Chickpea Tuna Mayo

Chickpeas

Open the can and drain the chickpeas and rinse them thoroughly under cold water.

Add the drained chickpeas, capers, and vegan mayo into the bowl of a food processor. Pulse the mixture for about 20-30 seconds. You&#39;ll want to achieve a slightly chunky texture, ensuring it&#39;s well combined but still retains some texture.

Seasoning

Taste the mixture and season it with salt and pepper to suit your preference. Remember that capers can add some saltiness, so adjust accordingly.

Assemble

Take your favorite sandwich bread slices and spread a generous amount of the prepared chickpea &#39;tuna&#39; mayo onto one slice. Top it with another slice of bread to create a sandwich. Garnish your sandwich with freshly chopped parsley for added color and flavor.

Serve

Cut the sandwich in half or into quarters, and it&#39;s ready to be enjoyed!

Chickpea Tuna Salad

dill pickle relish

lemon juice

rib celery (diced small)

diced small red onion (or chives, green onions)

vegan mayo

1/2-1 teaspoon salt, to taste (or soy sauce)

black pepper

In a large bowl, mash the chickpeas with a potato masher (or fork) until they are mostly mashed.

If using nori for a fishy flavor: Finely chop 1-2 sheets of nori. I found it easiest to simply chop it up with a sharp knife on a cutting board. Kitchen scissors also work. Or, use the kelp granules.

To the bowl with the chickpeas, add the nori or kelp granules, pickle relish, lemon juice, celery, onion, mayo, salt and black pepper. Add pepperoncinis and capers, if desired. Stir well to combine.

Cover and place in the refrigerator for at least 30 minutes if you can, to let it get cold and let the flavors come together. You can also enjoy it right away.

Serve on sandwiches, with crackers, on salads on make a tuna melt with some vegan cheese. Enjoy!

Leftovers: Keep chickpea tuna in a covered container in the refrigerator for 4 days.

Wow! This is outstanding!  I used chopped bread and butter pickles because I didn’t have relish. I added capers and I used Nora’s silken tofu mayonnaise recipe.  The flavor combo is so good.  WFPB food does not leave us sacrificing any flavor!  And it’s so much healthier! It will be even tastier tomorrow as the flavors mingle.

Nice flavors overall. My only suggestion is to add the mayonnaise a bit at a time as 1/2 cup make a really mayo-forward &amp; wet mixture. Easy to dial that back of course and we will try this again for sure!

First time making faux tuna in my 20+ years of being vegetarian. This was amazing! Left out the nori. What would you recommend as a lower-calorie option for the mayonnaise? I know regular mayo has lite options. Also wondering if the protein can be increased any way. Thank you for a great recipe!

One great way to chop up Nori sheets is using scissors. 
I like putting quartered grapes and olives into the mix. Diced bamboo shoots or hearts of palm are great for adding a little texture. Mock tuna can be made so many ways. Thanks for your recipe Nora!
