Chicken with Chipotle Cream Sauce

chicken breasts

extra virgin olive oil

butter

garlic (* minced)

chipotle peppers

heavy whipping cream

Parmesan cheese (* grated)

spinach leaves

cilantro (* optional garnish)

Heat the olive oil in a large skillet over medium heat. Season the chicken with salt and pepper and add it to the skillet. Cook until it is no longer pink in the center, about 7 to 8 minutes. Remove to a plate or bowl and set aside.

Return the pan to the stovetop and add the butter. Once the butter is melted, add the garlic and cook for about 30 seconds, stirring frequently.

Add the chipotle peppers and cook for an additional 30 seconds.

Slowly pour in the heavy cream and increase the heat to bring to a boil. Lower until the cream comes to a simmer. Cook 2-3 minutes until thickened.

Whisk in the Parmesan cheese until smooth.

Stir the chicken back in and cook 1-2 minutes to re-warm.

Add the spinach and cook until wilted and combined well with the sauce.

Spicy Chipotle Alfredo Gnocchi

red onion (finely diced)

garlic

chipotles (and a spoonful of adobo sauce) (finely chopped)

brown sugar

vegetable stock / broth

heavy (double) cream

parmesan, pecorino cheese (grated)

baby spinach or kale (chopped)

cilantro (fresh coriander) or basil (chopped)

In a large saucepan or deep saute pan, heat a little olive oil over a low - medium heat. Saute the onions until they are soft, then add the garlic, sugar and chipotles + a scoop of the adobo sauce (as much as you can spare). Saute for a couple more minutes until the chipotles are soft. You can use the spoon to smoosh them up a little more.

Pour the stock into the pan and simmer over a low heat, partially covered, for about 5 minutes until it&#39;s slightly reduced.

Add in the cream and cheese and allow it to simmer until the cheese has melted in and the sauce is warmed through.

Add the basil/cilantro and spinach and simmer until it&#39;s just starting to wilt. Then let the sauce sit, covered, off the heat while you prepare the gnocchi.

Pan fry the gnocchi. In a large, deep frying pan, heat a thin layer of olive oil over a low-medium heat. Add the gnocchi to the pan and cook, stirring regularly, for 5 minutes until lightly browned on each side.Note that you can boil or even air fry the gnocchi if you prefer.

Add the gnocchi into the pan with the sauce and mix through.

Serve immediately, with lemon or lime wedges and/or additional cheese for topping.
