Greek Chicken Souvlaki Recipe with Tzatziki

garlic cloves,

oregano

lb organic boneless skinless chicken breast, fat removed, cut into 1 1/2 inch pieces

Greek pita bread

Tzatziki Sauce (make according to this recipe)

Sliced tomato, cucumber, onions, and Kalamata olives

Prepare the marinade. In the bowl of a small food processor, add garlic, oregano, rosemary, paprika, salt, pepper, olive oil, white wine, and lemon juice (do NOT add the dried bay leaves yet). Pulse until well combined.

Place chicken in a large bowl and add bay leaves. Top with marinade. Toss to combine, making sure chicken is well-coated with marinade. cover tightly and refrigerate for 2 hours or overnight (see note for quicker marinating option.)

Soak 10 to 12 wooden skewers in water for 30 to 45 minutes or so. Prepare Tzatziki sauce and other fixings, and if you're adding Greek salad or other sides, prepare those as well. (some sides like roasted garlic hummus may take longer, you can prepare those in advance).

When ready, thread marinated chicken pieces through the prepared skewers.

Prepare outdoor grill (or griddle). Brush grates with a little oil and heat over medium-high heat. t. Place chicken skewers on grill (or cook in batches on griddle) until well browned and internal temperature registers 155° on instant read thermometer. Be sure to turn skewers evenly to cook on all sides, about 5 minutes total. (Adjust temperature of grill if necessary). While grilling, brush lightly with the marinade (then discard any left marinade).

Transfer chicken to serving platter and let rest for 3 minutes. Meanwhile, briefly grill pitas and keep warm.

Assemble grilled chicken souvlaki pitas. First, spread Tzatziki sauce on pita, add chicken pieces (take them off skewers first, of course) then add veggies and olives.

Optional: if you want more items to add to your buffet, consider Greek salad, watermelon salad, roasted garlic hummus, or a big Mezze platter.

This recipe was easy and delicious, and reminded me of having Souvlaki in Greece! The garlic is powerful but not overwhelming, and the lemon, olive oil and herbs add just the right amount of flavour. Super tender and delicious- I have this bookmarked now and it will be my go to for grilled chicken  skewers!

Absolutely fantastic!  I have baked in the oven in the winter and BBQ'd in the summer and both are delicious.  BBQ is best.  My entire family LOVED this recipe.

So I am one of those people who always changes a recipe! This one is so perfect and so is the tzatziki! Wow!!!!!

This recipe is amazing.  I make it every week.  I also sometimes pre-marinade the chicken a few days, then toss in freezer, then bring camping or on trips.  Its so good.  I tend to go heavier on the spices and at this point I don't even measure.  It turns out great every time.  It tastes best cooked on an open fire or grill so it gets the crunchy bits.  I usually serve with the tzatziki sauce and then a dice red onion, a cucumber and tomato with olive oil and lemon juice to go with. I've also made this with pork tenderloin because it was all I had and that turned out great too.  You will want to double the recipes so you have leftovers! Thank you for all your great recipes. Chicken Souvlaki 

1.5 lbs Chicken, 3-4 boneless breast or 12-14 chicken tenders

tbsp Oregano, fresh leaves,

tbsp Garlic, about 4-5 garlic cloves, fresh minced

tbsp Olive Oil

Cup Lemon, juice,

tsp Cumin Powder

tbsp Parsley, fresh leaves, chopped

tsp Chili Flakes

Salt

Black Pepper, freshly cracked

Oil Spray

Pita Bread

Prepare Souvlaki Marinade

To make the Souvlaki Marinate, in a wide bowl (with a lid) or in seal-able bag, add all ingredients except chicken in the ingredient list above. Mix well and set aside.

Marinate Chicken

Slice chicken breast into small 1-2 inch pieces. Add to the marinade and coat into the marinade. Cover with lid (or close the bag), refrigerate until ready to use. Marinating for 20-30 minutes tenderize the meat and makes it very flavorful. You can marinate it up-to overnight.

