Pesto Pasta recipe

Cook pasta al dente according to package directions; drain.

In a large skillet, saute garlic in hot oil until tender.

Add in chicken and red pepper flakes. Cook until cooked through and golden brown. Place on a paper towel to soak up any grease.

Pour chicken and cooked pasts back into the large skillet. Add sun-dried tomatoes, parmesan cheese, pesto, heavy whipping cream, garlic salt and pepper (to taste). And cook until heated through.

Serve warm and sprinkle with more Parmesan cheese if desired.

Preheat

Preheat the oven to 375 degrees F. Lightly coat a 9x13-inch baking dish with nonstick spray.

Heat

In a large skillet, heat the olive oil over medium high. Once the oil is hot and shimmering, add the diced chicken. Sprinkle with salt and pepper. Sauté the chicken until golden on all sides and fully cooked through, about 4 minutes. Remove to a plate and set aside.

Cook

In a large stockpot of boiling, generously salted water, cook the pasta to al dente according to package instructions. Reserve 1 cup of the pasta cooking liquid, then drain. Return pasta to the stockpot.

Whisk

While the pasta cooks, in a small bowl, whisk together the pesto and Greek yogurt until evenly combined.

Stir

Stir in the spinach, breaking it up as needed and stirring until evenly combined.

To the stockpot with the pasta, add the pesto/Greek yogurt mixture. Gently stir to coat the noodles in the pesto mixture. If the sauce is too thick, splash in some of the pasta water. It should be a little saucy.

Toss

Add the cooked chicken, cherry tomatoes, and red pepper flakes. Gently toss to combine.

Layer

Pour half of the pasta into the prepared baking dish. Sprinkle evenly with 1/2 cup mozzarella and half of the basil. Layer the remaining half of the pasta over the top, spreading it into an even layer. Sprinkle with the remaining 1/2 cup mozzarella.

Bake

Bake for 20-25 minutes until the cheese is melted and just barely starts to turn golden. Remove and sprinkle immediately with the Parmesan cheese and fresh basil. Serve warm.

Cook the pasta according to it’s package directions. Before draining the pasta, reserve 1/4 cup of the starchy cooking liquid.

As the pasta cooks, heat the oil in a large skillet over medium-high heat for 2 minutes. Add the chicken, Italian seasoning, salt, and pepper. Stir well to coat the chicken. Cook for 6-8 minutes, until the chicken is cooked through, stirring occasionally. Remove the skillet from the heat.

Add the cooked and drained pasta and the pesto to the skillet with the chicken. Stir well.

To loosen up the sauce, add some of the reserved starchy cooking liquid, if needed.

Chicken Pesto Pasta Recipe

This delicious Creamy Chicken Pesto Pasta is a great choice for a simple weeknight dinner.  The recipe uses basic everyday ingredients and is perfect for family meals.  You can use store-bought basil pesto or make your own.

oz cherry tomatoes ((sliced in half))

chicken breast ((2 skinless, boneless chicken breasts))

Preheat oven to 400 F. Toss cherry tomatoes, sliced in half, with 2 tablespoons of olive oil and minced garlic.  Spread in a casserole dish.  Roast for about 20 minutes while you prepare the pasta.

Prepare the chicken.  This recipe uses 1.5 lb of chicken breasts which usually means 2 large chicken breasts.  Make sure to use thinly sliced chicken breasts.  Slice each chicken breast in half horizontally.  Season them with salt, pepper, and paprika.

Heat 2 tablespoons of olive oil on medium-high heat in a large skillet until hot.  Add chicken and cook for about 5 minutes per each side until it&#39;s cooked through. Remove chicken to a plate. Slice it thinly.

Bring a pot of water to boil.  Cook pasta according to package instructions. Drain.

Add cooked and drained pasta, basil pesto, and cream to the same skillet that you used to sear chicken.  Stir gently and bring to simmer to coat pasta with sauce.

Top with sliced cooked chicken, roasted tomatoes and pine nuts (optional).  Season with extra salt and pepper or add crushed red pepper flakes, if desired.

Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions. Reserve 1/2 cup cooking water, then drain.

While the pasta is cooking, season the chicken with salt, pepper and Italian seasoning. Add the flour and toss to coat.

Heat the oil in a large skillet over medium-high heat. Add the chicken and cook, stirring occasionally, for about 5-7 minutes or until browned, Add extra oil, if needed. Remove from the skillet and reserve.

To the same skillet, add the butter and saute the onions for about 3 - 4 minutes or until they become translucent. Add the garlic and cook for a minute.

Deglaze the skillet by adding the chicken broth. Scrape the bottom of the pan to remove the brown bits. Bring to a boil. Stir in the pesto and lower the heat. Add the half and half and garlic powder. Simmer for about 2-3 minutes.

Return the chicken and any collected juices to the skillet and toss to coat. Simmer for 3-4 minutes. Stir in the Parmesan cheese and mix well.

Add the cooked pasta and toss gently. Add some of the cooking water only if a creamier consistency is desired. Serve warm garnished with chopped basil (optional).

¾ cup (180 milliliters) heavy cream

¼ cup freshly grated parmesan

In a medium-sized saucepan, boil water and salt it. Add your pasta, and cook according to the package instructions until al dente. When the pasta is cooked, reserve 1 cup of the pasta water and drain the pasta.

In a skillet over medium heat, heat olive oil and add chicken. Season with salt, pepper, and italian seasoning. Cook the chicken until browned and cooked through. You can use a kitchen thermometer to be sure that it has an internal temperature of 165°F/74°C.

Deglaze the skillet with a couple tablespoons of water (or pasta water), just to get the fond (brown bits), and scrape off with a wooden spoon. Then melt butter and saute garlic for 30 seconds.

Add cream, whisk, then add parmesan and basil pesto. Whisk and cook the sauce for 30 seconds - 1 minute or until the parmesan cheese has melted and the sauce is warmed up. Avoid overcooking, as that can make the pesto turn yellow. Add pasta water to thin the sauce if needed.

Add the cooked pasta and chicken to the sauce, and gently mix everything together until combined.

I made this for the 4th or 5th time tonight. My 17 year-old son saw what I was making and was seriously ecstatic —lol. My 13 year-old daughter said it is one of her favorite dinners. It is a winner for us and has been added to our dinner rotation. Thanks for the yummy recipe!

This was a very tasty, delicious pasta dish . Easy to make. I used Rao's  basil in  a jar and added a dash of red pepper flakes.

Everyone is always present every time we have chicken pesto pasta. This favorite is very rich and creamy, we always enjoy it! Must-try!
