This homemade dry rub is the perfect blend of sweet, savory, and spicy, made with everyday ingredients.  This rub for chicken leaves a beautifully caramelized crusty and crackly exterior.  It is the perfect rub for grilled chicken or chicken that is smoked, oven-baked, or cooked in the Air Fryer or Instant Pot.  I&#039;ve used it on chicken breasts, chicken wings, chicken quarters, and chicken legs.  But that&#039;s not all; it is so versatile; it can be used as a BBQ rub for pork.

Dry Rub For Smoked Chicken

brown sugar

tbsp Roasted garlic and peppers seasoning

paprika

tsp chili powder

tsp seasoning salt

½ tsp black pepper

Place all the spices in a small bowl or a glass jar with a lid and shake gently to combine.

Sprinkle dry rub on meat liberally with a spoon, or place a couple of teaspoons of rub on a plate and roll the meat in it to coat.  Cover all areas, top, bottom, and sides.  If not grilling or smoking the meat right away, place it in the fridge until you are ready to cook it.

Store in an airtight jar or a Ziploc bag in a cool, dry place.

next time instead of saying 3 breasts, put the pounds, they come in all sizes.... This just leaves room for an under seasoned or over seasoned chicken.... looks good though.... needed more salt.....

Love this rub! It's become a staple in my house. I didn't have smoked paprika so I substituted with 1/4t regular ground paprika &amp; 1/4t ground chipotle. So good!

Guess what just happened? I'll tell ya what just happened! I made this chicken and it is wonderful! This morning I cut up the chicken breast into small chunks and sprinkle the  rub all over it and put it in the fridge until I got home this evening and cooked it. Added a little canola oil to a pan. It's raining here in Dallas so I'm not grilling tonight. But tossed it in the skillet to cook and it's holy cow amazing. I'm shredding the left overs for chicken tacos tomorrow night. Thank you!!!!!

This chicken was delish! I didn't mix the ingredients in the bowl, I just sprinkled them on the chicken, and drizzled the oil over the top, and I was all out of coriander, so I just chopped up some fresh cilantro and sprinkled it on top. Will be having again and again. Thanks.

I added some herbs to it, thyme and basil. 1/4tsp hot chilli powder for kick. Ranch sauce on the side. Mixed some in. 9/10 with veggies garlic and onions in a wok.

Outrageously good.  I add a few things like a bit of Chipotle or African Cayenne to give a touch of ''zing''.  I have a dual infra-red and conventional bbq so I zap it about 90 seconds on each side at over 1000 degrees then wrap and seal it in foil on the top shelf, about a 400 deg bbq for 7-12 mins, depending on breast size.   I use my handy=dandy remote reading thermometer and as soon as it hits 160F it's outta there........gains a few more deg to make 165.  It will dry out very quickly if you cook it too long.  When cooked just long enough, it is incredibly flavorful, tender and juicy.   Our favorite way to serve is on a hollowed out Costco Kirkland sandwich roll with a mayo/chipotle power dressing.   It was so good I bought bulk qtys of the ingredients, made a 5 pound batch (thats A LOT of chicken breasts) and gave it to friends as gifts.  They're still thanking me (probably campaigning for more truth be known).  While the ingredients are fairly plebeian, the recipients think its made of cardamom and saffron......  I also added a bit more salt, a finer grain kosher as I like the crusting effect on the high temp bbq.  I can't thank you enough for this recipe, it is now the only way we care to eat chicken, at least grilled.

Nice rub.   The coriander gives it a unique and savory flavor.  Used an indoor grill pan.  Chicken came out moist and delicious!

I tried my hand at making chicken breasts last night - and this recipe was so easy, I had the whole family coming back for more.

This is the easiest baked chicken recipe that is so flavorful and juicy. This homemade spice rub is perfect for oven baked chicken and makes it perfectly spiced. I am sharing my tips for making the best baked chicken.

Juicy Baked Chicken

Chicken Breasts *

Salt

Garlic Powder

Onion Powder

Chili Powder

Paprika *

Tablespoon Brown Sugar

Start by preheating the oven to 425 degrees. Prepare the chicken breast. If you are using thick chicken breasts, either butterfly the chicken by cutting in half lengthwise or use a mallet or rolling pin to pound the chicken into thinner pieces. I prefer to buy the thin sliced chicken breasts.

Make the spice rub. In a bowl, stir together the salt, garlic, powder, onion powder, chili powder, paprika, and brown sugar.

Line a baking sheet with foil or parchment paper. Lightly drizzle the chicken with olive oil. Toss the chicken in the seasoning or press into the chicken, coating both sides of the chicken. Place on the baking sheet.

Bake for 14-18 minutes, depending on the thickness of the chicken breasts. A meat thermometer is so helpful to determine when the chicken is done. The chicken is fully cooked at 165 degrees. You want to ensure that it is fully cooked and no longer pink.

Remove from the oven and let rest for 10 minutes before slicing. This is an important step to allow the juices to seep into the chicken.

OPTIONAL: if you want more of a sear on your chicken, heat a large skillet over medium-high heat. Drizzle with oil. Cook the chicken for 2 minutes per side. Then transfer to the baking sheet to continue to cook in the oven. If you cook the chicken this way, you may lose some of the spices as they will fall into the skillet. You will also need to cook it for less time in the oven since the cooking process was already started.

If you want extra juicy and flavorful chicken, melt 4 Tablespoons of salted butter in a bowl. Stir in 1/4 teaspoon of garlic powder and 1 teaspoon of minced fresh parsley. Drizzle over the chicken when serving.
