Perfect chickpea pancakes that are tender with crisp edges and full of flavor! Quick and easy to make, incredibly versatile, just 8 ingredients required.

Savory Chickpea Pancakes with Leek and Mushrooms

chickpea flour

sea salt,

mushrooms ((we used shiitake))

garlic,

tsp dried thyme ((or sub twice as much fresh))

In a medium mixing bowl, whisk together the chickpea flour, salt, and warm water until smooth. Ensure that the water is warm as it will help the batter thicken correctly. Set aside for 15 minutes.

Meanwhile, heat olive oil in a large skillet over medium heat. Add the mushrooms, leeks, and a pinch each of salt and pepper. Reduce the heat to low and cook, stirring often, until softened — about 10 minutes.

Add the garlic and thyme and cook for 1-2 more minutes. Turn off the heat and stir in the nutritional yeast. Taste and adjust as needed, adding more salt to taste, black pepper for spice, or nutritional yeast for cheesiness. Set aside.

Heat a non-stick or cast iron skillet over medium heat. Whisk the batter again to combine. It should be fairly loose. Pour 1/2 tsp of olive oil into the pan and rotate the pan to evenly spread the oil (if using a cast iron, we found a very thin coating of oil to work best — in fact, in most cases, a seasoned surface with no additional oil should work well).

Scoop 1/3 cup (80 ml) of the batter into the skillet, quickly pick up and rotate the skillet to spread the batter into a 5-7 inch circle, then turn up the heat to medium-high and cook the pancake, undisturbed, until browned on the bottom and edges, about 2-3 minutes. Use a spatula to peek at the underside of the pancake to make sure it’s browned before flipping — the pancake should lift away from the pan easily; if it sticks, let it cook a bit longer. Once ready, flip and cook for 1 minute on the other side. If you are using cast iron and the batter is sticking, wipe a small amount of olive oil across the entire surface of the pan and try again. Transfer finished pancake to a plate, turn the heat back down to medium, and repeat with the remaining batter.

Top the pancakes with the leek and mushroom filling and garnish with fresh thyme and nutritional yeast or green onion if desired.

Best when fresh. Leftovers will keep stored separately in the refrigerator for up to 2-3 days. Not freezer friendly. Reheat separately on the stovetop until warmed.

COOK: Cook the pancakes on a non-stick skillet over medium heat. I use a 1/3 cup measurer (not completely full) to scoop up the batter and pour it on the skillet. Allow bubbles to form around the edges before flipping. You'll know the pancakes are ready to flip when it's easy to slide a spatula underneath. If it gets stuck, allow the pancakes to cook a little longer. Continue this process until all the batter has been used.

Healthy Chocolate Chickpea Flour Pancakes | VEGAN + GLUTEN FREE!

These delicious&nbsp;Chickpea Pancakes are healthy, tasty and protein-packed with added vegetable goodness.&nbsp;

Chickpea Pancakes Recipe

(120 grams) Chickpea Flour

Water

tbsp Olive Oil (*See Note 1)

Carrot,

Red Capsicum (bell pepper), finely chopped

Spring Onion, finely chopped

tsp Turmeric

tsp Cumin seeds

tbsp Chopped Coriander (cilantro)

In a mixing bowl add the chickpea flour and then slowly add the water, whisking continually, to form a smooth, lump-free batter. Set aside.

In a frying pan, heat 1/2 tbsp of the oil over a medium-high heat. Add the carrot, pepper, onion, turmeric and cumin seeds. Reduce the heat to medium-low and cook until softened (around 4-5 mins)

Add the carrot mixture to the chickpea batter along with the chopped coriander and salt (if using). Stir until fully combined.

Heat a non&nbsp;stick frying pan over a medium-high heat. When hot add a drizzle of the olive oil (or alternatively use a spray oil). Add a tablespoon of the batter to the pan and use the back of your spoon to spread it out a little (to make them thinner) Repeat to fill the pan.&nbsp; (*See Note 3)

Cook for around 2 minutes on each side (this will vary depending on the pan, heat and how thin your pancake is). You want to look for bubbles forming (see above picture) and your pancakes should be able to be flipped easily.&nbsp;

Remove pancakes from the pan and repeat with the remaining mixture.

