This vegetarian version of the Mediterranean classic is a real winner with spiced chickpeas, tzatziki, and fresh veggies in a pita.

Chickpea Gyros

chickpeas (drained)

olive oil

paprika

oregano

garlic powder

salt

greek yogurt

cucumber (peeled, grated, and drained)

garlic (small)

dill (minced)

vinegar

grape tomatoes (halved)

cucumber

onion

hummus (optional)

pitas

feta cheese

Make the chickpeas: Drain chickpeas and dry. Heat oil in medium skillet on medium heat until shimmering. Cook chickpeas until slightly brown, then coat with spices. Continue cooking, stirring every 30 seconds until spices are fully mixed and fragrant.

Make the tzatziki: Mix all ingredients in bowl and place to the side or in fridge until ready to serve.

Make the veggies: Mix all ingredients together and place to the side until ready to serve.

Spread hummus in center of pita to hold chickpeas. Top with veggies, tzatziki, and feta.

Simple and quick to make, this vegetarian gyro bowl is made with chickpea bites, sauteed peppers and onions; served with tzatziki and pita.

Vegetarian Gyro Bowl

chickpeas

all-purpose flour

black pepper

water

olive oil (divided)

½ red onion (thinly sliced)

SUNSET® Aloha™ Peppers (thinly sliced)

Pita bread

romaine lettuce

Tzatziki sauce

In a medium bowl, combine the chickpeas, all purpose flour, feta cheese, oregano, garlic powder, salt and pepper. Add two tablespoons of water and use a fork or masher to combine the ingredients until they are well blended.

Scoop 1 tablespoon of the mixture and roll with your hands it into a small ball; makes about 14-15 parts bites.

Heat 1 tablespoon oil in large pan over medium heat. Add chickpea bites and cook until golden brown and fully cooked through, 4-5 minutes per side. Remove and set aside.

In same skillet, increase heat to medium high and add remaining 1 tablespoon oil. Add onions and peppers and cook until softened and charred, 5-7 minutes

Assemble gyro bowls with lettuce and pita on the bottom of two bowls. Divide the chickpea bites, onions and peppers, followed by the tzatziki sauce.

Easy Chickpea Gyro

can of chickpeas, drained and rinsed

cumin

¼ teaspoon of fine sea salt

tzatziki sauce*

cherry tomatoes

red onion

feta cheese (violife makes a delicious vegan version!)

dill

lettuce

Rinse and drain the can of chickpeas and then dry them off thoroughly with a paper towel or lint free towel.

In a large skillet, heat the oil over medium heat. Once hot, add in the chickpeas and cook, stirring often for 10 minutes. Mix in the cumin, paprika, garlic powder, salt, and pepper. Cook for 2 additional minutes. Remove from the heat.*

To make the gyro, smear some tazatziki on a piece of pita and top with the crispy chickpeas and other desired toppings. ENJOY!

I made this recipe for my lunch today.  They were excellent and I will most definitely make this again! The only thing I did differently was I baked them in the oven at 400 degrees for 10 minutes fliping them after 5 minutes.  I used a piece of naan bread for the gyro bread.
