Chili Lime Shrimp is a super easy to make and tasty 30-minute dinner. It's a versatile recipe that can be served on its own, over rice or cauliflower rice, or even wrapped up in tacos or lettuce wraps.

Chili Lime Shrimp

bell peppers, sliced

onion, sliced

broccoli, chopped into florets

olive oil

pepper

salt

limes (about 1/4 cup)

coco aminos (can substitute soy sauce

each: cumin, paprika, and salt

Place the peppers, onion, and broccoli on a baking sheet and toss with the olive oil, salt, and pepper. Bake for 25 minutes, mixing halfway through.

Once the veggies are in the oven, start the shrimp. In a medium-sized bowl, mix together the lime juice, coco aminos, chili powder, cumin, paprika, and salt. Add the shrimp and toss to coat. Let the shrimp marinate for 10 minutes.

Drain the marinade into a large frying pan over high heat. Let it cook for 3-4 minutes, or until it starts to reduce. Add the shrimp to the pan and cook for 2-3 mintues on each side.

When the veggies are cooked, add the shrimp to the tray and serve right away.

The other review helped. Drain all the liquid from the shrimp. Put about a 1/4 cup of marinade in the pan. Cook out all liquid until you just have spices and oil. Throw in shrimp and cook until browned on both sides. Put on plate on in bowl. Add cilantro then add salt and chili powder if necessary. Delicious!!! Especially on top of an arugula salad.

Loved how easy this was. I used my stove top grill and they were amazingly tasty.

I grilled the shrimp on skewers and it was great. Enough spice and taste. The shrimp should be patted dry before marinating. Maybe that’s why some people thought it was tasteless. And 1/2 hour marinating time will not “ceviche” them either.

Where does the zest of lime come into play?

This didn't come out anything like the picture. The shrimp didn't have much flavor. I ended up simmering the marinade and added a thickner.

Preheat grill to 375 (medium-high heat)

In a bowl, whisk together avocado oil + spices. Toss shrimp with marinade + allow it to marinate for at least 10 minutes.

Add shrimps on to skewers. Place on hot grill and cook for 5 minutes. Flip + cook for an additional 5 minutes.

Serve shrimp with guacamole for dipping, on a salad, or with sides.

Shrimp Taco Bowl with Creamy Chipotle Sauce

tamari (gluten free soy sauce)

lime juice (fresh squeezed)

garlic

red pepper flakes

shrimp (peeled & deveined

cilantro lime quinoa

cabbage (green, purple or mixed)

red bell pepper (thinly sliced)

jalapeno (thinly sliced)

avocado (thinly sliced)

chipotle sauce (click link for recipe)

cilantro (chopped)

Whisk the tamari, lime juice, olive oil, crushed garlic cloves, chili powder and red pepper flakes together in a large bowl.

Add the shrimp and toss to coat in the marinade.

Place the marinating shrimp in the refrigerator for 10-15 minutes.

While the shrimp is marinating, prepare the bowls.

Add 1 cup prepared cilantro lime quinoa to 4 separate bowls.

In a medium bowl, combine the cabbage, bell pepper, jalapeno and lime juice.

Divide this mixture between the 4 bowls.

Add ¼ sliced avocado to each bowl.

Heat a grill or grill pan on the stove to high heat.

Use tongs to remove the shrimp from the marinade and add it to the grill or grill pan.

Cook for 2-3 minutes per side, or until the shrimp starts to turn opaque white with some pink highlights.

Remove the shrimp and add to the bowls with the quinoa and cabbage.

Drizzle the creamy chipotle sauce over the bowls and top with fresh chopped cilantro.
