Weeknight Chicken Sausage Stew

- 1 teaspoon crushed red chili

rosemary

marinara

baby spinach or kale greens

Pecorino Romano cheese

Heat 1 tablespoon of the oil in a small skillet over medium-high heat. Add the breadcrumbs and cook 2 - 3 minutes, stirring frequently, until the crumbs are crisp and golden brown. Set aside

Put the remaining 3 tablespoons olive oil in a large skillet (12-inches) that has a lid. Place over medium heat and add the onion. Cook until the onion is softened and translucent, 3-5 minutes.

Turn up the heat to medium-high and add the sausage. Cook the sausage until it begins to brown, stirring it around the pan so it doesn't stick.

Stir in the garlic, rosemary, chili and salt to taste. Cook about 30 seconds, until fragrant. Add the beans, stock and Roasted Garlic Sauce and bring to a simmer.

Lower the heat, cover the pan and cook 10 minutes. Uncover the pan and simmer 5 more minutes to thicken the sauce. Remove from the heat and stir in the spinach.

Sprinkle the bread crumbs and cheese over the top and serve.

Al Fresco Roasted Garlic Chicken Sausages

sweet bell peppers (, chopped (2-3 peppers))

zucchini summer squash

garlic (, minced)

Italian seasoning

mushrooms (, sliced)

rice

fire roasted diced tomatoes ((14-15 ounce can))

chicken broth

cheddar cheese (, divided)

Pour oil in skillet over medium high heat. Once hot add the sliced sausages and peppers. Cook while stirring for three minutes.

Add the zucchini slices along with the minced garlic and Italian seasoning. Cook for three minutes while stirring regularly.

Mix in the mushrooms, until fully coated.

Add the rice, canned tomatoes and broth. Stir well and reduce heat to medium as soon as it starts to bubble. Cover and cook for five minutes.

Remove the cover and stir in about a coup of the cheese, then sprinkle the rest on top. Cook uncovered for approximately 4 minutes, until the liquid is absorbed and cheese is all melted.

Remove from burner. Allow to cool slightly and serve.

Chicken Sausage Skillet

This Chicken Sausage White Bean Skillet is a quick &amp; easy one-skillet meal that’s filling, budget-friendly and delicious!

Chicken Sausage White Bean Skillet

fully-cooked chicken sausage links (about 12 oz.) (4.99)

Tbsp cooking oil, divided (0.08)

yellow onion, diced (0.42)

garlic, minced (0.16)

cannellini

salt (0.02)

tsp dried oregano (0.05)

tsp smoked paprika (0.02)

tsp black pepper (0.02)

chicken broth (0.17)

spinach, roughly chopped (0.76)

Slice the chicken sausage into round medallions about ¼ - ½ inch thick.

Heat a large skillet over medium heat and add 1 Tbsp of oil. Add the sliced chicken sausage to the skillet and brown on both sides. It will only take about 1-2 minutes on each side. So be careful not to burn the sausage. Once the chicken sausage is browned, remove it from the skillet onto a separate plate and set aside.

In the same skillet, add the remaining 1 Tbsp of oil along with the diced onion and minced garlic. Sauté for about 3 minutes or until the onion is translucent and the garlic is fragrant.

Add the drained canned beans to the skillet (do not rinse the beans, the residual starchy liquid helps create the sauce), along with the salt, dried oregano, smoked paprika, and cracked black pepper. Then pour in the chicken broth.

Gently stir everything together and bring the skillet up to a simmer. Simmer for 4-5 minutes.

Add the chopped spinach to the skillet, allowing the heat to wilt the spinach, then add the browned chicken sausage. Gently stir with the beans to combine.

Serve hot with crusty bread and some freshly cracked black pepper or red pepper flakes on top. Enjoy!

This was an amazing dinner!! I also added sun dried tomatoes, yummy! And garlic bread to sop up the little soup that was also a great part of this! I will be making this again and again!

This one is a keeper - quick, easy, and flavorful. It's perfect over rice. I had an opened jar of sundried tomatoes that needed to be used up, so I threw those in with the spinach - yum!

This was a delicious easy recipe for meal prep! I added in some zucchini to increase the veggie content and bulk it out a little bit and that worked well.

It had enough flavor that I didn't need to add any extra sauces or toppings.

Yum! I used Italian chicken sausage and ended up using chickpeas instead of white beans because it turns out the can of beans in my pantry that I thought was white beans was actually chickpeas…whoops. Still turned out delicious!

Healthy Creamy Chicken Sausage Skillet

carrot (finely diced)

shallots (sliced)

asparagus

all purpose flour

Dijon mustard

chicken stock ((240 milliliters))

peas

cannellini beans

heavy cream/double cream ((60 milliliters))

salt and pepper (to taste)

parsley (to garnish)

In a cast iron skillet or frying pan, fry chicken sausage chunks on all sides according to package instructions and until cooked through. Remove to a plate.

Saute

Add the oil to the pan and add the finely diced carrots along with a pinch of salt. Cook for 2-3 minutes until beginning to soften. Add the shallots and cook for another 2 minutes. Next add the asparagus and garlic and cook for another minute or two.

Stir

Add the flour and stir well. Cook for a minute before adding the mustard and the chicken stock. Stir well and bring to a simmer.

Serve

Add the cannellini beans, peas and double cream and stir well. Return the cooked sausages to the pan and simmer for 5-10 minutes until the veggies are tender and the sauce has thickened. Season to taste with salt and pepper and serve garnished with chopped fresh parsley.

Not nearly enough sauce for the dish, especially if you want to use some bread or rice. I recommend an additional cup of chicken broth and whipping cream and Dijon mustard Etc

Great recipe, but what really struck me was how helpful it is that you restate the ingredients along with amounts at each step in the directions. I use online recipes almost exclusively, and have not seen this before. Thank you.

An absolute winner! You can change up the asparagus for tenderstem broccoli or add roasted red peppers...vegetable options ate endless. Sauce is pure creamy goodness. I've never served this to anyone who didn't love it. A☆

I have made this recipe at least a dozen times and it always comes out so good! Tonight I used 4 cloves garlic, red onion, oyster mushrooms, zucchini, carrots, and celery for the veggies, chickpeas for the beans, and garlic chicken sausage from Trader Joe’s. Thank you for this recipe, it never fails!

Made this last night and it was delish! I cooked dry cannellini beans the night before and imagine any firm bean would be good. Aidell's chicken sausage. Wouldn't change a thing. Definitely will make again and share with my daughter-in-law.

This was delicious! I used this chicken jalapeno sausage and instead of asparagus and peas I used zucchini and broccoli. This dish is versatile and you can use whatever veggies you have on hand. Came out tasty!
