This is a fairly mild chili. Feel free to add jalapenos along with the onions and poblanos, some hot sauce or some chopped chipotles in adobo sauce. All would be delicious and add some good, hot spice!

In a large pot or dutch oven, cook ground beef until almost no pink remains. Drain off fat. Add onions and poblano peppers, cook another 2-3 minutes. Add spices, cook another two minutes or so, stirring occasionally.

Easy Chili Without Beans

oz canned diced tomatoes and green chilis (do not drain)

Heat a skillet or large pot on medium-high heat with the onions, red and green peppers, garlic, and jalapenos. Cook for about 2 minutes.

Add the ground beef to the pot or pan with all of the seasonings.

Use a spatula or a large spoon to break down the ground beef into small chunks.

When the beef has browned add the beef broth, tomato paste, and diced tomatoes and green chilis. If you are using a skillet you will need to transfer the ground beef to a large pot first. Stir to combine all of the ingredients.

Lower the heat on the stove to Low. Cover and simmer the chili for 10-15 minutes. Taste the chili repeatedly for flavor. Add additional seasoning as needed.&nbsp;

Cool before serving.

Keto Chili Recipe with Double Meat - Thick and Hearty

lb Ground Beef Chuck

Onion (diced)

Red Bell pepper (diced)

Cloves garlic (minced)

Tablespoons chili powder

Tablespoons cumin

Tablespoons smoked paprika

28 ounces can fire roasted diced tomatoes

Heat a heavy pot over medium-high heat.  Add the oil and the stew meat.  Sauté until browned on all side.  Remove stew meat from pot and set aside.

Reduce to medium heat and add the onion, red bell pepper, and garlic to the pot.  Saute&#39; until translucent.  About 5-8 minutes. 

Add the ground beef to the pot and saute&#39; until cooked through and crumbled.  Add the tomato paste and the spices and stir to combine.

Add the seared stew meat, and crushed tomatoes, stir.

Place a lid on top, reduce the heat to medium-low, and let simmer for 1 hour...or until the stew meat is tender.

Serve the chili with shredded cheese, cilantro, sour cream, and keto cornbread!

So good. My husband is easy to cook for but when he says it is the best chili he has ever had then he means it. He puts this in a hot dog bun with cheese. Plus the kids liked it. My picky teenager went for second helpings

Great recipe! I added an extra 1/2 lb ground beef, 1 extra 28oz can chopped tomatoes and 1 can black beans in the slow cooker .to make a huge batch..delicious!

This recipe is delicious! I didn’t have any stew meat on hand so used double ground beef (lean, and from a local farm). Great flavors, great consistency. I separated the receipe in half after simmering and added beans to my husbands pot as he doesn’t necessarily eat low carb.

Hello Jennifer I love all of your Keto recipes ( keep them coming ). I make your chili the most but I substitute Venison steak and Venison ground burger, It taste's amazing . I also freeze it flat in sealer bags and stack them in the freezer.
