chicken

pineapple chunks (canned)

tomato (chopped)

bell pepper

carrot (wedged)

fish sauce (patis)

milk

garlic (minced)

onion (sliced)

cooking oil

Marinate the chicken in pineapple juice/concentrate (derived from the can of pineapple chunks) for 20 to 30 minutes

Pour the cooking oil in a cooking pot / casserole then apply heat

Sauté the garlic, onion, and tomatoes

Put-in the chicken and cook until color of the outer part turns light brown

Add the pineapple juice/concentrate marinade and fresh milk then bring to a boil

Add the pineapple chunks and simmer until the chicken is tender and half of the liquid evaporates (about 20 to 30 minutes).

Put-in the carrots and simmer for 5 minutes

Add the bell pepper and fish sauce then simmer for 3 minutes

Remove from the cooking pot / casserole and transfer to a serving dish.

Serve hot. Share and enjoy!

Easy pineapple chicken stir-fry, ready in just 30-minutes! Lean meat, colorful fruit, and healthy vegetables tossed in a sweet tangy sauce.

Pineapple Chicken

pineapple juice

unsalted chicken broth (stock,

honey (or brown sugar)

hoisin sauce

soy sauce

rice vinegar

cornstarch

½ pounds boneless skinless chicken thighs

sesame oil

salt

black pepper

vegetable oil

red bell pepper (¾" dice)

pineapple

garlic

ginger

onions

sesame seeds

Make the Stir-fry Sauce - In a medium bowl, whisk together the pineapple juice, chicken broth, honey, hoisin sauce, soy sauce, rice vinegar, and cornstarch until no lumps remain. Set aside.

Season the Chicken - In a medium bowl, combine diced chicken, sesame oil, salt, and pepper.

Cook the Chicken - Heat a large wok, nonstick pan, or stainless steel pan over medium-high heat. Add the vegetable oil. Once hot and shimmering, carefully add the chicken in a single layer. Sear without moving until browned, about 1 minute. Stir-fry until no longer pink, about 3 to 4 minutes.

Cook the Vegetables - Add the bell peppers, and stir-fry until crisp-tender, 1 minute. Add the pineapple, and stir-fry until fragrant, 30 seconds. Add the garlic and ginger, and cook until aromatic, 30 seconds.

Thicken the Sauce - Add the stir-fry sauce and bring it to a boil. Stir and cook until the sauce thickens, about 1 minute. Turn off the heat and stir in ¼ cup of green onions.

Plate &amp; Serve - Garnish with the remaining green onions and sesame seeds. Serve with steamed rice, desired side dishes, or in a pineapple boat.

Just made this for the first time. Can’t wait to make it again! I was short on pineapple juice, only had about 1/4 cup. So I added some blood orange soda that I had in fridge. It worked out great!

Hi Jessica, No we didn't serve it in a pineapple although that looks beautiful and is a great idea. Timothy has a cuckoo rice cooker so he made rice and I made the Pineapple Chicken. It was delicious. We both loved the pineapple and pineapple juice. We will definitely be making this again. Thank you so much for the continued gorgeous recipes.
