Slow Cooker Chicken Tetrazzini

lbs. Foster Farms Simply Raised fresh chicken breast fillets

sea salt

garlic powder

black pepper

tarragon

white onion

mushrooms

chicken broth

pkg. cream cheese, ⅓ less fat or regular

spaghetti noodles

Add the chicken, sea salt, garlic powder, pepper, tarragon, onions and mushrooms. Pour over the chicken broth. DO NOT ADD THE CREAM CHEESE OR SPAGHETTI YET. Cover and cook on LOW for 8 hours, or HIGH for 4 hours without opening the lid during the cooking time.

Cut the cream cheese into squares and add the slow cooker, cover. In the meantime cook the spaghetti according to the package directions.

After the cream cheese has had some time to melt. Take 2 forks and shred the chicken. Stir the sauce and chicken together. Add the cooked and drained pasta. Stir. Add the mozzarella cheese over the pasta and sauce. Cover for about 10 more minutes or until the cheese has melted. Serve and enjoy!

This chicken tetrazzini is comforting and supremely creamy; a cheesy pasta bake loaded with juicy chicken and plump mushrooms.

Chicken Tetrazzini Recipe

oz thin spaghetti or linguine

rotisserie chicken (*or cook 2 lbs chicken breast)

lb button mushrooms (thickly sliced)

onion (finely chopped)

garlic

Tbsp Olive Oil

unsalted butter

all-purpose flour

lemon juice

half and half (or sub with equal parts milk & heavy cream)

tsp sea salt (or

tsp black pepper,

parsley, (chopped,

mozzarella cheese

Preheat Oven to 350˚F. Cook pasta in a large pot of salted water until aldente according to package instructions then rinse to stop the cooking process, drain and set aside.

Cut 4 cups of chicken meat from a rotisserie chicken and shred into bite-sized pieces and set aside.&nbsp;

Place a large dutch oven or pot over medium/high heat. Add 2 Tbsp oil then add sliced mushrooms and sauté 3 min or until softened. Add diced onions and cook until onions are soft and golden, 5-7 min. Add minced garlic and sauté another 1-2 min until fragrant. Remove to the cutting board with chicken.

In the same pot, melt 4 Tbsp butter and whisk in 1/3 cup flour until lightly golden (1 1/2 min). Add 2 1/2 cups chicken broth, 1 Tbsp lemon juice, 1 tsp salt, 1/4 tsp pepper and whisk until smooth. Add 1 1/2 cups half and half and bring to a simmer. Season&nbsp;sauce with more salt and pepper to taste.&nbsp;

Return chicken, mushrooms, onions and pasta to the pot then sprinkle in 1/4 cup chopped fresh parsley and stir to combine. Sprinkle the top generously with shredded mozzarella, cover and bake at 350˚F for 30 min then remove lid and continue baking 15 min.**

Easy Chicken Tetrazzini

can cream of chicken soup

can cream of mushroom soup

sour cream

Preheat oven to 350 degrees F. Coat a 9x13 baking dish with nonstick cooking spray, set aside.

In large bowl whisk together both soups, sour cream, butter, chicken broth, salt, pepper, and garlic powder until combined.

Stir in the peas, chicken, and spaghetti; toss to combine until fully coated.

Pour mixture into the prepared baking dish and sprinkle with the cheeses.

Cover with foil and bake for 30 minutes, then remove foil and continue baking for another 15 minutes until cheese is melted and casserole is hot throughout.

Remove from oven and sprinkle with parsley. Let stand 5-10 minutes.

Serve and enjoy!

Cook the pasta in salted boiling water to al dente then drain, rinse with cold water and set aside.

Add butter to a large pot or Dutch oven over medium-high heat then saute mushrooms until they start to soften and turn golden. add the onion and cook for about 5 minutes  or until translucent while mixing.

Add garlic and cook an additional minute. Once fragrant and softened, remove from heat and transfer the mixture to a bowl. Place back on medium-high heat, add 1/4 cup butter  and whisk in the flour once melted. Cook for about a minute while whisking to make the roux.

Whisk in the chicken stock, season with salt and pepper then whisk in the milk and finally the cream. Once thickened add the mushroom and onion mixture along with the chicken, parsley, and pasta to the cream sauce then fold together so everything is well distributed. As you mix sprinkle in a cup of shredded mozzarella and 1/4 cup of parmesan cheese.

Transfer to 9x13 casserole dish, smooth out and top with remaining mozzarella cheese.

bake at 375F for 30 minutes or until bubbling and golden.

Chicken tetrazzini is a classic, warm and comforting casserole that is perfect for a dinner party or a family meal - Italian casserole with chicken, mushrooms, creamy white wine sauce and parmesan cheese.

pasta

pack sliced crimini (baby portabella) mushrooms

garlic, finely minced

butter

Tablespoons all purpose flour

chicken stock

milk (any type (I used 2%))

dry white wine

parmesan cheese (divided)

chicken thighs

Preheat the oven to 375 degrees.

