This delicious chicken casserole recipe makes a great midweek meal and it's also super healthy.

A light and quick spring chicken and vegetable stew that can be whipped up in less than an hour

Easy one-pot chicken casserole

Put the <a href="https://www.bbcgoodfood.com/content/top-five-clever-kettles">kettle</a> on. Fry 8 bone-in chicken thighs in 1 tbsp oil in a <a href="https://www.bbcgoodfood.com/review/test-best-casserole-dishes">casserole dish</a> or wide pan with a lid to quickly brown.

Stir in the whites of 5 spring onions with 2 tbsp plain flour and 2 chicken stock cubes until the flour disappears, then gradually stir in 750ml hot water from the kettle.

Throw in 2 large carrots, in batons and 400g new potatoes, bring to a simmer. Cover and cook for 20 mins.

Take off the lid and simmer for 15 mins more, then throw in 200g peas for another 5 mins.

Season, stir in 1 tbsp grainy mustard, the green spring onion bits, a small handful of fresh soft herbs and some seasoning.

Baked buffalo chicken wings

tbsp cider vinegar

paprika

Worcestershire sauce

tsp celery salt

tbsp pepper sauce (we used Frank's hot sauce)

tbsp honey

½kg chicken wing, halved at the joint

In a large bowl, mix together the garlic, olive oil, cider vinegar, paprika, Worcestershire sauce, celery salt, hot sauce, honey and a couple of cracks of black pepper. Add the chicken wings and toss around to make sure they’re fully covered in the marinade. If you have time, leave the wings to marinate for a couple of hrs in the fridge or ideally overnight.

Heat oven to 180C/160C fan/gas 4. Drain and reserve the marinade, then spread the wings out on a very large baking tray. Bake for 30 mins, then pour off the excess oil, add the reserved marinade and toss well. Increase oven to 200C/180C fan/ gas 6. Return to the oven and cook for a further 30 mins, tossing a few times to coat in the glaze as they cook. They should be sticky and glazed with most of the marinade evaporated. Serve on a large platter alongside other party snacks.

In a large bowl, mix the mayonnaise, lemon juice, Worcestershire sauce, grated parmesan and garlic, then season. When ready to eat, add the chicken slices, croutons and lettuce. Mix well and sprinkle with extra parmesan, if you like.

Prepare Ingredients

Prepare all of your ingredients. Cut chicken into small pieces and all of the vegetables into slices. Clean and cut broccoli into small florets and the rest of the stem into small cubes. 

Chicken and onion

Heat your skillet and add sesame oil. Once that is heated, add onion and garlic and caramelize both.  Add the chicken pieces into the pan and stir all together. Cook the chicken on a medium-high for about 10 minutes, depending on the size while mixing regularly. 

Spices and sauces

Once your chicken is cooked halfway, season it with salt and pepper. Add soy sauce, broth, and xanthan gum. Mix and cook for another 5 minutes or until the chicken is golden brown. 

Vegetables and Toppings

When your chicken is fully cooked, we add all the fresh veggies. First goes all of the colorful peppers which we mix. Followed comes broccoli. Combine stir fry together and let veggies soften slightly.  As last, add chopped green onions and sesame seeds.

Prepare all ingredients you will need for easier assembly.

Prepare the Chicken Breasts

Using a sharp knife, make 4-5 cutting slits into the chicken without cutting to the bottom of the chicken pieces.

Salt, Pepper, and Bake

As the last step, sprinkle salt and pepper. Place chicken in the oven and bake for approximately 25 minutes or until the chicken is cooked and reaches an internal temperature of 165 degrees f.

Heat oven to 200C/180C fan/gas 6. Place the chicken, onions, potatoes and peppers in a large bowl and season. in another bowl, mix together the garlic, spices, oil, and lemon zest and juice. Pour this over everything and spread the mixture between 2 baking trays.

In a large skillet, heat a small amount of oil over medium-high heat and brown the chicken pieces on all sides. This step is optional but adds depth of flavor.

Arrange the browned chicken pieces in a single layer in a glass baking dish.

Evenly sprinkle the French onion soup mix over the chicken.

Layer the sliced onion and tomato over the chicken and soup mix.

Pour the entire 2-liter bottle of Coca-Cola over the ingredients in the baking dish.

Cover the baking dish tightly with foil or a lid.
