Ferrero Rocher protein balls

Medjool dates, torn in half, pitted

(125 milliliters) hot espresso

(60 milliliters) coconut oil, melted

tsp vanilla extract

(250 grams) hazelnut meal

(220 grams) bukinis (roasted buckwheat from health food stores)

(60 grams) cacao nibs

(50 grams) cacao,

(35 grams) chocolate protein powder

These Cacao Bliss Balls take just minutes to make, contain just 6 ingredients, are free from refined sugars and are perfect for on the go snacks, your work lunchbox, and after dinner munchies.

Chocolate Cacao Bliss Balls

Medjool Dates

Shredded Unsweetened Coconut

Cocoa Powder (unsweetened)

Cocao nibs

Almonds

Remove seeds from dates

To soften dates, place deseeded dates into a bowl of boiling water for 5 minutes.  Drain the dates and set aside.

Add the almonds to a food processor and blitz until they resemble a crumb.

To the food processor, add the coconut, cocao nibs, cocoa powder, peanut butter and softened dates.  Blitz the ingredients for 1 to 2 minutes until the mixture comes together.

Take the blade out of the food processor and roll the mix into 16 balls.

Store in an air tight container in the fridge for upto 5 days.

Chocolate bliss balls without dates are made using a few easy ingredients that have been combined with a natural sweetener and no oil. A perfect pick-me-up snack.

Almond meal

Desiccated coconut

Maple syrup

Rolled oats (gluten free)

Cocoa nibs

Cacao powder

Vanilla extract

Process

In a food processor, add all the ingredients and process until well combined. Scrape down the sides a couple of times to ensure everything is evenly blended.

Roll

Scoop out the mixture and use your hands to roll it into bite-sized balls (about 3 cm / just over 1 inch in diameter).Place the bliss balls in an airtight container in the fridge. Store for up to two weeks.

Hey Janelle, do you think I can use my own almond meal for this recipe? I make homemade almond milk, and I've been trying to find a way to use the strained almond bits for something.