Add some cooking spray to a large non-stick pan or dutch oven, and preheat over medium heat.

Add onions and sliced mushrooms to the pan, and cook until tender, about 8 minutes.

Reduce heat to medium-low, and add the garlic, and cook another minute.

Add the butter to the pan (leave the mushrooms, garlic and onions in there), and let it melt.

Sprinkle the flour, and stir to incorporate (about 30 seconds).&nbsp;

Add the wine, and deglaze the pan using a wooden spoon to scrape up brown bits and mix in flour.&nbsp;

Add chicken stock, milk salt and pepper, and stir to incorporate.&nbsp;

Bring to a simmer and stir often (almost continuously) to avoid scorching. The sauce will thicken pretty quickly, after a minute or 2.

Turn off the stove, remove from heat, and add the cup of parmesan cheese, stirring to incorporate.

Toss the sauce with the cooked shredded chicken and cooked/ drained linguini pasta.

Transfer the mixture to a casserole dish, sprayed with cooking spray to prevent sticking.

Sprinkle extra 1/2 cup parmesan cheese on top, and bake at 375 until cheese is melted, about 15 to 20 minutes.

Remove from oven, and let sit 5 minutes or so. Serve and enjoy!

chicken broth (more as needed)

salt (to taste)

Prep

 Preheat the oven to 350 degrees. Prepare the ingredients &#8211; pull the chicken, cook the noodles, sauté the mushrooms.

Sauce: 

Melt the butter in a small saucepan over medium heat. Add the flour and whisk until incorporated. Cook for a few minutes to remove the floury taste. Slowly add the milk and broth, a little bit at a time, whisking after each addition until you get a nice, smooth, thickened sauce. Season with salt and stir in the wine. Taste and adjust &#8211; more salt, more wine, more broth to thin the sauce, etc.

Assemble

 Toss the noodles with about a cup of sauce. In a greased 9&#215;13 pan, layer: sauced-up noodles, mushrooms, half of sauce, chicken, remaining half of sauce, and Parmesan.

Bake: 

Bake for 30 minutes until melty and bubbly. Broil for 5 minutes to get the top browned. Season with salt and pepper to taste for serving. YUM-O.

I was literally asking my mom for the chicken Tetrazzini recipe we grew up eating, but she couldn't find it. This is perfect!!

Looks like I'm the only person to actually try this recipe and comment on it. 3 stars. Bechamel sauce is pretty bland, so overall not much flavor. The chicken meat (already overcooked as it came from a supermarket rotisserie) gets even more overcooked with 30 min at 350 and esp 5 more under the broiler.  Enhancement idea - layer the chickey more in the bottom of the pan so it has a chance of staying more moist buried in the sauce.

SpecialK , I was thinking the same thing...The supermarkets now have non-gluten pasta and noodles so it shouldn't be a problem.... Or how about just using cauliflower ....

freshly grated nutmeg (¼ teaspoon ground nutmeg)

Heat oven to 425°F and spray a large casserole dish with nonstick baking spray.

Cook the fettuccini in salted water, to al dente (per package directions), drain and rinse with cold water. Spread the noodles evenly onto a large baking sheet to dry; set aside.

While the fettuccini cooks, heat a large skillet over medium heat and add 2 tablespoons oil and 2 tablespoons butter. When the butter has melted, add mushrooms and onion; season lightly with salt and pepper. Sauté until onions are translucent and mushrooms are fragrant and have softened, about 5-7 minutes. Stir occasionally.

Add garlic, thyme and white wine; stir with a wooden spoon while scraping off any browned bits on the bottom. Cook an additional 2 minutes to reduce the mixture. Transfer the vegetable/wine mixture to a medium bowl; set aside. (Keep the sauté pan out for later use.)

In a medium saucepan, set over medium heat, bring the milk, cream and broth to just below a simmer (when you see steam coming off the top).

In the large sauté pan, melt 3 tablespoons butter over medium heat. While whisking, sprinkle the flour over the butter and continue whisking until the flour and butter incorporate and turn a light golden brown, about 2 minutes.

Continue whisking and slowly add the milk/cream/broth mixture. The mixture should be smooth with no lumps. Add nutmeg, seasoned salt, kosher salt and black pepper. While stirring, bring the mixture just to a boil and immediately reduce the heat to low. Cook, while whisking continuously, another 8-10 minutes, or until the sauce thickens. Remove the sauce from the heat once it thickens.

Add the chicken, mushroom/onion mixture and half of the parsley. Mix well.

Pour the mixture into the sprayed dish and sprinkle evenly with breadcrumbs and Parmesan.

Melt the remaining butter and pour it evenly over the top.

Bake at 425°F, for 30 minutes, or until the top is golden brown and the chicken tetrazzini is bubbly throughout. Remove from oven and let the tetrazzini rest 5-10 minutes before serving.

Garnish with the remaining parsley before serving.
