This chopped Thai salad is a variety of colorful fresh veggies, all topped off with a homemade peanut dressing.

Chopped Thai Salad

cabbage

cucumbers

edamame

carrots

chopped bell peppers (red, yellow or both)

peanuts

cilantro

peanut butter

soy sauce

honey

lime juice

sesame oil

chili garlic sauce

water

Place the cabbage in a large bowl. Arrange the cucumbers, edamame, carrots, bell peppers and peanuts on top. Sprinkle with cilantro.

For the dressing: Whisk together the peanut butter, soy sauce, honey, lime juice, sesame oil, chili garlic sauce and warm water until smooth.

Drizzle the peanut dressing over the vegetables, then serve immediately.

Chopped Thai Salad with Sesame Garlic Dressing

white distilled vinegar

lemongrass paste (ginger would also work)

frozen shelled edamame

baby kale

bell peppers (1 red, 1 yellow)

cilantro leaves

green onions

Puree all the dressing ingredients in a food processor until smooth. Taste and adjust to fit your preferences. Transfer to a dressing jar and rinse the food processor out for use later.

Cook the edamame by boiling it for 3-5 minutes in a pot of boiling water. Drain and allow it to cool. Meanwhile, slice up the kale, carrots, peppers, cilantro leaves, and green onions into thin strips or shreds.

Place the cooked edamame in the food processor and pulse 5 times to get a minced texture. Transfer to a bowl and repeat the same process for the cashews. Toss the kale, carrots, peppers, cilantro, green onions, edamame, and cashews together until well combined. Drizzle with the dressing, toss gently a few times, and serve immediately.

Chopped Kale Salad is so crunchy and packed with flavor! Loaded with chopped veggies and sweet soy sauce, the leftovers are even MORE amazing!

Chopped Kale Salad

avocado oil

white vinegar

agave nectar

kale, de-stemmed and chopped (about 5 leaves)

carrots,

bell peppers, chopped

cilantro leaves, chopped

green onions, chopped

– 16 ounces frozen shelled edamame

cashews

Puree all the dressing ingredients in a food processor until smooth. Transfer to a dressing jar and set aside.

Combine the kale, red pepper, cilantro, and green onions in a large salad bowl.

Use the grating attachment on your food processor and grate your carrots. Add them to the bowl.

Heat the edamame and chop them in the food processor for about 5 seconds, using the normal blade. Add the chunks to the salad bowl.

Toss the kale, carrots, peppers, cilantro, green onions, edamame, and cashews together until well combined with the dressing.

SO good. One of my favorite salads to make. I’ll top it with tofu, Thai grilled chicken, or quinoa if I need a bit more substance

 I give an automatic 5 stars to any vegetable consisting recipe my bf exclaims "this is good" about. This is a really great flavorful salad to pair with any protein-we ate ours with salmon! I also used about half the recommended edamame and it was plenty. Love all the fresh colorful veggies :)
