Garlic Chili Noodles

11 oz Dried Ribbon Noodles(300 grams) ((Note1))

1½ Tbsp Cooking Oil ((Note2))

½ Cup Scallion(white part) (thinly sliced)

¼ Cup Vegetable Broth(low-sodium)

Tbsp Light Soy Sauce ((Note4))

Tbsp Dark Soy Sauce

Tbsp Chinese Black Vinegar ((Note5))

Tbsp Korean Chilli Powder/Flakes ((Note6))

¼ Cup Scallion(green part) (thinly sliced)

Tbsp Toasted Sesame Seeds

Chilli Flakes (optional)

1. Heat a small frying pan( my frying pan is 6″/18cm diameter) over very low heat. Add cooking oil along with thinly sliced scallion( white part) and minced garlic. Sauté for 5 minutes on very low heat and constantly stir. (we don’t want to burn them, if you see they start burning, turn the heat lower)

2.Turn on the kettle with water for the noodles. After sautéing our aromatics for 5 minutes, we add vegetable broth, light and dark soy sauce, black vinegar, and Korean chilli powder/flakes( Gochugaru) into the sauce pan and stir. Turn the heat up to medium-low and let the sauce simmer away for 5 minutes without a lid on. (If you sauce is ready but the noodles are not ready yet, just turn off the heat and leave the sauce on the stove).

3. Meanwhile , we gonna cook dried noodles while the sauce is simmering. Cook the noodles in a pot according to package instruction.

4. Drain the noodles very well then pour the garlic chilli sauce over and mix well until the noodles are well coated with the sauce. Finish with more scallion(green part), toasted sesame seeds, and more chilli powder/flakes. Serve when hot and enjoy!

Garlic Chilli Noodles

A traditional Cantonese ginger scallion sauce is a starting point for a restorative chilli oil infused with a host of other condiments to coat your noodles with soul-stirring comfort. Miso is optional but highly recommended for the sweet-and-savoury kick of umami that it imparts!

Ginger & Scallion Chilli Oil Noodles

noodles of choice, cooked according to package instructions

scallions/ fresh spring onions, thinly chopped (green part only)

1-1½ tbsp toasted sesame seeds

salt

tbsp neutral-flavoured oil

1½ tbsp light soy sauce

1½ tbsp dark soy sauce

½ tbsp rice vinegar

½-1 tbsp miso ((optional))

brown sugar

Start by adding your minced ginger and chopped scallions/ spring onions to a large heat-proof bowl. Generously salt this mixture.

Next, add your minced garlic, chilli flakes and sesame seeds.

Heat the oil until smoking, then pour it over the ginger-scallion mixture. Once the bubbling and sizzling has subsided, give it a gentle stir to ensure that the oil is evenly mixed in.

Now add the remaining ingredients – light and dark soy sauces, rice vinegar, miso, hot sauce and sugar. Mix well to combine.

Add your noodles, tossing to ensure that they are evenly coated with the ginger-scallion oil. Serve hot, garnished with more scallions/ spring onions.

Great recipe! I used maple syrup instead of brown sugar, abstained from the optional chili oil and red pepper flakes, and used tamari since I’m allergic to soy sauce. Tasted great! Will definitely make it again!

How many servings does the quantity of spices etc serve? We assumed one quantity would serve two people but it seemed too much for two

I didn’t have fresh ginger so I substituted with ginger powder and only had regular soy sauce and it still turned out so good.
