Homemade chicken nuggets that are crisp on the outside while moist and tender inside. It is easier to make than you think.

Baked Chicken Nuggets

chicken breasts

bread crumbs

buttermilk

lemon

salt

black pepper

Cut the chicken breast into 2x2 inch pieces.

Place the chicken in a bowl and then pour-in the buttermilk. Squeeze the lemon. Mix well. Cover and place in the fridge to marinate for at least 3 hours (The longer it marinates the better the texture gets).

Preheat the oven to 400 degrees Fahrenheit.

Sprinkle salt and pepper on the chicken.

Manually press the&nbsp; chicken slices to flatten. Roll the chicken over the breadcrumbs. Make sure that the chicken is properly coated.

Place a wire rack over a baking tray. Make sure that the wire rack can withstand high oven temperature. Arrange the chicken pieces over the wire rack.

Bake for 14 to 16 minutes.

Adjust the oven settings to broil. Let it stay for 3 to 5 minutes or until the color is light to golden brown.

Remove from the oven and transfer to a serving plate.

Air Fryer Chicken Nuggets

Medium Eggs

tsp Smoked Paprika

Gluten Free Breadcrumbs

Medium Chicken Breasts

Salt

tsp Garlic Powder

Pepper

tbsp Olive Oil

Cut the chicken into chunks (around 1-1.5&quot; pieces), removing any excess fat and set aside

Add the smoked paprika, breadcrumbs, salt, garlic powder and pepper into a shallow dish and mix together so the spices are evenly distributed throughout the breadcrumbs then set aside

Whisk together the eggs in a mixing bowl

Take one piece of chicken at a time, dip into the egg binder then immediately place into the breadcrumb mix and coat fully

Repeat this until all chicken pieces are fully coated in breadcrumbs

Place the chicken nuggets in the air fryer drawer on a single layer, making sure there are no overlapping pieces (you may need to do several batches)

Brush or spray the olive oil over the nuggets so they are evenly coated

Cook in the air fryer for 4 minutes at 200°C

Remove the air fryer drawer and use tongs to flip the chicken nuggets over

Spray or brush more oil on the nuggets if required

Cook for a further 4 minutes at 200°C until golden and crispy

Once baked, remove from the air fryer, serve and enjoy!
