A little sweet, a little spicy, a whole lot of yummy in this Thai chicken dish. Make an easy glaze for the chicken, a quick pickle mix for veggies, and have it all cooked and ready to devour in under 45 minutes! 

Sweet and Spicy Thai Chicken

chicken tenderloins, breasts, or thighs (see note)

sweet chili sauce (see note)

soy sauce

brown sugar

sriracha

garlic

rice vinegar

fish sauce

lemongrass paste (see note)

lime juice (about 1 lime)

sesame oil (or toasted sesame oil)

salt

sugar

red pepper flakes

carrots

cucumber

Combine all ingredients in a jar. Cover tightly, shake vigorously. Chill at least 1 hour or up to overnight.

For the pickled veggies

Whisk together all glaze ingredients in a medium bowl. Reserve half of the glaze and set aside.

Add remaining half of the glaze to a medium sauce pan, bring to a boil and cook for five minutes.

Remove from heat and allow to cool and thicken while you cook the chicken.

For the glaze

Combine chicken and reserved glaze in a skillet over medium heat. Cook 5-8 minutes (depending on the thickness of the chicken pieces).

Turn, cook another 5-8 minutes until cooked through. Remove from heat.

Top with thickened glaze and serve with cooked white rice and pickled veggies. Enjoy!

Stovetop method

Combine chicken and reserved glaze. Cover and chill for 30 minutes.

Preheat grill to medium-low and oil the grates. Use tongs to transfer chicken to the grill (discard excess glaze marinade) and grill for 5-8 minutes on each side, depending on the thickness of the chicken.

Easy Baked Chicken Kabobs

chicken

red onion and bell pepper (or any vegetables of choice, optional)

garlic turmeric rice (naan

fresh parsley, lemon, and/or yogurt sauce (to serve, optional)

plain yogurt (2%

garlic (minced)

olive oil

lemon juice

tomato paste

paprika

oregano

tsp cumin

salt (or

tsp black pepper

Combine all marinade ingredients in a large bowl. Add chicken, red onion, and bell peppers, and toss until well coated. Cover and refrigerate for at least 8 hours, or overnight.

Preheat the oven to 450°F (or 230°C). Prepare a baking sheet by lining it with aluminum foil or any broiler-safe material (for grilling instructions, please see the notes below).

Thread the chicken and vegetables onto skewers, and bake for about 20-25 minutes until cooked through and golden brown, flipping the skewers halfway through.

Switch the oven to broil for about 2-3 minutes for a lightly charred finish. Garnish and serve with a side of rice, naan, and/or salad. Enjoy!

Chicken Souvlaki

Chicken Thigh Fillets

Greek Yoghurt

Tsp Dried Oregano

Tsp Dried Mint

½ Tsp Dried Chilli Flakes

Cloves of Garlic

Lemon

Cucumber

Fresh Mint

Salt

Large Tomatoes

Red Onion

Kalamata Olives

Parsley

Flatbreads

Soak your wooden skewers in a bowl. Set aside until later.

Chop your chicken thigh fillets into large chunks.

Tip the chicken chunks into a large bowl along with your greek yoghurt, dried oregano, dried mint, chilli flakes and a big pinch of salt. Grate in your garlic and the zest from your lemon. Give it all a good mix and leave to marinate for at least 1 hour, preferably overnight.

Make your tzatziki. Grate your cucumber and pop it in a sieve set over a bowl. Add the salt and give it a good mix. Leave it to drain for 30 mins - lots of water should come out of it.

Whilst your cucumber drains, prep your veg. Quarter, core and dice your tomatoes. Peel and finely dice your red onion. Roughly chop your kalamata olives. Roughly chop your parsley. Place all the veg in a bowl and add your lemon juice and a pinch of salt. Mix to combine.

Back to your tzatziki. Squeeze your cucumbers to remove any excess liquid, then pop in a clean bowl. Add your chopped mint, yoghurt, and the juice of your lemon. Season to taste with salt, then set aside.

Skewer your chicken onto the wooden skewers. Place them on a baking tray under the grill and cook for 15 mins, turning occasionally so they cook evenly.

Assembly time. Spread some tzatziki on your flatbreads, then push your chicken off the skewers onto the tzatziki. Top with some tomato mixture and serve.
