Chocolate Date Energy Balls Recipe! These healthy energy balls are made in 5 minutes with 8 ingredients and they taste brownie bites! They are vegan, Paleo gluten-free and have no refined sugar, but you&#x27;d never know it! They&#x27;re also freezer-friendly!

Chocolate Date Energy Balls (Vegan & Paleo)

dates

pecans

cashews

cocoa powder

½ tsp salt*

almond butter

almond milk

vanilla

Line a baking pan with wax paper, set aside. (You will not be baking these, you just need a place to set your rolled bites as you make them).

Put dates, pecans and cashews in your food processor fitted with an “S” blade or in your Vitamix. Process until mixture is fine and homogeneous.

Add the rest of the ingredients in the order listed (cocoa powder, salt, almond butter, almond milk, &amp; vanilla) to your food processor and process until mixture just starts to clump together.

Roll 1 TBS portions of your “dough” into balls and place them on your prepared baking sheet.

Put them in the fridge or freezer until they harden.

Transfer to an airtight container to save for later! These can be stored at room temperature, but will last longer when kept in the fridge or freezer! I think they taste the best cold/frozen!

Chocolate Date Energy Balls

These Whole30 / Paleo chocolate coconut energy balls are an amazing midday snack and energy boost! Sweetened only with dates and super easy to make, they taste decadent, similar to an almond joy, but are 100% guilt-free.

Chocolate Coconut Energy Balls with Pecans and Dates

dates (roughly chopped)

coconut (divided)

coconut oil

kosher salt

water ((if needed))

Put pecans (1/2 cup) in food processor and pulse until roughly chopped.

Place 1/4 cup of the shredded coconut in a small bowl. Set aside.

Add the remaining ingredients except for the 1 tablespoon water to the food processor. Turn food processor on until very well mixed. If mixture seems too dry to stick together, add the water.

Using a tablespoon measure, spoon out mixture and roll in balls.

Coat each ball in the reserved 1/4 cup shredded coconut.

Place on a parchment covered baking sheet and refrigerate for at least thirty minutes, until they harden.

Store in the fridge in an airtight container or plastic bag for up to two weeks.

all you need is 5 ingredients and 15 minutes to make these delicious date balls!

Chocolate Date Balls

cup walnuts (plus optionally an extra 1/2 cup crushed walnuts

cup cocoa powder

tbsp chia seeds (optional)

salt

Blend all the ingredients together in a food processor until it forms a dough.

Use your hands to roll the dough into 12-15 even balls.

Roll the balls in the crushed walnuts if desired.

Store in an airtight container in the fridge.

Date Energy Balls

oats (any kind will do (Old-fashioned, quick-cooking etc))

coconut

maple syrup

Medjool dates (about 16)

sunflower seeds

pretzels (optional)

Place the oatmeal and coconut in the bowl of a food processor and pulse a few times until finely ground.

Add the cocoa powder, dates, sunflower seeds, and maple syrup and pulse to combine until the mixture comes together in a sort of dough. Add a few more drops of maple syrup if it's not quite coming together, and pulse again.

Roll mixture into 1 inch balls and roll in the chopped pretzels if desired.

Peanut Butter Chocolate Chip Oatmeal Energy Balls

(dry) oatmeal (I like old fashioned)

coconut flakes

peanut butter

flaxseed

honey

mini chocolate chips

vanilla extract

Add everything to a medium bowl and mix to combine well. Stick the bowl in the fridge and let it chill for about half an hour. This resting time helps to ensure that the balls will stick together when rolled.

After the chilling time, take a tablespoon of the mixture in your hand and roll into a ball. Repeat with remaining oat mixture. If your balls aren't sticking together after the resting period, you can add a little more honey or peanut butter, stir well, and try rolling again. Sometimes it just needs a little more of the wet ingredients to hold together well. And the moisture in the peanut butter will depend on the brand/type that you use.

Store in an airtight container in the fridge for up to 2 weeks or in the freezer much longer.

I love this recipe! I add 1/2 cup of rice krispie cereal and leave out the coconut.  It is very crunchy and yummy!

This recipe is amazing. I use maple syrup in place of honey and steel cut oats in place of regular oatmeal.  Turns out fantastic every time.

My husband and I love these! I make 3x batches routinely to ensure protein snack available, and it satisfies sweet cravings. I use Ghirardelli mini semisweet chips; sometimes sub maple syrup for honey, or almond butter for PB. I’ve added chia seed. Most recently I included 1/4 cup sweetened coconut for addl texture. Instead of balls, I lazily (or efficiently) press into 13x9 dish, chill, then cut into small squares. Today I shared the recipe/link w three friends who are eager to try it.

I love this recipe. I rolled the finished balls in sprinkles and my toddler niece ate them all. Flax seed has too much cyanide so you can replace the flax seed with almond meal.

In a food processor, finely chop the almonds until they have a crumbly texture.

Add the dates to the food processor and blend until the mixture becomes sticky and well combined.

Transfer the mixture to a mixing bowl and break apart any larger pieces with your hands.

Chop the dark chocolate into small pieces or use chocolate chips.

Add the dark chocolate to the mixing bowl and mix well to distribute it evenly.

Take small portions of the mixture and roll them between your palms to form bite-sized balls.

Optionally, roll the energy balls in a sprinkle of peanuts for extra flavour and texture.

Place the chocolate energy balls on a lined tray or plate and refrigerate for at least 30 minutes to firm up.

Once chilled, the chocolate energy balls are ready to be enjoyed! Store them in an airtight container in the refrigerator for up to a week or freeze them for longer-term storage.
