Mexican Grilled Chipotle Chicken Recipe 

lbs chicken thighs

olive oil

chipotle peppers (canned) adobo sauce

garlic

shallot

cumin

coriander

chili powder

oregano

salt

Place marinade ingredients in a food processor and process into a paste. Place the chicken and marinade in a ziplock bag and massage well to mix and coat all sides well. (Or brush all sides well with marinade and place in a container.) Marinate 20 mins or up to 3 days.

Grill each side of chicken 6-7 minutes, or until good grill marks appear. Lower heat and move chicken to cooler side of the grill and continue to grill until chicken is cooked through and internal temperature reaches 165F.

Let it rest 5-10 mins before serving and squeeze with lime. Sprinkle with optional cilantro.

Oldie but goodie.   Love this grill chicken.  I’ve made it as a split chicken, thighs, drum sticks, wings and Breast are juicy not dried out.

Made this last night and it was so yummy.  My teenage son asked if we could always have this chicken available in the fridge.

I LOOOOOVE this recipe!  I made it exactly as printed except I added some lime juice to the chicken a few hours before cooking.  Don't add it days before as the lime will cook the chicken.  I used boneless skinless chicken thighs and bone in and both were delicious.  Highly recommend!

This creamy Chipotle Chicken Skillet is exactly what you need for a delicious and appetizing meal! Ready in under 30 minutes, you will love the comforting flavors of citrus, tender chicken breasts, and chipotle chile pepper cooked in a smooth cream cheese sauce.

Chipotle Chicken Skillet

chicken breast (boneless; skinless)

Kosher salt (to taste)

pepper (to taste)

shallots (finely chopped)

chicken broth (low sodium)

cream cheese

chipotle pepper (in adobo sauce; finely chopped)

cilantro (finely chopped; more for garnishment)

lime wedges (for serving)

Heat the oil in a large skillet over medium heat. 

Season the chicken with salt and pepper and cook it for 6-8 minutes per side, or until brown and no longer pink in the center. Set aside.

To the same preheated skillet, add the shallots and garlic. Saute for 3-4 minutes, or until the onion has softened.

Pour the chicken broth and scrape the bottom of the skillet to deglaze. Let it simmer for 4-6 minutes, or until reduced by half. 

Stir in the cream cheese and chipotle pepper. Whisk well to obtain a creamy sauce.

Return the chicken to the pan and cook for 4-6 minutes more, or until the sauce is bubbly and the chicken is heated through.

Garnish with fresh chopped cilantro and serve with lime wedges.

chicken breasts

chipotle chili powder (sub regular chili powder)

pepper

garlic (minced)

apple cider vinegar (sub any vinegar)

bell peppers (sliced)

Marinate

Marinate the chicken: In a bowl or sealable plastic bag, combine the chicken, chili powder, cumin, oregano, salt, pepper, garlic, and vinegar. Marinate for at least 30 minutes or as long as overnight.

Cook

Cook the chicken: Heat the olive oil in a large skillet over medium-high heat. Saute the chicken pieces for 8-10 minutes until golden brown and cooked through. Remove the chicken from the pan.

Vegetables

Prepare the fajita veggies: To the same pan, add in the olive oil, peppers, onion, oregano, and salt. Sauté for 5-6 minutes until softened and caramelized.

Beans

Prepare the beans: Add the beans, chili powder, cumin, and lime juice to a saucepan over medium heat. Cook the beans for a few minutes, stirring occasionally. Taste and add salt if needed.

Rice

Prepare the cilantro lime rice: Prepare the rice according to package directions. Once cooked, stir in the olive oil or butter, lime juice, and cilantro.

Assemble

Assemble the burritos: Place the tortillas between damp paper towels and microwave for 30 seconds to make them soft and pliable. Place each tortilla on large squares of tin foil. Place portions of the chicken, rice, veggies, beans, and any extra fixings in the middle of the tortilla. For each burrito, bring the bottom half of the tortilla up over the pile of fillings and tuck the bottom edge under the pile. Fold each side of the tortilla into the middle and roll up the burrito so it’s seam side down and in the middle of the tin foil. Package up the burrito in the tin foil. Enjoy!`

Enjoy this Chipotle chicken recipe from the comfort of your own home. Not only is it crazy-easy to make, but it should save you a few bucks to boot!

Chipotle Chicken Recipe

chipotle chile pepper

dried ancho chile pepper

Place chipotle and ancho chile peppers in a bowl and cover it with water. Cover the bowl and let it sit for 10-12 hours to reconstitute and soften. Drain the water. Slice the peppers open and remove the seeds.

