One Pot Wonder Spanish Rice with Chorizo Recipe

Rotel diced tomatoes and chilies

chicken broth (or any broth)

sweet bell pepper

onion

rice

chili powder

cumin

salt

black pepper

lb. chorizo sausage links (sliced into 1/2 inch pieces (about 4 links))

Place a wide, high-sided skillet or pot over high heat. Add the beans, Rotel, broth, bell pepper, onion, rice, chili powder, cumin, salt, and black pepper. Stir to combine. Cover the pot.

Bring liquid to a boil, then reduce to a simmer. Cook for 10 minutes, stirring occasionally.

Add the sliced sausage. Cover. Continue to simmer until the rice is tender and most of the liquid is absorbed (about 10 minutes for white rice).

Remove the pot from the heat. Uncover and let it rest for 5 minutes before serving.

One Pot Spanish Rice with Chorizo Recipe

A homemade chorizo recipe that&#039;s easy to make and more flavorful than store-bought chorizo! This highly-seasoned Mexican sausage is made from ground pork.

Homemade Mexican Chorizo

paprika

ancho chili powder

oregano

coriander

coarse kosher salt (plus more to taste)

cinnamon

cloves

pork

white vinegar

garlic, (minced)

In a small bowl, add paprika, ground cumin, ancho chili powder, regular chili powder, dried oregano, dried coriander, coarse kosher salt, ground cinnamon and ground cloves. Mix together to combine.

In a large bowl, add ground pork, the combined chorizo seasonings, white vinegar and minced garlic. Mix everything together with your hands until well combined.

Use immediately in your favorite recipe or store for later.

Here's a  healthy, lightened-up recipe for Mexican Chorizo, a smoky spicy and flavorful Mexican style sausage using ground turkey or ground chicken. A delicious addition to breakfast bowls, tacos, scrambles &amp; burritos! Can be made in 20 minutes. Low-carb and GF!

¾ – 1 teaspoon kosher salt

smoked paprika

oregano (optional)

garlic

chipotle powder (or cayenne) or sub chili flakes

vinegar (white, red, or apple cider)

Store in the fridge, or freeze until ready to use.

To cook, simply brown it in a skillet with a little oil, breaking it up into smaller pieces, like you would ground beef. (Alternately, you could shape into breakfast patties,or burgers, and sear, finishing in the oven if necessary.)

Use in breakfast bowls or tacos, burritos, enchiladas, pizza, quesadillas, nachos, etc.

Made this for dinner tonight and it was SO easy and SO yummy! It was a tad too salty for us, so next time we will definitely reduce the salt. But it was such a great recipe! It will definitely be a part of our dinner rotation now. Thank you so much for sharing!

It's a keeper. Both my husband and my preteen son loved it. 
I did not have all of the spices (chili, chipotle powder) and I used 1/2 tsp each of cumin and coriander. And I will use little less salt next time. Very tasty.

I used this recipe and it came out awesome. I actually doubled the ingredients excluding the doubling amount of salt.

Excellent with lean ground turkey. Love the spice ratio and amount. Next time I will double it as I'm sure the browned meat will freeze well.

The chorizo stuffing gives this classic roast chicken recipe a flavour-packed punch.

Roast chicken with chorizo stuffing

chorizo,

red onion, finely chopped

fresh white breadcrumbs

red pepper

parsley

chicken

lemon, quartered

tbsp plain flour

milliliters red wine

chicken stock,

Preheat the oven to 200°C/fan180°C/gas 6. Mix together the chorizo, onion, breadcrumbs, red pepper, parsley and egg yolk, then season. Loosen the skin at the neck end and pack in the stuffing, forming a nice rounded shape. Fold the skin back down and secure it underneath the bird with a skewer or a couple of cocktail sticks.

Pop the lemon quarters into the body cavity. Season the chicken, put in a roasting tin and cook for 1½ hours, until golden and cooked through. Rest for 5 minutes.

Meanwhile, strain the juices and fat from the roasting tin and allow to settle. Skim off all but 3 tablespoons fat. Put the tin back on the hob, add the 3 tablespoons fat and whisk in the flour. Stir in the wine and bubble rapidly, then add the pan juices and stock, and cook for 10 minutes until thickened.

Carve the chicken and serve with the gravy and some roast potatoes and green beans, if you like. 

Full of flavour, this Spanish-style rice with chicken and chorizo is a one-pot wonder.

Chorizo chickpea stew (fast)

olive oil

thyme

tsp smoked paprika ((sub normal paprika))

bay leaf (, preferably fresh, otherwise dried)

/ 14 tomato

400 grams/14 oz can chickpeas (, drained (or other beans of choice))

chicken stock/broth (, low sodium)

tsp cooking/kosher salt

tsp black pepper

Sauté chorizo - Heat olive oil in a large saucepan or small pot over medium high heat. Add chorizo and cook for 3 minutes or until golden.

Sauté aromatics - Add garlic, thyme, paprika and bay leaf, then stir for 1 minute.

Add everything else - Add tomato, chickpeas, chicken stock, salt and pepper. Stir, bring to a simmer then lower the heat down to medium low so it is simmering very gently.
