Chili Mac (or Chili Macaroni) is the best homemade chili mixed with macaroni. It&#039;s filling, rib-sticking comfort food to the max!

CHILI MACARONI (CHILI MAC)

macaroni

beef

onion

garlic (minced)

kidney beans (drained)

(14.5 oz) can diced tomatoes (undrained)

tomato sauce

tomato paste

tbsp chili powder

tsp cumin

salt & pepper (to taste)

cheddar cheese (for topping)

Boil and cook macaroni until tender.

While macaroni is cooking, cook ground beef along with onion.

Stir and cook until beef is browned and onion is soft.

Add in garlic during last couple of minutes of cooking (so it doesn't burn).

Drain excess grease from beef and put back into pot

After macaroni is cooked, drain.

Stir macaroni and remaining ingredients (minus the cheese) into beef mixture.

Heat to boiling, stir occasionally, then reduce heat and simmer covered for about 15-20 minutes.

Make sure to give it a taste test at this point. I usually find I need to season with a bit of salt.

Then serve and sprinkle each serving with shredded cheese.

How to make: THE BEST CHILI MACARONI

This one pot chili mac is a blend of ground beef, macaroni, beans, tomatoes and spices, all topped off with plenty of melted cheese. An easy dinner option that's family friendly and on the table in 30 minutes!

Chili Mac

olive oil

beef (I use 90% lean)

onion (finely diced)

chili powder

cumin

can diced tomatoes (do not drain)

beef broth

salt and pepper

dark red kidney beans (drained and rinsed)

elbow macaroni

cheddar cheese (grated)

Heat the olive oil in a large pot over medium high heat. Add the ground beef and cook for 5-6 minutes, breaking up the meat with a spatula.

Add the onion to the pot and cook for an additional 2-3 minutes. Add the garlic and cook for 30 seconds.

Add the chili powder, cumin, tomatoes, beef broth, tomato sauce, salt, pepper, kidney beans and macaroni to the pot. Stir to combine.

Bring to a simmer, then cover the pot and cook for 12-13 minutes or until pasta is tender. Uncover the pot and cook for an additional 3-4 minutes.

Sprinkle the cheese over the top of the pasta. Let simmer for 2-3 minutes or until cheese is melted. You can cover the pot if needed to help the cheese melt.

Top with cilantro, tomatoes and onion if desired, then serve.
