Preheat oven to 350°F.

Add the whole Oreo cookies to a food processor and pulse into fine crumbs. Pour the crumbs into a bowl and stir in melted butter. 

Press mixture evenly and firmly into the bottom and up the sides of a 9in pie dish. Bake for 10-12 minutes. Set aside to cool.

For the crust: (Can be made 1-2 days in advance)

To a medium sauce pan over medium heat, add the sugar, and milk and whisk well to combine. Bring mixture to a simmer, whisking frequently.&nbsp;

Meanwhile, add the egg yolks and cornstarch to a bowl and whisk until smooth.&nbsp;

Once the saucepan mixture is simmering, add a few spoonfuls of the hot liquid into the egg yolks and whisk to temper the eggs. Add a few more spoonfuls of the hot liquid into the egg yolks. Then slowly whisk the egg yolk mixture back into the saucepan. Whisk constantly until the mixture begins to thicken and comes to a very gently boil (big bubbles begin to break the surface). 

Remove pan from the heat and whisk in the butter, chopped chocolate, and vanilla extract. Stir until completely smooth.

Pour filling into the cooled cookie crust and smooth into an even layer. Place a piece of plastic wrap gently on top and refrigerate until filling is set, about 4–6 hours or overnight, if desired. 

For the chocolate pudding filling:

Once pudding has set, make the topping by adding the cream to a mixing bowl. Mix with electric mixers on high speed for 1-2 minutes.&nbsp;

Add the sugar and vanilla extract. Continue mixing until soft peaks form, about 2-3 minutes.&nbsp;

Spread whipped cream over pie and top with chocolate curls or shavings.

Make the crust:  Preheat oven to 350 degrees.  In a food processor, process cookies with 15 pulses and then let machine run for about 15 seconds straight until crumbs are uniformly fine.  Put crumbs in a bowl and drizzle with butter.  Use fingers to combine well.

Pour crumbs into 9-inch Pyrex pie plate.  Press crumbs evenly over bottom and up the sides.  Cover with a piece of plastic wrap and use a spoon or measuring cup to help press evenly.  Keep covered and refrigerate for 20 minutes.  Bake until crumbs are fragrant and set, about 10 minutes.  Cool on wire rack and make pastry cream.

Bring half &amp; half, salt and 3 tablespoons sugar to a simmer in a medium saucepan, stirring occasionally with a wooden spoon.&nbsp; Stir together remaining sugar and cornstarch and sprinkle over yolks.&nbsp; Whisk until mixture is glossy and sugar has begun to dissolve, about 1 minute.&nbsp; Whisk yolks thoroughly until slightly thickened.&nbsp; Temper the egg yolks by drizzling ½ cup of simmering half &amp; half over the yolks, whisking constantly.&nbsp; Then whisk the yolk mixture into the simmering half &amp; half, return to simmer, whisking constantly until thick and bubbly and glossy.&nbsp; It takes just a few minutes.

Remove from heat and whisk in the cold butter until incorporated.  Add the two chocolates and whisk until melted, scraping the bottom and sides with a spatula to mix it all with no streaks.  Stir in vanilla and then pour into baked crust.  Press plastic wrap on the surface and refrigerate until cold and firm, about 3 hours.

Just before serving, make the whipped cream.  Use chilled beaters and a chilled bowl.  Beat cream, sugar and vanilla until soft peaks form.  Takes a couple of minutes.  Spread whipped cream over top of chilled pie and serve.

grams/ 5 oz dark 70% cocoa chocolate

75 grams/ 3 oz milk chocolate (, finely chopped (Note 4))

heavy cream (, for whipping)

tbsp white sugar

Chocolate (, for grating (optional decoration))

Preheat oven to 180°C/350°F (160° fan-forced).

Cut round paper - Cut a round piece of baking / parchment paper, the size of the pie dish (to prevent skin forming on custard). (Note 5)

Blitz - Break up Oreos roughly by hand and place in a food processor. Blitz into crumbs (~10 sec). Add butter, blitz to mix through. Mixture should resemble wet sand. (No food processor? Bash in ziplock bag with a rolling pin).

Press - Pour into a 23cm / 9&quot; pie dish. Spread crumbs out and press firmly into the base and up the walls using your hands, spatula or something flat.

Bake for 10 minutes. Remove from oven - the crust will be slightly puffed. Press down gently using a rubber spatula (makes it even crustier!) then allow to cool on the counter before filling.

Oreo cookie crust:

Whisk dry, then wet - Place cornflour, sugar and salt in a large saucepan. Whisk to combine. Add milk, cream and yolks. Whisk to combine.

Heat to thicken - Turn heat onto medium high. As the mixture warms up, whisk every now and then, but not constantly. As the liquid starts to get hot at around the 3 - 5 minute mark (you&#39;ll see steam), turn the stove down to medium low and start to whisk constantly. You will feel and see the mixture start to thicken. Got lumps? See Note 6!

45 second whisk - When you see slow, lazy bubbles (~6 minutes, you will need to pause whisking to see bubbles), whisk constantly for 45 seconds then take it off the stove.

Chocolate and butter - Add butter, chocolate and vanilla. Whisk until chocolate melts and filling is smooth.

Filling (see video, it&#39;s helpful):

Pour hot filling into pie crust, filling it right to the top, smooth surface. Gently place round baking paper on surface. (Surplus custard? Note 7)

Cool on the counter for 2 hours then refrigerate for 12+ hours to allow the custard to fully set.

Whipped cream - Beat whipped cream ingredients in a bowl on high for 2 to 3 minutes until softly whipped.

Topping - Carefully peel back paper. Pile on the whipped cream, then grate chocolate across the surface.

Serving - Keep the pie in the pie tin. Cut and serve!

Assembling / setting custard

Whisk

In a medium saucepan, combine the sugar, cornstarch and salt. Slowly whisk in the milk. Add the chocolate chips and egg yolks. Turn the heat on to medium and cook, stirring constantly, until the mixture is thickened.

Remove the pan from the heat and add in the cream cheese. Whisk until the cream cheese is melted and fully incorporated.

Refrigerate

Cover the surface of the mixture with a piece of plastic wrap. Refrigerate just until cooled, about 1 hour.

Beat

Once the filling is cooled, place 1 1/4 cups of the cream in a large bowl with 1 teaspoon of the vanilla extract. Beat until soft peaks form.

Fold

Fold the whipped cream into the chocolate filling.

Pour the filling into the cooled pie crust, cover and refrigerate for 6 to 8 hours, or overnight.

Combine

When ready to serve the pie, combine the remaining 3/4 cup cream and 1/2 teaspoon of vanilla extract in a large bowl.

Spread

Beat until stiff peaks form. Spread the whipped cream over the top of the pie.

Optional

If desired, sprinkle the top of the pie with cocoa powder, add shaved chocolate, or just leave it as is!
