can chickpeas ((1 can = ca. 14 ounces 400 grams))

olive oil

tsp paprika ((smoked paprika if you have it))

tomato

red onion

tbsp vinegar ((malt vinegar

avocado

lemon ((juiced = 1.5 tbsp))

creme fraiche ((½ cup = ca. 100 grams) (use soy yogurt

wraps ((like corn tortillas))

salt and pepper

tbsp basil, fresh ((or coriander, chopped))

Preheat the oven to 200°C/390°F and line a baking tray with baking/parchment paper.

Drain the chickpeas and add to a mixing bowl. Add the olive oil and paprika and stir well.

Put into baking tray and roast for 15-20 minutes in the oven. Give the chickpeas a quick toss halfway through.

In the meantime slice the red onion finely and wash and dice the tomatoes. Put in a small bowl with the vinegar and let soak.

Scoop the avocado flesh out and put a serving bowl. Mash with a fork and season with lemon juice, salt and pepper.

Mix the cream fraiche with the spicy sauce, also in a serving bowl.

Heat up the tortillas in a pan or microwave, according to packet instructions.

By now the chickpeas should be ready, too. Re-add to mixing bowl.

Lay everything out, and create your wraps! We like to spread avocado on one half and cream fraiche on the other. Line the other ingredients up down the middle, and fold. Bottom first, then sides. Done!

These Peanut Chickpea Wraps are simple to make and great for meal prep! An easy lunch that everyone will love.

Peanut Chickpea Wraps

peanut

soy sauce

garlic

milk

maple syrup

lime juice

inch of fresh ginger (or 1/4 teaspoon of dried ginger)

optional:

oz bag (roughly 3 cups of coleslaw mix)

carrots

¼ cup of chopped green onion

peanuts

cilantro

chickpeas

tortillas

To make the peanut sauce: add all ingredients to a blender or food processor and blend until smooth. You can also simply whisk everything together if you first finely mince the garlic and ginger.

To make the slaw: in a large bowl, combine the coleslaw mix, carrots, green onion, peanuts*, and cilantro. Pour on the peanut sauce and mix to combine. Set aside.

To make the wraps: Divide the chickpeas and slaw mix evenly among 6 large tortillas. Roll up tightly and ENJOY!

To meal prep: If you're wanting to meal-prep this recipe, I suggest mixing together the chickpeas and slaw mixture (leaving out the peanuts and adding them before serving) and putting it into your meal prep container with the tortilla on the side. When ready to serve, dump the chickpea slaw mixture + the peanuts on the wrap and wrap up.

10 Minute Spiced Chickpea Wraps

garbanzo beans (/chickpeas (15-ounces))

lemon juice

salt

pepper

cumin

garlic powder

lettuce (or spinach)

flour tortillas (or wrap with whole lettuce leaves

Mash garbanzo beans by using a potato masher in a bowl until almost all of the beans are mashed. Add the olive oil, lemon juice, and seasonings and continue mashing until it&#39;s spreadable (you can also use a food processor, but don&#39;t get it too smooth).

Divide chickpeas evenly between four tortillas. (TIP: press the mashed chickpeas into the bowl and then divide in half with a knife, then divide in half again to get 4 similar-sized amounts for the tortillas.)

Spread chickpea filling across tortilla, mashing more with a fork if you need.

Add lettuce, pickled vegetables and any other ingredients you&#39;d like. Roll up, cut in half, and serve.
