Season the chicken with turmeric, chili powder, cumin, garam masala, ginger, and white wine vinegar, and mix well.

Heat oil in a pot over a medium heat. Add the chicken and cook until brown.

Add the chili, chopped tomatoes, water, salt, and pepper.

Simmer for 1 hour, until the sauce has thickened.

In a large microwavable bowl, heat the onions, garlic, ginger and oil for 5 -7 minutes until the vegetables are browned on the edges.

Pour veggies into a blender and combine with all other ingredients except turmeric, water and chicken. Blend into a smooth paste.

Place chicken in a bowl, and coat with the spice and vegetable mixture. Stir well to coat the chicken. Wash out the blender bowl with the 1/4 cup water and pour that over the chicken as well. Mix.

Add turmeric now (adding it earlier could stain your blender bowl) and marinate for 30 mins to 8 hours.

Pour the chicken and marinade into your Instant Pot.

Cook on High Pressure for 5 minutes, and allow the pressure to release naturally for 10 minutes. Release remaining pressure.

Depending on your chicken and how much water it releases, you may need to remove the chicken pieces and evaporate some of the water by using the Sauté function to cook the sauce down.

A hot, spicy &amp; flavorful dish made by marinating and simmering chicken in a spice paste. Serve chicken vindaloo with rice or naan.

garlic ((25 grams))

1½ inch ginger ((25 grams))

salt

oil ((I used coconut oil))

onions ((optional) (fine chopped or processed))

tomatoes ((optional) (pureed))

sugar ((notes 3))

Deseed red chilies and soak them in 3 tbsps vinegar and 3 tbsps hot water. Set aside.

Add coriander seeds, cumin, pepper corn, mustard, cinnamon, cloves and cardamoms to a blender jar.

Make a fine powder. Then add ginger garlic and soaked red chilies.

Add the vinegar water mixture and make a smooth paste.

Next add this to the cleaned chicken along with turmeric and salt.

Marinate and rest aside for at least an hour to overnight in refrigerator to absorb the flavors.

Preparation

Heat oil in a deep pot and saute the onions (optional) until golden to light brown.

Add 1 tbsp vinegar &amp; 1 tsp sugar to the onions.

Then add the marinated chicken and saute for 3 to 5 mins on a medium heat.

Pour the tomato puree (optional) and continue to saute for another 3 to 4 mins.

If your chicken lets out lots of moisture, do not add water. Mine did not so I poured half cup hot water. If you prefer a dry curry then skip adding water. The chicken will cook in its own moisture.

Cover and simmer until the chicken cooked through &amp; fork tender.

To check if the meat is done, prick it with a fork. The meat should fall off the bone easily.

Simmer until the gravy reaches a thick &amp; semi dry stage. Taste and add more salt if needed.

Serve chicken vindaloo with plain rice or naan.

There are numerous versions of making vindaloo. The authentic version does not use onions or tomatoes in the recipe. But I have used both here just to neutralize the extremely hot and pungent flavors.

Vindaloo is a Portuguese-influenced Goan dish made by cooking meat with spices and vinegar. Learn to make Goan Chicken Vindaloo in a traditional way using my easy recipe.

Goan Chicken Vindaloo Recipe

red chilies

cinnamon stick

canned tomato puree (or 1/2 cup tomato paste)

turmeric powder

white granulated sugar

Add dry red chilies, coriander seeds, cloves, cinnamon, green cardamoms, peppercorns, cumin seeds, and mustard seeds to a skillet.

Dry roast on medium heat until fragrant and slightly browned (3-4 minutes). Keep stirring continuously while roasting.

Once the spices are roasted, remove the skillet from the heat and let the spices cool down completely.

Add the roasted spices to a high-speed blender along with ginger, garlic, white vinegar, tamarind paste, and ½ cup of water and blend to make a smooth paste. 

Scrape the sides of the blender a few times while making the paste.

Vindaloo masala paste is ready. Set it aside.

Make Vindaloo Paste

Heat oil in a large pot over medium-high heat.

When the oil is hot, add onions and fry till golden brown (10-12 minutes), stirring frequently.

Add chicken pieces to the pot and fry on high heat for 3-4 minutes. Keep stirring frequently while frying.

Add tomato puree (or ½ cup tomato paste) and the vindaloo masala paste that we made earlier to the pot and mix well.

Now add salt, turmeric powder, and 1 cup water to the pot and stir gently.

Reduce the heat to low.

Cover the pot with a lid and cook for 45-50 minutes until the chicken is cooked well and the oil starts to separate on top of the pan.

Add sugar and cook for another minute. Chicken vindaloo is ready to be served.

INGREDIENTS
FOR VINDALOO PASTE
10-12 whole dry Kashmiri red chilies or any other dry chilies. Remove the stalks.
2 tablespoons whole coriander seeds
3-4 cloves
1 inch piece of cinnamon stick
2-3 whole green cardamoms
8-10 whole black peppercorns
1 teaspoon cumin seeds
1 teaspoon mustard seeds
8-10 cloves of garlic peeled
1 inch piece of ginger chopped
1 tablespoon white vinegar
1 and ½ tablespoons tamarind paste
FOR THE CURRY
6 tablespoons vegetable oil
2 cups chopped onions
2 pounds bone-in skinless chicken cut into 1 and ½ inch chunks
1 cup canned tomato puree or ½ cup tomato paste
2 teaspoons salt
1 teaspoon turmeric powder
½ teaspoon white granulated sugar

Chicken Vindaloo Recipe (Goan Style Curry)

Easy weeknight recipe for Chicken Vindaloo, a popular Indian curry made with a unique spice paste containing dried chilies, aromatics, tamarind, and vinegar.

coconut palm sugar (or regular sugar)

Soak dry chilies in ½ cup of hot water for 10-15 minutes. Transfer to a blender with 2 tablespoons of the soaking liquid, ginger, garlic, vinegar, tamarind, dry spices, salt, and sugar. Purée into a smooth paste.

Turn ON Instant pot on sauté mode. Add oil and heat for 30 seconds. Add chopped onions and sauté for 3 minutes, until soft. 

Add the chicken pieces along with spice paste and saute for 2 minutes. Add the remaining ½ cup of soaking liquid (or water), and stir well. Use the liquid to scrape any brown bits stuck at the bottom of the pot. 

Close the lid and set the valve to sealing position. Set Pressure Cook or Manual for 6 minutes at high pressure.  After the time is up, wait 5 minutes then release the pressure manually. Open the lid after the pin drops.

Check for taste and adjust salt if needed. If the curry looks runny, turn on saute and simmer for 2-3 minutes to your desired thickness. When ready, garnish with chopped cilantro and enjoy with rice or naan. 

Instant Pot Recipe

Follow Steps 1 to 3 from the instant pot recipe above.

When the curry starts simmering, cover with a lid.  Reduce the heat to medium and cook for 12-15 minutes, or until the chicken cooks through. Stir 2-3 times in between to prevent the sauce from burning. 

When ready, garnish with chopped cilantro and serve.

Add a splash of oil in a skillet and set to medium-high heat.

Add peppercorns, cumin, mustard seeds, cardamom pods, cinnamon, cloves, coriander, and chilies to the pan. Roast for about 3 minutes or until slightly browned, stirring often.

Remove the skillet from heat and add roasted spices to the blender with tamarind paste, white vinegar, garlic, ginger, and ½ cup of water. Blend until smooth.

Once it’s smooth, your vindaloo masala paste is done.

Vindaloo Masala Paste

Add the vegetable oil to a large pot. Set to medium-high heat.

Once the oil is simmering, add onions. Stir frequently and cook for about 10 minutes or until golden brown.
