for easier eating. To cut the feet, slice your knife into the “palm” of the feet so that you see two toes on each side of the knife. 

Braise chicken feet

Heat your wok again on high and add in oil. You can use the reserved oil from earlier.

Steam & serve

Technically, once the chicken feet are done braising, you can dig in! But if you want to go an extra step to really replicate the restaurant experience, you can keep going.
