Sweet and slightly salty oats with a luscious fudgy center. These Chocolate Peanut Butter Oat Bars are a regular thing around&nbsp;our kitchen for obvious reasons.

Chocolate Peanut Butter Oat Bars

coconut oil

coconut sugar

quick oats

tsp cinnamon

tsp sea salt

chocolate chips

peanut butter (I used chunky)

Line an 8x8 dish with parchment paper &amp; set aside.

In a medium saucepan over medium low heat, melt together the coconut oil (or butter) sugar and vanilla. Stir until the sugar has dissolved and the mixture is smooth. Add in the oats, cinnamon and sea salt. Stir constantly for 4-5 minutes. Remove from the heat.

Pour 1/2 the mixture into the bottom of the parchment lined dish and using the back of a spoon, flatten it out evenly. Set the remaining mixture aside.

In a small saucepan over medium heat, stir together the chocolate chips and peanut butter and keep stirring until the mixture is smooth and the chocolate is melted.

Pour the chocolate/peanut butter mixture over the oat layer in the 8x8 dish, reserving 2-3 tablespoons to drizzle over the top.

Crumble the remaining oat mixture evenly over the chocolate layer, then drizzle the last of the chocolate peanut butter over it.

Pop into the fridge for a few hours (3-4) to set.

Slice into 16 squares. I cut each square into 4 bite sized pieces when I eat it.

Store in a covered dish in the fridge for up to a week.

Chocolate Oatmeal Bars Recipe

First, preheat the oven to 355 °F/180 °C and line a 7x7-inch square baking dish (18 cm) or 9x6-inch baking pan with parchment paper.You could use an 8x8 pan, but the bars will be thinner. For a much larger pan, it&#39;s best to double the recipe.

Then, process all the dough ingredients in a food processor until dough-like.

Press ¾ of the dough into the prepared pan, using the bottom of a flat glass to help make a single even layer.

Then, rinse the food processor and process the chocolate layer ingredients until smooth and creamy.

Pour the chocolate layer over the oat base, and then crumble and sprinkle the remaining oat mixture over the top.

Crumble the remaining 1/4 dough on top of the chocolate layer.

Bake for 25-30 minutes, until golden brown on top, then leave the banana breakfast bars to cool completely (they will firm up/set as they cool). Finally, cut them into bars, and enjoy!

You can optionally drizzle the chocolate oat bars with a simple homemade icing (regular or sugar-free), homemade vegan Nutella, or another nut/seed butter.

These were so good! I especially loved the chocolate topping and could eat that by itself! I will definitely be making this again.
