A creamy, smoky chipotle dressing made in 1 bowl in 5 minutes, with just 6 simple ingredients. The perfect quick dairy-free dressing for just about any salad!

5-Minute Smoky Chipotle Dressing

cashew butter

black pepper

garlic,

lime juice

maple syrup

water ((plus more as needed to thin))

To a medium mixing bowl add cashew butter, salt and pepper, adobo sauce, crushed or minced garlic, lime juice, and maple syrup and stir to combine.

Add water a little at a time to thin into a pourable sauce, whisking as needed. Taste and adjust flavor as needed, adding more salt to taste, adobo sauce for heat, lime for acidity, or maple syrup for sweetness.

Serve on top of salads, especially those that could benefit from a creamy, smoky/spicy kick. Store leftovers covered in the refrigerator for up to 4-5 days. Not freezer friendly. After refrigerating it gets thicker, so thin with more water as needed.

The smoky, spicy flavor in this recipe comes from adobo sauce which typically consists of tomato, dried chiles, sweetener, salt, onion, vinegar, garlic, and dried herbs/spices. It originated in Spain where it was used as both a marinade and preservative. It’s believed that the sauce was then introduced in Mexico by Spanish explorers and enthusiastically adopted into Mexican cuisine.

5-Minute Smoky Chipotle Dressing | Minimalist Baker Recipes

This chipotle vinaigrette is sweet, smoky, and spicy. Use it as a salad dressing, or drizzle it over grilled or roasted veggies, tacos, bowls, and more!

Chipotle Honey Vinaigrette

avocado oil

chipotle pepper

honey

garlic

cumin

sea salt

In a small food processor, combine the oil, lime juice, chipotle, honey, garlic, cumin, salt, and several grinds of pepper. Pulse until combined.

This amazing dressing packs a lot of flavor into very few calories! If you’re worried that this low-fat vegan dressing might be too hot for you, blend up all the ingredients except the chipotle powder; then add it little by little, tasting as you go, until you find the right amount of spiciness.

Holy Moly Spicy Chipotle Dressing

soy milk

flaxseed

lemon juice

apple cider vinegar

medjool date (pitted (or a pinch of sweetener of choice))

small garlic

white miso (or salt to taste)

tomato powder (or 2 teaspoons tomato paste)

chipotle chili powder

milk

Place all ingredients in a blender and blend on high speed until smooth. Let it sit for a minute and then check the thickness. However thick it is now, it will be much thicker after refrigerating, so add more non-dairy milk or water to thin it, if necessary.

Pour into a bottle or jar and refrigerate to thicken and allow flavors to develop.

Honey Chipotle Dressing

TBSP red wine vinegar

salt

tsp pepper

oregano

tsp cumin

chipotle pepper in adobo sauce

Combine all ingredients in a blender or small food processor and blend/process until smooth and emulsified.

Dip a leaf of lettuce into the dressing to taste-test and adjust any ingredients to taste. For more chipotle flavor you can add a little extra adobo sauce or adjust the sweetness/tartness with the honey and vinegar, etc... Let your taste buds be your guide!

OPTIONAL EXTRA: 1 TBSP fresh squeezed lime juice for a burst of citrus flavor.

Such an easy and delicious add to top off a salad! Definitely a winner.
