Cheesy Chicken Fritters Recipe

1.5 lb (700 grams) skinless boneless chicken breast

eggs

almond flour

(110 grams) shredded mozzarella cheese

basil (finely chopped)

Tbsp chives (chopped)

Tbsp parsley (chopped)

garlic powder

sea salt black pepper (or to taste)

Tbsp olive oil (or more to fry)

Place the chicken breast on a chopping board and using a sharp knife, chop it into tiny pieces, then place them in a large mixing bowl. 

Into the large bowl, stir in almond flour, eggs, mozzarella, basil, chives, parsley, garlic powder, salt, and pepper. Mix well to combine.

Heat oil in a large non-stick pan, over medium-low heat. With an ice cream scoop or a large spoon, scoop into the chicken mixture and transfer it to the pan, then slightly flatten to create a fritter. Don&#039;t overcrowd the pan, cook the fritters in batches, about 4 per batch.

Fry until golden brown on both sides, about 6-8 minutes. Keep in mind that you need to cook them at medium-low temp, otherwise they will burn on the outside but won't get well cooked on the inside.

The first thing to keep in mind is that you need to chop the chicken in very small pieces. Then, add eggs, almond flour, and shredded mozzarella. This will make the mixture hold together nicely.

Next, you need to add the flavorings such as fresh chopped herbs, dried herbs, garlic, chili, salt & pepper, or any other seasonings of your choice.

Mix everything well, shape the fritters and you can make right away or refrigerate them until you’re ready to cook them. You can even refrigerate them overnight, so if you have a special occasion the next day, like a potluck, for instance, you can make them the night before and cook them just before guests arrive.

I love chicken fritters. It's the best way to season chicken breast so that it tastes out of this world. I couldn't decide on just one flavor combination, so I have for you 3!

Chicken Fritters (3 flavors - cheesy, Italian, and curried)

chicken breasts, 2 large chicken breasts

chives

ts paprika powder

basil

mayo

Swiss cheese (2 oz/60 grams)

flour

salt and pepper (to taste)

frying oil (for cooking the fritters)

sun-dried tomatoes (about 6 pieces)

lemon

basil leaves

Parmesan cheese

red bell pepper (1.8 ounces 50 grams)

3.5 oz cremini mushrooms (100 grams, 5 small or 2 very large mushrooms)

mild curry powder*

Prepare the ingredients for Italian-inspired chicken fritters: Cut the chicken into small 1/2 inch / 1 cm cubes, basil, and sun-dried tomatoes very finely, grate the lemon, and grate the Parmesan cheese on the small holes of a box grater.

Prepare the ingredients for cheesy chicken fritters: Cut the chicken into small 1/2 inch / 1 cm cubes, chop the chives finely, and grate the Swiss cheese on the big holes of a box grater.

Prepare the ingredients for curried chicken fritters: Cut the chicken into small 1/2 inch / 1 cm cubes, the bell pepper into ¼ inch / ½ cm cubes, finely chop the mushrooms.

Instructions for all fritter types:

Mix all the ingredients: In a big bowl, mix all the ingredients together, season to taste with salt and pepper.

Cook the fritters: Heat the oil on a large frying pan, the pan should be well heated. Scoop a heaping tablespoon of the batter onto skillet, flatten into about 1/2 inch / 1 cm thick disk, repeat with the remaining batter (working in batches). Cook over medium-high heat for about 2 minutes on one side or until golden brown and then about one minute on the other, until the meat is cooked through and the fritters are browned on both sides.

Transfer the fritters to a plate lined with a kitchen towel to drain the excess fat.

These chicken fritters are easy to make and taste great. They are perfect for a quick and easy dinner, or as a party appetizer. You can serve them with your favorite dipping sauce, or eat them plain. I guarantee that you will love these delicious fritters!

½ lbs. Boneless skinless chicken breast

Medium eggs

⅓ C. Almond flour

mozzarella cheese

Tbsp. Fresh basil (chopped)

Parsley

Tbsp. Fresh chopped chives

Tbsp. Olive oil

Garlic powder

Salt and pepper

Slice the chicken breast into very thin pieces.

In a bowl, combine the chicken, almond flour, eggs, cheese, parsley, basil, chives, and salt and pepper to taste. Knead with your hands to combine well.

Heat the oil in a large skillet over medium heat on the stove.

Drop spoonfuls of the chicken mixture into the skillet, and flatten slightly with a spatula. Fry evenly on both sides until golden brown, and until the chicken is cooked through.
