Mediterranean Grilled chicken kabobs! Chicken pieces, marinated Mediterranean-style with warm spices, garlic, citrus and excellent extra virgin olive oil, then skewered along with colorful veggies and grilled to perfection. You can grill these kabobs or broil them in the oven (broiler instruction in notes.)

Mediterranean Grilled Chicken Kabobs

thyme

nutmeg

tsp ground green cardamom

Salt and pepper

chicken breasts

Extra virgin olive oil

garlic

lemons (juice of)

green bell pepper

Make tahini sauce according to this recipe Store in fridge until ready to use.

In a small bowl, combine the paprika, thyme, nutmeg,cardamom, and a generous pinch of salt and pepper. Generously coat the chicken with the spices.

Place the chicken cubes in a deep dish with the sliced yellow onions. Combine the minced garlic and lemon juice and add them to the chicken dish. Add a generous drizzle of extra virgin olive oil. Toss the chicken to make sure it&#039;s well-coated. Cover and refrigerate for 2 to 4 hours (if you don&#039;t have the time to marinate, allow the chicken about 30 minutes or so at room temperature before grilling).

A few minutes before grilling, thread the chicken cubes, green peppers, red peppers and red onion onto wood skewers (skewers must be soaked in water for at least 1 hour before using).

Lightly oil and heat a gas grill or griddle to medium-high heat. When ready, grill the chicken kabobs, turning occasionally, for 10 to 12 minutes or until chicken is fully cooked and juices run dry (internal temperature should register 165 degrees F.)

Serve chicken kabobs with warm pita and tahini sauce with other bright sides and salads (see suggestions)

Joojeh kabab is a classic chicken kebob recipe from Iran. Chicken pieces are smothered in a delicious saffron chicken kebob marinade and have such delicious flavor thanks to saffron and lemon.&nbsp;

Joojeh Kabab (Persian Saffron Chicken Kebab)

lb chicken breast

Greek yogurt

onion (thinly sliced)

olive oil (extra virgin)

lemon (juice of)

bloomed saffron (See notes)

salt

In a large bowl mix yogurt, sliced onion, oil, lemon juice and saffron and salt.&nbsp;

Place the chicken in the marinade and stir well so all pieces are covered with marinade.&nbsp;

Cover the bowl and refrigerate and let the chicken marinate for at least three hours up to twenty four hours.

Once ready to cook, place the bowl in room temperature for 15 minutes. 

Thread the chicken pieces into skewers and grill on both sides until they are golden brown on the outside and white and juicy on the inside.&nbsp;

Grill Instructions:

Heat 2 tablespoons olive oil in a large pan over medium high heat.&nbsp;

Put some of the marinated chicken in the pan and let them cook on one side before turning them to cook on the other side, about 3-4 minutes on each side. Do not over crowd the pan.&nbsp;

Repeat with the remaining marinated chicken.&nbsp;

Stove top instructions:

Preheat the oven to 400°F.&nbsp;

Thread the marinated chicken into skewers and place them on a baking sheet lined with aluminum foil.&nbsp;

Cook the chicken in the oven for about 20 to 25 minutes until the chicken pieces are fully cooked.&nbsp;

Turn the broiler on and broil the chicken kebabs until they're golden brown, about 3-4 minutes, turn half way so both sides are golden brown.&nbsp;

Oven Instructions:

Baked chicken kabobs in oven are soft, juicy and flavorful thanks to a chicken kabob marinade made with milk, olive oil and spices.

Turkish Chicken Kabobs In Oven

(1lb) chicken (thighs, legs without bones or breast)

milk

olive oil

tomato paste

black pepper

red pepper flakes

Dice the chicken in about 1-inch pieces. Remove the bones if you are using chicken legs.

Mix all the marinade ingredients in a bowl. 

Put the diced chicken in the marinade, give it a good stir. Cover and keep it in the refrigerator for at least 1 hour (overnight is the best).

Soak wooden skewers for 1 hour so that they don’t burn in the oven.

Place the chicken skewers on a parchment paper lined baking sheet. (Please see the note below).

Bake them for 20 minutes. Remove from the oven, flip them over and bake for another 10 minutes.

Tried this recipe with chicken breast and chicken thighs. Marinated them for 2 hours. So tasty!