Make Chicken Skewers and Grill

For grilling, preheat grill. Skew pieces of marinated chicken souvlaki into the skewers. I **skewed about 4-5 long tenders per skewer. Grill on preheated grill until chicken is fully cooked from all sides. 

Grill Pita and Serve Chicken Souvlaki

If serving grilled pita on side, spray oil on grill pita bread until nice grill marks appear on both sides (30 sec to 1 minute each side). Serve on side with Chicken Souvlaki! Serve and enjoy!

Greek Chicken Souvlaki recipe (Skewers) with Tzatziki

chicken breasts (approx. 1 kg/35 ounces)

salt and pepper

cucumber

garlic, minced

extra virgin olive oil

yogurt (18 ounces)

red wine vinegar

pita breads

tomato sliced

onion

potatoes (optional)

romaine (cos) lettuce (optional)

8-9 wooden skewers

To prepare this chicken souvlaki recipe, start by preparing the marinade. Cut the chicken breasts into 2-3 cm pieces and place them in a large bowl, along with all the marinade ingredients. Use your hands to mix really well, cover with plastic wrap and put in the fridge for 30-60 minutes.

In the meantime prepare the tzatziki sauce for the chicken souvlaki. Pour in a blender the olive oil and grated garlic and blend until combined. Remove the skin and the seeds of the cucumber and grate it into a large bowl. Season with salt and pepper and leave aside for 10 minutes. Wrap the grated cucumber in a towel and squeeze, in order to get rid of the excess water. In a bowl, add the cucumber, the blended garlic and oil, the yogurt, 1-2 tbsps of red wine vinegar, a pinch of salt and blend, until the ingredients are combined. Store the tzatziki sauce in the fridge and always serve cold.

To assemble the chicken souvlaki (skewers), cut the wooden skewers to fit your griddle pan and soak them in water. (This will prevent them from burning.) Thread the chicken pieces, comfortably, on the skewers.

Preheat a grill or griddle pan on a high heat. Cook the chicken souvlaki (skewers) for about 8 to 10 minutes, turning occasionally, until nicely coloured on all sides and cooked through.

While your chicken souvlaki is cooking, prepare the pita breads. Preheat the oven to 250C. Use a cooking brush to oil the pita breads on both sides and season with salt and oregano. Place a large oven tray (upside down) at the bottom of the oven and place the pita breads on top of the tray. Bake for 2 minutes. (Alternatively you can use a griddle pan or a grill.)

To serve the chicken souvlaki (skewers), slice 2 red onions and place on a platter; top with the chicken souvlaki (skewers), drizzle with some extra virgin olive oil and a good squeeze of lemon juice. Serve while still warm with some pita breads and tzatziki sauce. You can also serve the chicken souvlaki (skewers) wrapped, like a sandwich. Spread some tzatziki sauce on the pita breads and top it with the chicken souvlaki (skewers), sliced onions, tomatoes and fried potatoes and wrap. Enjoy!

Chicken Souvlaki (skewers) Recipe - How to make traditional Greek Chicken Souvlaki with Pita bread

This Chicken Souvlaki is grilled to perfection and marinated in a deliciously bright marinade with citrus, red wine vinegar, and fresh parsley. Tender and filled with flavor, this chicken souvlaki can be served with pita bread, fresh cucumbers and tomatoes, and Greek yogurt sauce.

Easy Greek Souvlaki

1½ lb chicken breast (, boneless and skinless -

lemon juice

lemon zest

honey

oregano (dried)

salt (Kosher)

black pepper (ground)

garlic

parsley

½ cup plain Greek yogurt

lemon juice (or

cucumber (squeezed)

dill (minced)

Kosher salt (to taste)

pepper (to taste)

cherry tomatoes (quartered)

kalamata olives (pitted)

In a mixing bowl whisk the lemon juice, zest, oil, honey, vinegar and seasonings. Stir in the chicken pieces and mix to coat. Allow the chicken to marinate for at least 15 minutes or more if refrigerated.

