Grilled Chicken Satay with Spicy Peanut Sauce

coconut milk

Asian fish sauce

red curry paste

brown sugar

-1/4 pounds thin sliced boneless (skinless chicken cutlets)

Bamboo skewers (soaked in cold water)

lime wedges (for garnish)

tbsp chopped cilantro (for garnish)

peanuts (for garnish (optional))

chicken broth

peanut butter

soy sauce (Tamari for gluten-free)

tsp honey

tsp Sriracha chili sauce

tsp ginger

garlic (minced)

In a bowl, mix the marinade ingredients except the chicken. Slice the chicken into long, thin strips, about 3 inches long by 1 inch wide, and add to marinade. Turn chicken to coat, cover and refrigerate at least 4 hours or longer.

Meanwhile, prepare the peanut sauce. Combine all the ingredients in a small saucepan and whisk well. Bring to a boil, reduce heat and cook until smooth, stirring constantly, about 5 minutes. Set aside to cool to room temperature.

Prepare grill to high heat and thread marinated chicken onto soaked bamboo skewers. Place on grill and cook 2 to 3 minutes per side, or until cooked through. Serve with lime wedges and peanut sauce and garnish with cilantro and peanuts.

Marinate

In a large mixing bowl, whisk together all of the marinade ingredients, except for the chicken: soy sauce, fish sauce, lime juice, honey, Sriracha, ginger, and garlic. Add the chicken, toss to coat, then cover and place in the refrigerator to marinate for 2 hours or overnight. Let stand at room temperature for 30 minutes before grilling. If using wooden skewers, soak the skewers in water for 30 minutes prior to grilling.

Simmer

Meanwhile, prepare the peanut sauce: In a medium saucepan, combine the chicken broth, peanut butter, honey, soy sauce, fish sauce, Sriracha, ginger, and garlic. Bring to a simmer over medium heat, then let cook, stirring often, until the sauce is smooth and has thickened, about 6 minutes. Stir in the lime juice and set aside.

Grill

When ready to cook, preheat an outdoor grill or indoor grill pan to medium-high. Then thread the chicken onto skewers.

Serve

Grill chicken until cooked through, about 2-3 minutes per side. Let rest for 2-3 minutes. Sprinkle with peanuts and cilantro, then serve warm with peanut sauce and lime wedges.

Cut the chicken thighs into pieces and set them aside.

In a medium-sized bowl whisk together the coconut milk, soy sauce, sugar, ginger, garlic, turmeric, curry powder, juice of one lime, and salt and pepper.  Stir in the peanuts.

Add the chicken pieces and marinate for 3 hours or overnight.

Thread the chicken onto the skewers and grill 8-10 minutes turning once until the chicken reaches 165 degrees and is no longer pink. Garnish with chopped cilantro and peanuts if desired.

Serve with peanut sauce.

In a small bowl combine coconut milk, garlic, turmeric, cilantro, brown sugar, fish sauce and salt.Arrange the chicken in a single layer in a baking dish or rimmed baking sheet and pour the marinade over the top

Cover and allow to marinate for 2 hours or overnight

Alternatively, place the chicken and marinate in a ziplock back and seal tight, removing excess air.While the chicken is marinating, prepare the peanut sauce

In a small sauce pan, add all the ingredients

Whisking to combine, bring the sauce to a low simmer.Cook sauce for 5 minutes, stirring continually to make sure that the sauce doesn't burn on the bottom of the pan

Remove from heat and allow to sit for 10 minutes before serving

If it gets too thick, just warm up over the stove with a few drops of water.Preheat grill on medium heat for 10 minutes

Using bamboo or metal skewers, weave through the meat lengthwise

Place chicken on the prepared grill and allow to cook without moving for 3-5 minutes

Turn the meat and grill just until chicken is cooked through, about 2 more minutes.Remove from grill and garnish with cilantro and fresh peanuts

Serve with peanut sauce and cucumber salad

This chicken is delicious!  My husband and teenagers loved it, and the sauce!  I didn’t have the skewers, or time, so just grilled the tenderloins, and served with the peanut sauce and the cucumber salad recommended.  Perfect flavor combination.  I used regular peanut butter, so used about a third of the sugar.  Does make a lot of sauce so I think I could have halved the whole recipe for that.

This was easy and delicious, liked by kids and adults alike.

I've made this recipe (both the chicken and the peanut sauce) dozens of times over the past few years- it's always a hit with guests and it's become a regular for our family also.

This tastes like I'm eating at my favorite Thai restaurant! It's so much better than other peanut sauces I've tried at home. LOVED IT!
