I made this in a crock pot and let simmer for a while, adding the gnocchi and spinach towards the end when we were getting ready to serve it.

Place the chicken, mirepoix, basil, Italian seasoning, poultry seasoning, salt, and broth in a crockpot or slow cooker. Cover and cook on high for 4-5 hours or low for 6-8 hours. Shred the chicken directly in the crockpot.

Add the cornstarch mixture, evaporated milk, and gnocchi. Stir and replace cover. Cook another 45 minutes &#8211; 1 hour until the soup has thickened and the gnocchi has softened.

Crockpot Chicken Gnocchi Soup Step 2

While the soup is thickening, cut the bacon into small pieces and fry until crispy. Drain on paper towels and wipe most of the bacon grease out of the pan, leaving just a little bit for the spinach/garlic. Add the garlic and saute for one minute. Add the spinach and stir until wilted. Remove from heat. Add the bacon and spinach to the crockpot. Stir to combine.

Add any additional liquid as needed (I added about a cup of water once it started to thicken) and season again with salt and pepper as needed.

I made this tonight and used coconut milk in place of the evaporated (and naturally, didn't see the tip about increasing the cornstarch until after dinner!) 

Either way, it was DELICIOUS and my picky 5 year old ate his entire bowl. I wouldn't say we could taste the coconut, more that it had just a slight "essence" of it. I definitely couldn't taste it, and barely smelled it. This was definitely a win for us!

Doesn't soy milk taste like water? I would use original full fat milk... Give it a taste!

OH MAN. I knew when I saw all that bacon crispin' on Snapchat  that good things were comin' but this is better than I was expecting!!

I used a Dutch Oven and cooked it at 250 degrees for 6 hrs. First I sautéed the chicken. After removing the chicken I sautéed the veggies. Substituted half and half for the evaporated milk. Everyone including my 1 and 3 yr old grandchildren loved it! The only thing different I would do is leave out the gnocchi and use rice or  dreamfield pasta.

I would love to slow down and savor a cup of this soup with some garlic bread but at last, a  case of bed bugs is making me want to pull my hair out so rain check? :)

I made this yesterday for a delicious friday night meal and it was AMAZING! First, when my husband walked in the door the door he commented on how good it smelled (I was cooking the garlic). Once we sat doen with our soup cups and garlic bread, the meal did not disappoint! I can't wait for the leftovers! It's already been agreed that this recipe will go into the recipe dawer to use again -- which reminds me, I've been meaning to tut that drawer into a recipe scrapbook, or binder at least!

Creamy Chicken and Gnocchi are made in one pot in just 30 minutes. Simple and quick enough to make on a busy weeknight. This delicious restaurant-quality pasta meal might become a new family favorite dinner!

Creamy Chicken and Gnocchi - One-Pan, 30-Minute Meal

chicken thighs (skinless boneless)

chili powder

oz mushrooms (crimini)

oz potato gnocchi

heavy cream

garlic (minced)

Italian seasoning (or Herbs from Provence)

smoked paprika

spinach

salt and black pepper (to taste)

red pepper flakes (to taste)

Season the chicken thighs with Italian seasoning, chili powder, salt, freshly ground black pepper.

Heat an empty high-sided, heavy-bottomed skillet (such as a cast-iron or stainless steel pan) over medium heat for 2 minutes. This allows the skillet to heat through.

Add 2 tablespoons of olive oil. Add chicken thighs. Cook the chicken on medium heat for 5 minutes on one side, undisturbed. This allows the chicken to sear.

Flip the chicken thighs over, reduce heat to low-medium, and cook for about 5 more minutes or longer on the other side, without moving it, until it's cooked through.

The meat thermometer should register 165°F (74°C) in the thickest part of the chicken. Remove the chicken from the skillet.

How to cook chicken

Heat 1 tablespoon olive oil in the same, now empty, skillet.  Cook sliced mushrooms (seasoned with salt and pepper) in 1 tablespoon of olive oil on high heat for about 1 or 2 minutes, until lightly browned and softened.  Remove cooked mushrooms from the skillet.

How to cook mushrooms

To the same, now empty, skillet add uncooked potato gnocchi, chicken broth, heavy cream, minced garlic, Italian seasoning, paprika.

Bring to a boil on medium heat and stir everything well. Cover with lid, and allow the gnocchi to cook for about 5 minutes on medium heat, while the sauce boils.

Add fresh spinach, and cook on medium heat, stirring frequently for 5 minutes until the spinach wilts to your liking. Cook longer if you would like a thicker sauce.

How to make creamy sauce

Stir in half of cooked mushrooms.

Season with salt, freshly ground coarse black pepper, and red pepper flakes, if you like.

Return cooked chicken to the skillet. Top with the remaining half of cooked mushrooms

Cherry Tomatoes

Red Onion

Gnocchi

Cheddar & Mozzarella Mix

Pine Nuts

Black Pepper

Skimmed Milk

Light Soft Cheese

Reduced-Fat Red Pesto

Parmesan

Dice the chicken breast, then season it with salt, pepper and the mixed herbs. Wrap it in foil and air fry at 180°C for 15 mins, then set aside.⁣

Meanwhile, halve the cherry tomatoes and dice the red onion. Combine all the sauce ingredients in a bowl and set aside.

Tip the cooked chicken into the sauce bowl and set aside. Put the gnocchi into the air fryer, spray with the olive oil, then cook for around 12 mins at 190°C until crispy. 

Once the gnocchi is crispy, add the onion, tomatoes, chicken and sauce to the air fryer with the gnocchi. Roughly mix together, then top with the cheese and pine nuts and return to the air fryer for another 5 mins until bubbly.⁣

This garlic chicken gnocchi skillet is the perfect simple recipe for a quick weeknight dinner. It's easy, done in 30 minutes, and can be made gluten-free! Juicy chicken thighs and pillowy gnocchi are cooked in a delicious cream sauce, and there's plenty of vegetables included right in the same meal with the spinach, onions and mushrooms. Garlic Chicken Gnocchi Skillet

1.5-pounds boneless, skinless chicken thighs

paprika

white mushrooms, diced

½ cup half and half (or heavy whipping cream)

mozzarella

Red pepper chili flakes,

Season chicken with salt, pepper and paprika. Melt 2 tablespoons of butter or ghee in a large skillet over medium-high heat

Add the chicken thighs to the skillet and cook for about 5-10 minutes per side, until golden brown. Transfer the chicken thighs to a plate and set aside

Melt the last 3 tablespoons of butter, add in the garlic, Italian seasoning and then add in the onion and mushroom. Sauté until onion is translucent and mushrooms are tender, about 3-4 minutes

Whisk in the chicken broth and whisk for about 1 minute until hot. Then gradually pour in the cream, whisking continually as you pour it in. Add in the shredded mozzarella and continue whisking about 2-3 minutes until combined and beginning to thicken

Stir in the cooked potato gnocchi and spinach, and add any additional salt and pepper to taste

Place the chicken thighs back into the skillet and let simmer for about 2 minutes to heat chicken

Garnish with parsley, parmesan and red pepper chili flakes, if desired

I made this recipe pretty much as instructed except I used pecorino romano instead of mozzarella and I kept the gnocchi separate.  I thought the gnocchi would breakdown too much if it cooked in the sauce.  Overall, the dish was very tasty.  The sauce was not thick but I wasn’t expecting it to be.  Thanks for the recipe!