Meanwhile, in a small bowl combine all yogurt sauce ingredients and refrigerate until ready to use.

Thread the marinated chicken pieces onto 6-8 skewers.

Preheat a grill pan or an outdoor grill to medium heat.

Add chicken skewers and cook, flipping them several times, for around 10-12 minutes in total.

Serve the chicken skewers with the yogurt sauce and freshly chopped veggies like cucumber, tomatoes and pitted kalamata olives.

I'm making this again. I marinated this overnight and it was the best chicken souvlaki, I ever tasted. This will be perfect out at my camper over the BBQ on Naan bread.

Greek Yoghurt

Tsp Dried Oregano

Tsp Dried Mint

½ Tsp Dried Chilli Flakes

Cloves of Garlic

Lemon

Cucumber

Fresh Mint

Large Tomatoes

Red Onion

Kalamata Olives

Parsley

Flatbreads

Soak your wooden skewers in a bowl. Set aside until later.

Chop your chicken thigh fillets into large chunks.

Tip the chicken chunks into a large bowl along with your greek yoghurt, dried oregano, dried mint, chilli flakes and a big pinch of salt. Grate in your garlic and the zest from your lemon. Give it all a good mix and leave to marinate for at least 1 hour, preferably overnight.

Make your tzatziki. Grate your cucumber and pop it in a sieve set over a bowl. Add the salt and give it a good mix. Leave it to drain for 30 mins - lots of water should come out of it.

Whilst your cucumber drains, prep your veg. Quarter, core and dice your tomatoes. Peel and finely dice your red onion. Roughly chop your kalamata olives. Roughly chop your parsley. Place all the veg in a bowl and add your lemon juice and a pinch of salt. Mix to combine.

Back to your tzatziki. Squeeze your cucumbers to remove any excess liquid, then pop in a clean bowl. Add your chopped mint, yoghurt, and the juice of your lemon. Season to taste with salt, then set aside.

Skewer your chicken onto the wooden skewers. Place them on a baking tray under the grill and cook for 15 mins, turning occasionally so they cook evenly.

Assembly time. Spread some tzatziki on your flatbreads, then push your chicken off the skewers onto the tzatziki. Top with some tomato mixture and serve.

Skewered and marinated pieces of chicken cooked over an open flame or grill with the  combination of vibrant and zesty flavors will bring the Greek into your kitchen!

Greek Chicken Souvlaki

garlic (finely minced)

chicken breast

parsley (for garnish)

In a large bowl, mix together marinade then add the chicken pieces. Using your hands or spoon, toss together until incorporated and chicken is fully coated in marinade. Cover and refrigerate for at least 3 hours.

Preheat your outdoor grill to high and in the meantime, if you’re using wooden skewers, soak them in water. If you’re using metal skewers then you can skip this step.

Skewer the chicken pieces onto the skewers, about 5 per skewer. We used 8 inch wooden skewers.

Grill chicken until cooked through (160 °F (71 °C) internal temperature) and outside is nicely charred. Let rest before removing from skewer and plating.

Sprinkle with fresh parsley as garnish.

Serve with rice, tzatziki sauce, pita bread, red onions, etc.

This recipe was absolutely delicious! We made it for dinner last night and had to go back to the store tonight to grab more chicken to make it again tonight. We added it to our recipe book and will probably add it to the rotation on a regular basis. Everyone needs to try this!

This recipe was WOW! For such simple ingredients I wasn’t sure what to expect, but it was so good. I did have to mix up Greek seasoning bc my store didn’t have any but I found a recipe and had all the spices. It took less than 5 min. I marinated my chicken for about 4 hours, then cooked in my air fryer at 375 or 400 (I can’t remember…) for 8 min. I skipped the skewers because I forgot to soak them. 

This was absolutely delish!!! I made a quick chopped Greek salad for the side and this was a fresh, easy, quick dinner that is definitely going into the rotation!
