Chinese Chow Mein

Prepare noodles according to package instructions.

In a small bowl whisk the sauce ingredients together: soy sauce, sesame oil, oyster sauce, ginger, sugar, and cornstarch

Heat a large pan or wok on high heat. Add oil. Add chicken, season with salt and pepper and stir fry just until cooked through.

Add cabbage, carrots, celery, and the whites of the chopped green onion and stir fry for just for 1-2 minutes or until cabbage has wilted.

Add the garlic and cook for 30 seconds.

Add the pasta and sauce and cook for 1-2 minutes until the sauce has thickened. Add remaining green onion and fresh bean sprouts, if desired. Serve immediately.

This Instant pot Vegetable Chow mein recipe is my go-to recipe for that night. When I make these noodles everyone gobbles them up. They are so easy to make in this instant pot!

Instant Pot Vegetable Chow Mein

Hakka noodles - 16 oz

Snow peas trimmed - 1 cup

Make chow mein sauce: In a medium size bowl whisk all the sauce ingredients together and set aside.&nbsp;

Stir-fry veggies: In a wok or a large skillet or frying pan heat the peanut oil. Add the garlic and saute for 30 seconds. Stir in the carrots and cook for another minute until they start to soften a bit. Stir in the cabbage and saute for 2 more minutes until the cabbage is wilted.

Add noodles and sauce:&nbsp;Add the noodles to the wok. Give the sauce a quick stir, then pour over the noodles. Let them cook for 2 minutes before tossing them around in the sauce. Keep tossing them around and within 3 to 5 minutes they will soften and cook completely.

Add the green onions and bean sprouts: Add in the green onions and bean sprouts and toss everything together.

Serve: Serve while warm. If preferred drizzle some hot sauce over the noodles.

Perfect Chinese Noodles {Lo Mein}

½ inch piece fresh ginger (grated)

Cook the noodles a little less than stated on the package instructions (until just underdone), then drain, rinse with cold water and set aside.

Heat the oil in the wok over a high heat. Once hot, add the garlic, ginger, and green on onions. Stir-fry for 30 secs.

Add the stir-fry vegetables. Stir-fry for 2-3 minutes.

Add the sherry and allow to almost evaporate before adding any meat you are using and cooked noodles. Toss so that all of the ingredients are combined.

Turn the heat down to medium and add both of the soy sauces, oyster sauce, and pepper.&nbsp;&nbsp;Stir-fry for a further 1-2 then toss to combine and serve.

Chicken Chow Mein Recipe (How to Make Chow Mein)

boneless skinless chicken thighs (or breasts)

Marinate the chicken - In a medium mixing bowl whisk together the cornstarch, soy sauce, and Chinese cooking wine. Add the chopped chicken to the bowl and thoroughly mix to coat the chicken in the marinade. Set aside.

Prepare the sauce - As the chicken marinates, combine the corn starch, soy sauce, dark soy sauce, oyster sauce, Chinese cooking wine, and sugar. Stir well to combine and set aside.

Prepare the noodles - Cook the noodles according to package instructions. For me, this meant boiling my noodles in water for 2-3 minutes max. Do not overcook, you want them to remain slightly undercooked. Drain well.

Fry the noodles - Heat a large wok or skillet over medium-high heat. Once hot, add the oil, swirl to coat the entire surface of the skillet. Add the noodles. Stir fry for 4-5 minutes, or until golden and starting to turn crispy. Remove from the skillet and set aside.

Cook the chicken - Add an additional tablespoon of oil to a large wok or heavy-bottomed skillet set over high heat. Once hot, add the chicken and cook for 5-6 minutes, mixing frequently, to ensure even cooking. Once cooked, remove to a clean plate and set aside.

Saute the aromatics and vegetables - Return the wok or skillet to high heat. Add an additional tablespoon of oil and the minced garlic, immediately add the shredded cabbage, celery, carrots, and green onion. Thoroughly mix to combine and cook, stirring continuously for 1-2 minutes.

Add the sauce - Add the noodles, sauce, and return the chicken to the pan. Stir fry for 1 minute, tossing continuously. Finally, stir in the bean sprouts. Mix thoroughly and cook for an additional 30-60 seconds.

Remove from heat and serve immediately.

Cook ramen noodles in boiling water until chewy and *just* cooked. Drain and set aside.

In a large skillet, heat olive oil over medium-high heat. Sauté onion, cabbage, salt, pepper, ginger together until tender.

Thinly slice cabbage, carrots and white parts of the green onions/spring onions. Cut the green parts into 2-inch pieces.

Mix all the sauce ingredients in a bowl. Keeping this ready makes it easier while stir frying.

Boil water and cook noodles 2 minutes less than the package instructions. The noodles will cook further while stir frying so it’s important to undercook them.

Strain the noodles and dunk them into cold water or rinse them until they have cooled completely. This stops the noodles from overcooking. Strain out excess water and coat in some oil to prevent them from clumping together.

Preparation

Heat a wok/pan on high heat and add some oil. Add the carrots and stir fry for 1 minute. Next add the cabbage and stir fry for 1 minute. Next add the white part of green onion/spring onions and mix well.

Spread the veggetables around the wok/pan so they can get a light char. Once done, set them aside.

Next add some oil and stir fry the noodles for 2-3 minutes on high heat. This enhances the taste and gives it a wok tossed flavor. Use chopsticks or tongs to mix the noodles so they don’t break.

Once the noodles have stir-fried well, add the veggetables and mix well.

Pour in the sauce and stir fry for 2 minutes. Taste and adjust salt if needed. Some noodle brands are saltier than others.
