This Vegan Chili Soup is a warm and cozy bowl that&#039;s perfectly nourishing and delicious! It&#039;s hearty and ready in around 30 minutes, and it&#039;s also great for game day and celebrating the Fall season.

Vegan Chili Soup

onion

carrots

tbsp oil

tomato paste

vegetable broth

pinto beans (drained and rinsed)

black beans

garlic powder

kosher salt

tsp black pepper (optional)

tsp chili powder

tsp cumin

oregano

onion powder

turmeric

tsp smoked paprika

tomatoes

Garnishes: blue corn tortilla chips (sliced jalapenos, chopped fresh parsley)

In a large pot, add onions, carrots, and oil. Saute for ten minutes on medium heat, stirring every few minutes and a few tablespoons of water along the way if the mixture becomes too dry.

Add the remaining ingredients and stir well. Bring to a simmer, and cook partially covered for 15 minutes.

Serve and top with garnishes.

Super tasty Chili Soup that can be made quickly on the stove-top or more slowly in a slow cooker. Simple, comforting &amp; delicious with only 8 ingredients (plus water &amp; salt)!

Chili Soup

olive oil (,

garlic

x 15 oz

green bell peppers

salt

chili powder

thyme

Warm the oil in a large pan over a medium heat, then sauté the onion and carrot until the onion is starting to turn golden.  (you can use 1 - 2 tablespoons of oil instead of water if you prefer to keep things oil-free).

Add the bell pepper and garlic and sauté for another 2 minutes then add the chili powder (see recipe notes if not using American style  chili powder) and cook for 1 minute longer.

Add the tomatoes, kidney beans, salt, thyme and as much of the water as you want to get the soup thickness you like. Allow to come to a gentle simmer, then cook for around 20 minutes or until the vegetables are tender. After this time you can turn it to low and leave it to simmer gently for another hour or two if you aren&#x27;t ready to serve it immediately.

On the stove

Sauté the onion and carrot in 1 tablespoon of olive oil (or a few drops of water for oil-free) over a medium heat until the onion is starting to turn golden.

Add them along with all of the other ingredients to a slow cooker and cook on high for around 4 hours or on low for 7 - 8 hours.

Pinto Beans (16 oz can)

Turkey with Beans chili (15 oz can)

meat only chili (15 oz can)

corn (15.25 oz can)

black beans (I used fiesta blend) (15.5 oz can)

tomatoes (14.5 oz can)

Rotel

Velveeta cheese (cubed (optional))

Salt and pepper (to taste)

sour cream

cilantro

Open cans and pour into a large pot. Do not drain cans.

Bring ingredients to a boil and simmer for 10-15 minutes.

Add in cubed Velveeta cheese and stir until melted, about 1-2 minutes.

Serve by itself or with sour cream and cilantro.

So easy for a quick chili! So flavorful and packed with goodies!
