Creamed Chipped Beef is the ultimate comfort meal combining dried beef in a smooth cream sauce served over light toasted sourdough or European whole grain.

Creamed Chipped Beef

Buddig original beef (see notes)

butter

all purpose flour

black pepper

cayenne pepper

milk (see notes)

salt and pepper

Melt butter in a skillet over medium low heat. Whisk in the flour. Cook for 2 to 3 minutes; whisking constantly.  Sprinkle in black pepper and cayenne pepper.  Slowly whisk in the milk until smooth and creamy.

Add the chopped beef and simmer for 3-5 minutes. Salt and pepper to taste.  Serve over toasted bread, eggs, hash browns, or biscuits.

When I was in the Navy (1986-92) there was a difference from Chipped Beef (this recipe with cream gravy) and SOS which was a ground beef with diced tomato / peppers. The SOS was probably healthier but the Chipped beef would be more filling. Liked them both.

This is a delicious meal, and make it often,u could. Either make from scratch or buy Stouffers in a box, which is really good!

We had this all the time growing up, but my mom would hard boils some eggs &amp; then chop them finely and add to it. We also used Buddig corned beef which I can't find in stores around here.

I have never cared for chipped beef on toast. Like Beth said my Catholic upbringing would never have been spelled out for us.  Truth is Chipped Beef is not really SOS.  SOS comes in 2 versions, the Army version and the Navy version.  It originated in WWII and is still served in the military today.  We prefer the Army version because it has the hamburger and creamed gravy served over biscuits or toast.  The Navy serves it's version with hamburger but no biscuits or toast and it has tomatoes included.  It is just served in a bowl.  Both are good and those original recipes are floating around out there somewhere for all to enjoy.  The original use of the letters SOS was a distress signal that meant; 'Save O Save Our Ship' (SOSOS) That ends the history lesson for today, class. hahaha

Me too Larry.  I served on 3 ships from 65 til 69.  Always looked forward to SOS, being hamburger, pork sausage of chipped beef (or horse?].  Never did we have tomatoes mixed in.  Consistent, unlike powdered eggs, bug juice and warm powdered milk.

This is the standard recipe for this wonderful dish. I grew up eating it and so did my children. Sometimes I change it up a bit for dinner by sauteeing chopped onion before adding the chipped beef and making the roux.

I usually add cheddar cheese and a little dry mustard to the sauce. I serve over toasted English muffins and top with a hard boiled egg cut in quarters. A fruit salad and some steamed buttered asparagus makes a very nice brunch.

I've been looking for a new comfort food to try outside of soup! This looks like it will do the trick! Giving this a try tonight!

Yes, our mother also made this when we were growing up.  Dang tasty and filling, which was the goal when raising 5 kids on a budget.
Folks here are talking about SOAS... yes that was from WW2 but referred to this recipe made with ground beef and served on buttered toast.  My mom called it "Shingle Meat", while this recipe was called Chipped Beef on Toast.

Oh does this ever bring back childhood memories! My family also added diced green peppers to the butter and flour at the beginning--delicious! Haven't had any years due to the salt content--but I remember it being delicious. Always served ours over toast. Never heard it called SOS, just simply Creamed Chipped Beef!

It was so funny to see this on the computer today because I actually made this last night and will be having it again tonight.  I grew up with this as it was definitely a family favorite.  As others have said the SOS has traditionally been hamburger in the cream sauce instead of the chipped beef.  We ate both.  My dad was a cook during  WWI and that was when he started making it.  Another thing he used to do and not only when times were tough, but he used salt pork to make the gravy and served it over mashed potatoes.  This was called slop. Definitely not something to eat now!  I've always made this dish by melting the butter, tossing in the dried beef, getting it nicely coated and then adding the flour, mix it up so the meat is coated and after a few minutes add the milk.  One addition I make to this is to add peas.  So yummy.

I retired after 4 years spent at West Point plus 30 more in the Army. People used to joke about SOS but I love it, especially over biscuits or a couple of fried eggs with a generous sprinkling of black pepper. I crave this even now. I prefer the beef but an alternative is to crumble some patty sausage into the "white sauce". Mild or medium smoked sausage is my preference with Jimmy Dean being my "go to" brand, I wouldn't think the maple flavored would go well with this. Thanks for posting the recipe. Just looking at the pictures has me drooling for some SOS over hot buttermilk biscuits.

At my dad's request, my mom tried to replicate what he described to her as SOS.  She used Carl Buddig dried beef, milk, butter, flour and pepper.  However, she added just a tiny bit of garlic powder and velveeta.  Haven't
thought about this in years. will be making soon.

Shit On A Shingle is the ultimate comfort meal that’s fast and inexpensive. Also called SOS, it’s a classic American military dish made with creamed chipped beef, and served over toast. This is a healthier version with lighter creamy white sauce. This recipe makes enough for 1 person for lunch or light dinner.

Shit On A Shingle (Creamed Chipped Beef on toast)

oz dried beef *

butter (unsalted)

milk

black pepper (to taste)

Chop the dried beef into bite size pieces.

Melt butter in a saucepan or skillet over medium-low heat.

Once melted, add in the flour. Whisk constantly for 2-3 minutes until completely combined and the flour is cooked.

Add ground pepper and milk. Cook until smooth and creamy.

Add the chopped beef pieces and simmer for 3-5 minutes. If your white sauce is getting too thick, you can add extra milk (1/4 cup at a time). Cook until it reaches your desired consistency.

Remove from the heat and serve over toast.

Chipped Beef Cheese ball

8 oz cream cheese,

green onions, diced (reserve 1/4 cup for rolling)

cheddar cheese

salt

Worchestershire sauce

garlic powder

Place all ingredients into a medium bowl and mix together.

Form mixture into a ball and wrap in plastic wrap.

Chill in the refrigerator for at least 20 minutes.

Place reserved chipped beef and green onions on a plate or in a large bowl. Unwrap cheese ball and roll in beef an onions to coat.

Serve with cracker, vegetables, or sliced bread.