To a food processor or blender, add the peppers, red onion, garlic, salt, cumin, oregano, and black pepper and blitz until a coarse paste is formed. Pour olive oil and blend until smooth.

Place chicken thighs in a Ziploc bag and pound them to 1/2-inch thick with a meat mallet. Add the spice marinade to the bag and seal it. Massage the bag to coat the chicken. Marinate for at least 8 hours.

Preheat a grill with top and bottom plates to medium-high heat. Grill the chicken until no longer pink in the center and the juices run clear, about 5-10 minutes. Use an instant-read thermometer to test for doneness.  Cooked chicken has an internal temperature of 165 degrees Fahrenheit.

Let the chicken rest for 5 minutes. Then, slice chicken into strips, serve, and enjoy!

Chipotle Chicken (Healthy Copycat Recipe)

Place all the ingredients for the adobo marinade into a mini food processor or the small insert to a regular sized food processor. 

Process until the marinade is mostly smooth, scraping down the sides as needed. 

Place the chicken thighs in a non-reactive bowl and pour the adobo marinade over the top. Mix to thoroughly combine, then cover and refrigerate for at least 1 hour, but overnight is best for the most flavor.

When you&#8217;re ready to cook the chicken, preheat the grill over high heat. I like to lightly oil the grill before preheating it just to make sure the chicken doesn&#8217;t stick.

When the grill is hot, place the chicken thighs on the grill and lower the heat to medium. You want to maintain a temperature around 400ºF.

Grill until the chicken easily comes loose from the grill, 6-8 minutes. Turn the chicken and cook until done in the center, about 5-6 more minutes.

Let the chicken cool slightly, then chop into bite sized pieces and serve with your favorite burrito bowl or taco bowl fixings.

This is an adaptation of the Chipotle-Garlic Grilled Chicken recipe in my book, The Food Processor Family Cookbook (Sonoma Press 2016). Canned chipotle peppers and garlic get pureed into a simple but deeply flavorful marinade for chicken (it’s delicious on skirt steak!). The spicy chicken is awesome on its own, but we love to shred it and pile it into tortillas with Napa cabbage, avocado slices and a garlicky, mint-spiked lime crema. The recipe makes a big batch of crema, but we end up slathering it over everything on our plates. If you have the time, marinate the chicken in the morning or even the day before for maximum flavor.

(The Best!) Easy Chipotle Chicken Tacos Recipe

garlic cloves,

chipotle peppers

Salt and black pepper

½ - 2 pounds boneless skinless chicken thighs

sour cream

garlic clove, grated

scallions

mint

tortillas

Napa cabbage,

Avocado slices,

Crumbled Cotija or feta cheese,

Put the garlic cloves in a mini food processor, and process until finely chopped.  Add the chipotle peppers with their sauce and season with salt and pepper.  Process until smooth, stopping and scraping down the sides occasionally.

Season the chicken with salt and pepper, and transfer to a bowl. Add the chipotle marinade, and toss to coat. Let sit at room temperature for 15-45 minutes, or cover and refrigerate for up to 24 hours.

Marinate the chicken

Mix together the sour cream, grated garlic, lime zest, lime juice, scallions, and mint or cilantro. Season with salt and pepper.

Make the lime crema

Preheat a grill or grill pan to medium-high. If the chicken was refrigerated, let it come to room temperature.

Remove the chicken from the marinade, leaving some of the marinade sticking to the meat. Oil the grill grates, then grill the chicken on both sides until cooked through, about 5 minutes per side.  Transfer to a cutting board and let rest 5-10 minutes. Using two forks, coarsely shred the chicken.

Pile the chicken into warmed corn or flour tortillas and top with napa cabbage, avocado slices and the lime crema. If you’d like, sprinkle with a bit of crumbled Cotija or feta cheese. Serve with hot sauce and the remaining crema at the table.

Copycat Chipotle Chicken Recipe

Place all of the ingredients, except for the chicken, in the bowl of a food processor or blender. Process on high speed until a smooth paste forms.

Pour the marinade over the chicken breasts and stir to fully coat each chicken breast with the marinade. Cover and refrigerate for at least 1 hour, or up to 3 hours.

Preheat grill or stovetop grill pan. Brush grates with additional olive oil, if desired. Remove chicken from marinade and discard excess marinade. Due to the risk of bacterial contamination, do not reuse or consume marinade.

Grill chicken breasts for 8-10 minutes on each side, or until the center of the chicken reaches an internal temperature of 165°F.

Allow cooked chicken to rest for 5 minutes before chopping or slicing into pieces.

A hearty salad featuring a mix of beans, fresh vegetables, and chipotle-marinated chicken, perfect for lunch or dinner.

Step 1