A savory pancake begging to be eaten with pickles and chutneys or yogurts and cream. East meets West with this beautifully, wonderfully healthy dish.

Chickpea Flour Pancakes

chickpea flour ((or besan/garbanzo flour))

turmeric

½ tsp chili flakes ((I highly recommend this))

Add the flour, water, turmeric, salt, pepper and chili flakes (if using) to a mixing bowl and give it a quick blend using a food processor or blender. Leave it to settle for a few minutes while you heat up the oil or ghee in a non-stick pan. The batter needs to look very runny!

Dice the veggies finely and add them to the mixture.

Use a tissue or similar (a spray oil would work wonders here) to ensure the bottom of the pan is coated well in oil.

Add about a ladle of the mixture and veggies when the pan is hot - a medium heat should be just right.

Cook for about 3 minutes - the mixture will quickly start to firm. If you’re using two pans, you can make two pancakes at the same time.

Make sure you use a large pan (or pans) here, you’re aiming for thin pancakes. They’re MUCH easier to handle!

Use a large spatula to help you flip the pancakes, adding more oil underneath if necessary. After another 2-3 minutes your pancake will be ready!

Keep it somewhere warm while you repeat with the second pancake, adding more oil when necessary.

Done! Add your desired toppings and enjoy. Remember - it’s important to eat these pancakes warm - don’t let them get cold!

Any chutneys (red onion is a favourite of ours) yogurt dip, hummus, avocado, guacamole, Branston Pickle (if you can find it where you are it goes incredibly well!).

This is my Mom’s chilla recipe. It is also known as pudla. The classic Indian pancake made with chick­pea flour is a popular breakfast in North India. These chillas in the simplest form are easy and perfect for breakfast, a snack, or a side flatbread. For a veggie omelet version, add less water for a thicker batter and add leavening such as baking powder and some kala namak for eggy taste. Add finely chopped vegetables such as zucchini. Vegan Chickpea flour Pancakes - Besan Chilla

In a bowl, combine the chickpea flour and 3/4 cup water. Whisk to get a smooth consistency. Whisk in another 1/2 to 3/4 cup water to make a thin lump-free batter. (If using besan, you will need less water to get the same consistency).

Add the salt, turmeric, cayenne, carom seeds, onion, chile, cilantro, and 1 teaspoon of oil, and mix well. Add zucchini if using. Let the batter sit for 5 minutes.

Heat a skillet over medium heat. When the skillet is hot, drizzle a few drops of oil on the skillet. Spread the oil using a paper towel. Pour a ladle full (1/4 to 1/3 cup) of the batter onto the skillet. Spread the batter by moving the skillet to make a 6 to 8-inch pancake. Drizzle a few drops of oil on the edges of the pancake.

Cook until the edges start to leave the pan and the bottom is golden brown, 4 to 6 minutes. Flip and cook for 2 to 4 minutes. Continue to make the rest of the pancakes. Serve hot with ketchup, chutneys or sriracha. Chilla can also be stuffed with roasted veggies or potatoes.

CHICKPEA FLOUR PANCAKES - Chilla / Pudla  | Vegan Richa Recipes

Make this quick and easy Besan Chilla (or cheela), a savoury Indian pancake recipe made with chickpea or gram flour, onions, tomatoes, herbs and spices. It makes for an easy and balanced lunch/breakfast!

Besan Ka Chilla

Besan (Gram flour) (sub with chickpea flour)

Sift the besan/chickpea flour through a sifter to prevent lumps (you can also skip to save time).

Add the rest of the ingredients except water and oil and mix well. Then add water to the mix and form a loose batter (not too thick or thin. Adjust water,according to feel).

Season a skillet with a thin layer of oil. Bring it to about medium heat.

Pour 1/3 cup full of the batter on the skillet and with the back of the spoon, spread it a little to form a roughly round shape.

Cook for until the top looks about cooked and then flip. You can also cook the pancake on one side on low flame until the top looks cooked through and remove from the skillet without flipping.

Serve chilla/pancake hot or warm with a side of Indian pickle, mint coriander chutney, ketchup or a simple yoghurt sauce.
